Definition
In-house procedures – the verbal or written instructions to staff on procedures for
using and maintaining a honey processing plant, which must comply with Section 127
of the Animal Products (Specifications for Products Intended for Human
Consumption) Notice 2004, Food Hygiene Regulations 1974, Food (Tutin in Honey)
Standard 2008, Compliance Guide to the Food (Tutin in Honey) Standard 2008, and
other legislative requirements.

Elements and performance criteria
Element 1
Process honey and by-products in a honey processing plant.
Performance criteria
1.1
The parts of the processing plant and honey house are described in terms of
their purpose and function.
Range
truck dock, hot room, un-capper, extractor, spinner or baffle tank,
strainers, pumps, storage.
1.2
The processing plant is started up at the beginning of the processing season to
full working capacity in accordance with in-house procedures and food hygiene
regulations.
1.3
Production is planned in accordance with through-put capacity of the processing
plant, storage capability, and floral source.
1.4
The processing plant and honey house are operated in accordance with inhouse procedures and food hygiene regulations.
Range
protective clothing, personal hygiene, rodent control, cleaning
programme.
1.5
The processing plant is operated without injury to self or others, damage to the
plant, or contamination of product.
1.6
By-products are extracted and/or processed in accordance with in-house
procedures and food hygiene regulations.
1.7
Records are maintained in accordance with in-house procedures.
Element 2
Carry out maintenance, cleaning, and closing down procedures in the honey house.
Performance criteria
2.1
Maintenance is carried out in the honey house in accordance with in-house
procedures.
2.2
Cleaning of machinery and premises during operation is carried out in
accordance with in-house procedures.
2.3
Closing down procedures at processing season end are carried out in
accordance with in-house procedures.

Please note
Providers must be accredited by NZQA, or an inter-institutional body with delegated
authority for quality assurance, before they can report credits from assessment against
unit standards or deliver courses of study leading to that assessment.
Industry Training Organisations must be accredited by NZQA before they can register
credits from assessment against unit standards.
Accredited providers and Industry Training Organisations assessing against unit standards
must engage with the moderation system that applies to those standards.
