People credited with this unit standard are able to handle product hygienically, and monitor product safety in a work area, in a primary products food processing operation. Primary products food processing operation – covers a meat processing, dairy processing, seafood or baking yeasts manufacturing operation. 3 Responsibility for monitoring product safety relates to own work area, tasks and responsibilities. 4 Evidence for the practical components of this unit standard must be supplied from the workplace. Range 1.5 product safety hazards may include but are not limited to – poor personal hygiene, poor storage, poor handling, and poor cleaning practices; evidence is required of two examples. Product is handled in accordance with organisational requirements. Range requirements may include but are not limited to – clothing, footwear, product handling, product storage, equipment cleaning; evidence is required of two examples. Outcome 2 Monitor product safety in a work area of a primary products food processing operation. Evidence requirements 2.1 Work area and equipment are maintained in accordance with organisational requirements. 2.2 Waste is collected and disposed of in accordance with organisational requirements. 2.3 Equipment and supplies are used and stored in accordance with organisational requirements. 2.4 Critical control points are monitored to meet product safety requirements in accordance with organisational requirements. Range monitoring may include but is not limited to – checks, inspections, tests. 2.5 Any out-of-control processes or situations are identified and corrective action is taken and/or reported in accordance with organisational requirements. 2.6 Product safety information is recorded in accordance with organisational requirements.
