This unit standard is for experienced people working in a
primary products food processing operation.
People credited with this unit standard are able to: participate in
planning an audit; participate in an audit of a programme; and
participate in the reporting and follow up processes, in a
primary products food processing operation.

1
Legislation relevant to this unit standard may include but is not limited to – Animal
Products Act 1999, Food Act 1981, Health and Safety in Employment Act 1992,
depending on the candidate’s work sector.

Definitions
Corrective action plan – identifies non-conformance, corrective actions, date by
which action must be taken, and any other follow up requirements.
Information – information collected from interviews, observation, review of workplace
records, and accessing relevant technical information.
Organisational requirements – instructions to staff on policies and procedures which
are documented in memo, electronic or manual format and are available in the
workplace.
Primary food processing operation – covers a meat processing, dairy processing,
seafood or baking yeasts manufacturing operation.
Stakeholders – auditee, supervisor, manager, company manager, regulatory
authority, customer, factory staff, other appropriate people or departments.

This unit standard applies to both internal and external audits. While the scope of the
internal and external audit might differ, the audit processes used will be similar.

Evidence for the practical components of this unit standard must be supplied from the
workplace.

Outcome 1
Participate in planning a quality audit for a primary products food processing operation.
Evidence requirements
1.1
Roles and responsibilities for participating in the audit are identified in
accordance with organisational requirements.
1.2
The purpose and scope of the audit is identified in accordance with
organisational requirements.
1.3
Information and resources required to conduct the audit are identified and
located in accordance with organisational requirements.
Outcome 2
Participate in a quality audit of a programme for a primary products food processing
operation.
Range
programmes may include but are not limited to – product safety plans, ACC
partnership safety audits, and good manufacturing requirements.
Evidence requirements
2.1
Information is collected that is adequate, representative, and meets audit and
organisational requirements.
2.2
Information is analysed to assess adequacy of performance against the
programme in accordance with organisational requirements.
2.3
Records are reviewed to confirm compliance with the programme in accordance
with organisational requirements.
2.4
Compliance with the programme is observed in the workplace in accordance
with organisational requirements.
2.5
Areas requiring corrective action are identified in accordance with organisational
requirements.

Outcome 3
Participate in the reporting and follow up processes for a primary products food processing
operation.
Performance criteria
3.1
Situations presenting an imminent and serious risk to the programme objectives
are identified and reported in accordance with organisational requirements.
3.2
Audit reports are prepared to address the identified scope and organisational
requirements.
3.3
Results of the audit are communicated to stakeholders in accordance with
organisational requirements.
3.4
A corrective action plan is developed in accordance with organisational
requirements.
3.5
Evidence is gathered to verify identified corrective actions have been completed
as agreed in accordance with organisational requirements.
3.6
Any corrective actions not completed are identified and a new target date is
agreed and corrective actions are followed up in accordance with organisational
requirements.
