People credited with this unit standard are able to demonstrate knowledge of: business and production activities within a byproducts manufacturing operation; product handling, storage, processing, use, and markets for meat by-products; and types, operation, capabilities, and monitoring requirements of machines used in the process of producing meat by-products. Evidence requirements 1.1 Animal species used in a by-products manufacturing operation are identified in terms of percentage of market value and production outputs. 1.2 Trade markets are identified in terms of percentage of product and market value. Industry organisations, representative organisations, and regulatory bodies related to the by-products industry are identified in terms of their titles, roles, and responsibilities. Outcome 2 Demonstrate knowledge of product handling, storage, processing, use, and markets for meat by-products. Evidence requirements 2.1 Handling and storage methods are described for each type of raw product received for making by-products. 2.2 Processing steps and methods are described for each type of by-product produced. 2.3 The types of end by-products produced are described in terms of their uses. 2.4 The organisation’s main markets for each end by-product are identified. Outcome 3 Demonstrate knowledge of types, operation, capabilities, and monitoring requirements of machines used in the process of producing meat by-products. Evidence requirements 3.1 Each type of machine is identified and its position and function in the process described. 3.2 The output capabilities of each machine are described in terms of organisational requirements. 3.3 Any special monitoring and maintenance requirements of individual machines are described in accordance with organisational and manufacturer’s requirements. 3.4 Procedures for handling machine malfunctions and breakdowns are described in accordance with organisational and manufacturer’s requirements.
