People credited with this unit standard are able to: demonstrate
knowledge of a palletiser operation; prepare the palletiser for
operation; operate the palletiser; and shut down the palletiser,
in a primary products food processing operation.

Definitions
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Control points – those key points in the work activity which must be monitored and
controlled.
Materials include but are not limited to – cartons and pallets.
Primary products food processing operation – covers a meat processing, dairy
processing, seafood or baking yeasts manufacturing operation.

Evidence for the practical components of this unit standard must be supplied from the
workplace.

Demonstrate knowledge of a palletiser operation in a primary products food processing
operation.

Evidence requirements
1.1
The purpose and basic principles of the palletiser operation are identified in
terms of relationships between palletising and other materials’ handling
processes.
1.2
Requirements for palletiser operation are identified in terms of organisational
requirements.
Range
1.3
operating requirements may include but are not limited to – quality
characteristics to be achieved, process specifications, procedures,
operating parameters, purpose and operation of equipment and
instrumentation components, significance and methods of
monitoring control points within the palletising operation, services
used in palletising, common causes of problems and corrective
actions, cleaning and sanitation procedures, shut down
procedures;
evidence is required of three operating requirements.
Safety issues are identified in terms of palletiser operations.
Range
safety issues include but are not limited to – health and safety
hazards and controls, lock out and tag out procedures,
environmental protection, housekeeping requirements for work
area.
Outcome 2
Prepare the palletiser for operation in a primary products food processing operation.
Evidence requirements
2.1
Materials for palletising operation are confirmed and available in accordance
with production requirements.
2.2
Services are confirmed as being ready for palletiser operation.
2.3
Palletiser is set to operating specifications.
2.4
Routine equipment checks confirm that the palletiser is ready for use.
Outcome 3
Operate the palletiser in a primary products food processing operation.
Evidence requirements
3.1
Palletiser is started up in accordance with organisational requirements.
3.2
Control points are monitored to confirm that performance is maintained to meet
production specifications.

3.3
Product is palletised to production specifications.
3.4
Any out-of-specification palletising is identified, rectified and/or reported in
accordance with organisational requirements.

Waste generated by the process is monitored and cleared in accordance with
organisational requirements.
Outcome 4
Shut down the palletiser in a primary products food processing operation.

Palletiser is shut down in accordance with type of shut down and organisational
requirements.
4.2
Waste generated by both process and cleaning is collected, treated and
disposed or stored for recycling in accordance with organisational requirements.
