People credited with this unit standard are able to demonstrate knowledge of and prepare product formulations in a meat processing operation. Outcomes and evidence requirements Outcome 1 Demonstrate knowledge of the preparation of product formulations in a meat processing operation. Evidence Requirements 1.1 Ingredients are identified in terms of their functions, dangers, and legal implications. 1.2 Additives, spices, and binders are identified in terms of use of the product. 1.3 The process of checking meat ingredients unhygienic factors is described in terms of organisational requirements. Evidence requirements 2.1 Recipes and product specifications are followed to formulate product in accordance with organisational requirements. 2.2 Ingredients are checked to ensure they meet product specifications in accordance with organisational requirements.
