Evidence requirements 1.1 The normal process of aerobic glycolysis in mammals is described. 1.2 The process of anaerobic glycolysis is described in terms of changes to muscle tissue during the rigor mortis process. Range changes include but are not limited to – lactic acid, pH levels. 1.3 The pre-slaughter conditions for producing tender meat are described in terms of organisational requirements. 1.4 The post-slaughter conditions for producing tender meat are described in terms of organisational requirements.
