People credited with this unit standard are able to: and demonstrate knowledge of the evaporation, crystallisation and decanting process; prepare the evaporation, crystallisation and decanting process for operation; and operate and monitor the evaporation, crystallisation and decanting process, in a dairy processing operation. This includes food safety (critical), quality and regulatory control points as well as inspection points Evaporation, crystallisation and decanting equipment may include but is not limited to – evaporators, crystallisation tanks, decanting plant, driers, and pumping systems. Materials – lactose and additives or other agents as required, consistent with the provisions of the Joint Australian and New Zealand Food Standards and other organisational requirements. Monitoring the process – the use of production data such as performance control charts. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. These include but are not limited to site-specific and company standard operating procedures, food safety and quality management requirements. The candidate must be under realistic time pressures and use relevant commercial equipment. Outcomes and evidence requirements Outcome 1 Demonstrate knowledge of the lactose evaporation, crystallisation and decanting process in a dairy processing operation. Evidence requirements 1.1 The purpose of the lactose evaporation, crystallisation and decanting process are identified and outlined in terms of the relationships between the milling process and other related processes. 1.2 The stages and changes which occur during evaporation, crystallisation and decanting are identified and explained in terms of the effects of process stages on the end product. 1.3 Materials preparation requirements are identified and explained in terms of the effect of variation on the process. 1.4 The methods used to evaporate, crystallise, and decant materials are identified and explained in terms of the variables involved in the process. Range: 1.5 variables include but are not limited to – plant specifications, raw materials, product end use. Methods of monitoring control points, maintaining control of the evaporation, crystallisation and decanting process are identified and outlined in terms of the causes of variation and corrective action required. Range: methods include but are not limited to – process specifications, procedures, operating parameters, equipment and instrumentation components, materials and services, sampling and testing, recording requirements. 1.6 Shut-down, cleaning and sanitation requirements are identified and explained in terms of the changeover process and the different types of shutdowns. 1.7 Safety issues related to the evaporation, crystallisation and decanting process are identified and outlined in terms of organisational requirements. Range: safety issues include but are not limited to – health and safety hazards and controls, lockout and tag procedures, environmental protection and controls. Evidence requirements 2.1 Workplace information is accessed to identify production requirements for evaporation, crystallisation and decanting in accordance with organisational requirements. 2.2 Materials and services necessary to the lactose evaporation, crystallisation and decanting process are confirmed and available to meet production requirements. 2.3 Evaporation, crystallisation and decanting equipment is checked to confirm status, condition and readiness for use in accordance with organisational requirements. 2.4 The evaporation, crystallisation and decanting process is set to meet production outputs in accordance with organisational requirements. Outcome 3 Operate and monitor a lactose evaporation, crystallisation and decanting process in a dairy processing operation. Evidence requirements 3.1 The lactose evaporation, crystallisation and decanting process is started up in accordance with organisational requirements. 3.2 Lactose evaporation, crystallisation and decanting equipment, product and control points are monitored to confirm that they meet production requirements. Range monitoring may include but is not limited to – monitoring control points and parameters, adjusting operating parameters, plant checks, identifying sampling and testing requirements, taking samples, handling samples, dispatch of samples, conducting tests. 3.3 Any out-of-specification product, process and equipment performance is identified, rectified and/or reported in accordance with organisational requirements. 3.4 Lactose evaporation, crystallisation and decanting equipment is cleaned and sanitised in accordance with organisational requirements. 3.5 Waste is collected, treated and disposed of or stored for recycling in accordance with organisational requirements.
