This entry-level unit standard is for people who work in a
rendering department in a meat processing operation.
People credited with this unit standard are able to: bag, identify,
stack, and load out dried rendered meat products; load bulkdried rendered meat products; and prepare, test, and load
tallow in a meat processing operation.

Customer specifications – product specifications set by clients relating to cuts,
weights, presentation, and packaging.
Organisational requirements – instructions to staff on policies and procedures that
are documented in memo, electronic, or manual format and available in the
workplace.

Evidence requirements
1.1
Weighing scales are checked and adjusted to organisational and statutory
requirements.
1.2
Meat product samples are taken, tested, and recorded in accordance with
organisational and statutory requirements.
1.3
Bags are filled, weighed, sealed, identified, and recorded in accordance with
company specifications.
1.4
Bagging and sewing equipment is operated and maintained in accordance with
organisational and manufacturer’s requirements.
1.5
Stacking, palleting, storage, load-out, and documentation of bagged products
meet organisational requirements.
1.6
Dried rendered meat products are lifted safely in accordance with organisational
requirements.
Outcome 2
Load bulk-dried rendered meat products.
Evidence requirements
2.1
Bulk-loading equipment is prepared in accordance with organisational
requirements.
2.2
Bulk containers are prepared in accordance with organisational requirements.
2.3
The operation of loading equipment and the process of loading bulk containers
meet organisational requirements.
2.4
Loaded container weights meet customer and company tolerance
specifications.
2.5
Loading equipment is shut down in accordance with organisational
requirements.
2.6
Load-out documentation is completed and maintained in accordance with
organisational requirements.
Outcome 3
Prepare, test, and load tallow in a meat processing operation.
Evidence requirements
3.1
Bulk storage tanks are prepared for types and grades of tallow in accordance
with organisational and statutory requirements.

3.2
Tallow is pumped from rendering tanks to bulk storage tanks in accordance with
organisational and statutory requirements.
3.3
Tallow is heated, circulated, sampled, and tested in accordance with
organisational and statutory requirements in preparation for loading out.
3.4
Loading equipment, pumps, and valves are operated in accordance with
organisational requirements before, during, and after loading operations.
3.5
Loading out operations are kept under operator observation and control at all
times in accordance with organisational requirements.
3.6
Loading out operations are shut down immediately after load requirements are
met.
3.7
Loading out operations are shut down immediately in the event of any
equipment malfunction or tallow spillage in accordance with organisational
requirements.
3.8
Documentation and reporting of tallow load-outs, equipment malfunctions and
spillages are completed in accordance with organisational and statutory
requirements.
3.9
Tallow spillages are cleaned up in accordance with organisational and statutory
requirements.

Providers must be granted consent to assess against standards (accredited) by NZQA, or
an inter-institutional body with delegated authority for quality assurance, before they can
report credits from assessment against unit standards or deliver courses of study leading
to that assessment.
Industry Training Organisations must be granted consent to assess against standards by
NZQA before they can register credits from assessment against unit standards.
Providers and Industry Training Organisations, which have been granted consent and
which are assessing against unit standards must engage with the moderation system that
applies to those standards.
