People credited with this unit standard are able to demonstrate knowledge of the steps involved in comparing product compliance against written specifications, and compare and report on product compliance against written specifications, for a primary products food processing operation. Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. Primary products food processing operation – covers a meat processing, dairy processing, seafood or baking yeasts manufacturing operation. Written specifications – product specifications set by the customer and/or customer country requirements. 3 Evidence for the practical components of this unit standard must be supplied from the workplace. Evidence requirements 1.1 Written specifications are analysed to determine key points to be compared in accordance with organisational requirements. 1.2 The process for comparing written specification currency is described in terms of organisational requirements. 1.3 The organisation of production flow is described in terms of written specifications and organisational requirements. 1.4 The process for sampling product for off-line testing is described in terms of organisational requirements. 1.5 Processes for monitoring any critical control points in the production process are described in terms of organisational requirements. Outcome 2 Compare and report on product compliance against written specifications for a primary products food processing operation. Evidence requirements 2.1 The procedure for comparing product compliance is identified in terms of organisational requirements. 2.2 Product content is compared in accordance with written specifications and organisational requirements. 2.3 Points of specification are measured to ensure product compliance with written specifications and organisational requirements. 2.4 Information used to assess compliance is documented in accordance with organisational requirements. 2.5 Any non-conforming product is identified in terms of ability to comply with the specification and recorded in accordance with organisational requirements. 2.6 Results of monitoring are analysed and changes to process and operating instructions are recommended, to ensure product conforms to written specifications and organisational requirements.
