Breakfast
Mango Green Smoothie
- 1 cup baby spinach
- 1 banana (frozen preferred)
- 1 ½ cup frozen mango chunks
- ¾ cup preferred milk (almond, coconut, skim, etc.)
o Place all ingredients into a blender, and blend until smooth!
Coconut Mango Overnight Oats
- ¾ cup rolled oats
- 1 ¼ cup light coconut milk
- 2 tbsp. chia seeds
- ½ mashed banana
- ½ tsp cinnamon
- 1 mango (cut into small chunks)
- ¼ toasted flaked coconut
o Mix mashed banana, milk, oats, chia seeds, and cinnamon in bowl
o Fold ¾ mango chunks into the oatmeal mixture
o Cover the bowl and place in fridge overnight
o Before eating, add a splash of milk and top with the rest of the mango
chunks and flaked coconut and enjoy!
 There are endless ways to incorporate mangos into your breakfast! Top your
yogurt, add them to smoothies, mix them with your cereal, or simply enjoy it
plain!
Lunch/Dinner
California Club Chicken Wrap
(makes 2 servings)
- 4 slices turkey bacon
- 1 cup shredded chicken breast
- ½ mango (chopped)
- 3 tbsp. plain greek yogurt
- 1 mashed avocado
- 2 whole wheat tortillas
- 1 cup romaine lettuce
- 1 tomato (diced)
o Prepare bacon and chicken
o Lay tortilla on work surface and spread layer of greek yogurt and
mashed avocado over the entire surface (season with salt and pepper
if desired)
o Place lettuce, tomato, bacon, chicken, and sliced mango down the
center of the wrap, fold, and enjoy!
Cashew Chicken Mango Salad
-1 chicken breast
- 3/4 mango (diced)
- 3/4 avocado (diced)
- ¼ cup cashews
- 2 cups spinach
- 2 tbsp. olive oil
- squeeze of lime juice
- Place strips of chicken, diced mango, diced avocado, and cashews over bed of
spinach
- Drizzle lime juice and olive oil over the top, and enjoy!
Dessert
Coconut Mango Ice Cream
-1 cup canned coconut milk
-3 cups frozen mango
-3 tbsp. honey
 In a blender or food processor, blend together all ingredients until it becomes
the texture of soft-serve ice cream and enjoy!
Strawberry Mango Salsa
- ¾ cup diced strawberries
- ¾ cup diced mango
- 2 tsp. honey
- juice of 1 lime
- cinnamon pita chips or graham crackers
o Mix all ingredients together and serve with cinnamon pita chips or
graham crackers!
