Food in Culture and Social Justice
Executive Summary:
This is a 29-credit undergraduate certificate in the areas of food history
and food practices in subcultures and social movements.
The coursework comes from History, Anthropology, and Ethnic Studies
The certificate must be taken in conjunction with a baccalaureate degree
program
Will be part of the proposed School of Language, Culture, and Society

Impacts to Students: This program gives students the opportunity to
receive a certificate in an area that they were likely going to take
courses in anyway.
Budget Impacts: Moderate – mostly a 0.50 FTE to act as the
coordinator for the program, and some library acquisitions

Undergraduate Certificate in
Food in Culture and Social Justice
Issues: The original proposed name was Food, Culture, and Social
Justice. This caused concern that both students and employers would
think that the program dealt with, among other things, nutrition and/or the
production of food.
In response to this concern, the proposers changed the name to Food in
Culture and Social Justice to emphasize that this wasn’t the case.
With the name change, the Curriculum Council approved this proposal,
with no dissenting votes.
