Maryland State 4-H Teen Leadership Conference will be held at the beautiful University of Maryland College Park Campus June 25-27, 2013. This is the premier, statewide annual 4-H event for teens. The mission of Teen Focus is to provide educational experiences on a campus setting that help participants to develop life and leadership skills. This is a great opportunity for youth to make decisions about their future educational and professional endeavors. In 2013 we will be teaming up with Future Farmers of America (FFA) to offer a fabulous event. This collaboration provided both organizations the ability to increase their capacity to offer premier youth development programs. One example is the keynote speaker, Ricky Kalmon a famous motivational speaker. Many of you may recognize him from the Disney show Snapp. In addition, he has made numerous special guest appearances on Fox, FX, E, and Comedy Central. Kalmon’s uniqueness comes from the way he combines music, audience participation, and comedy to create an unforgettable show which is unmatched by anyone. It’s a show that will keep you on the edge of your seat and take you on a Vacation of the Mind! We know it will be an awesome memorable experience for all in attendance. FFA and 4-H have an amazing line up of workshops for the conference. Combining the groups has allowed us to bring in outside presenters from a variety of organizations. Our extraordinary line up of classes for Teen Focus range from CSI-Barnyard, Zumba, Campus Tours, Health Rocks! Youth Mini-Grants, Livestock, Healthy Lifestyles, Community Leadership, to Entrepreneurship. It is definitely a line up everyone will love. 4-H’ers and FFA youth will attend classes together. This year, instead of signing up for classes in advance, youth will receive an on-line link where they can register on-line. By combining the two groups, we now expect more than 400 teens from all across the state of Maryland in attendance. Becky successfully submitted a Portfolio and interview process to be chosen for this honor. SARAH FIELDER has been selected to attend the 2013 Virginia 4-H Congress in June at Virginia Tech, in Blacksburg, Virginia. Sarah has also successfully completed the resume process. This process hopefully will serve her in future years when she approaches a career and needs to submit a Job Resume and complete college applications. HARFORD COUNTY 2013 ENGINEERING CAMP PARTICIPANTS Nick Hughes, Paul Johnson, Noah Sekowski, Jonathan Minter, Ned Maxwell, George Hughes, Ryan Mandl, Andrew Wood, Michael Wood, Matthew Davis and Paul Sawyers all attended Engineering Camp at the Harford County 4-H Camp facilities. These participants had the opportunity to work on the following projects: electricity/energy, large tractor operation, lawn tractor, small engines, surveying, GPS and welding in basic and advanced levels. They finished the weekend off with a team engineering skills contest. This learning experience has helped prepare them for future county, regional and state contests. ............................... Eat – play – hike – at your leisure. 8 8 MEAL APPEAL RECIPES Devilish Maryland Crab Eggs 1 pound Maryland lump crab meat 12 hard boiled farm fresh eggs 6 Tbsp finely chopped celery 1 cup mayonnaise 2 tsp dry mustard ½ tsp garlic powder 1 tsp Worcestershire sauce 1 tsp Old Bay seasoning Old Bay seasoning for garnish Cut eggs in half lengthwise. Remove yolks and mash yolks in a bowl. Set egg whites aside. Add chopped celery, mayonnaise and seasonings to mashed yolks. Mix well. Fold crab meat into mixture. Fill egg whites with crab mixture. Sprinkle with Old Bay seasoning. Makes 24 servings. Prepared by: North Harford 4-H Club ............................... Ben & Jerry’s Coconut Ice Cream 2 cups light cream 1 cup sweetened condensed milk, cold 1 15 oz. can of coconut cream Classic Belgian Waffles 2 cups cake flour 2 tsp baking powder ½ tsp salt 4 large eggs, separated 2 Tbsp sugar ½ tsp vanilla extract 4 Tbsp unsalted butter, melted 2 cups milk non-stick cooking spray Ice Cream: Whisk together all three ingredients and freeze according to manufacturer’s instructions on freezing. Waffles: Preheat waffle iron. Sift together flour, baking powder and salt and set aside. In a second bowl – beat together egg yolks and sugar until dissolved completely and eggs are pale yellow. Add vanilla extract, melted butter and milk to the eggs and whisk to combine. Combine egg-milk mixture with flour mixture and whisk until just blended. *do not over mix. In third bowl – beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the batter. *do not over mix. Coat waffle iron with non-stick cooking spray and pour measured batter onto waffle grid, enough to cover grid. Close and cook about 1 ½ minutes – beep sounds to signal when finished. Peanut Butter Pie 8 mini graham cracker crust 3 ounces of cream cheese ¼ cup peanut butter 1 cup powdered sugar 8 ounces whipped topping Mix cream cheese, peanut butter and powdered sugar. Add whipped topping. Place in pie shells. Chill overnight. Prepared by: Country Life 4-H Club ............................... Chicken Caesar Salad chicken breast salt & pepper garlic powder parsley romaine lettuce 1 small cucumber ½ cup baby carrots ¼ cup Caesar salad dressing Clean the chicken breast. Pat dry. Season chicken with salt, pepper, garlic powder and parsley. Cook on George Foreman grill for 5-8 minutes. Set aside. Cut romaine lettuce stalk into one inch sections. Place in a large bowl. Cut cucumber into thin slices and place in large bowl with the lettuce. Slice carrots using a grater directly into the large bowl. Begin to toss the salad adding Caesar dressing a little at a time. Cut chicken breasts into slices then place on top of the salad. Four servings. Prepared by: Edgewood Area Youth Center, APG 9 Soutwestern Chili 2 Tbsp olive oil 1 large diced red onion 1 red pepper, chopped 1 yellow pepper, chopped 4 cloves of garlic, chopped 1 pound of ground beef 1 pound of Italian sausage 2 Tbsp chili powder 1 Tbsp ground oregano 4 ounces tomato paste 42 ounces diced tomatoes 15 ounces black beans 15 ounces kidney beans 15 ounces pinto beans Grated cheese Sour cream Green onions Saute first 4 ingredients for 4 minutes. Add garlic. Stir in beef and sausage. Cook and crumble until brown. Drain. Add all other ingredients and simmer for 2 hours. Serve chili with grated cheese, sour cream and/or green onion, if desired. Serves 10 people ............................... Shepherds Pie 1 ½ pounds lean ground beef 1 Tbsp canola oil 1 medium onion, finely chopped 1 clove garlic, minced 1 Tbsp whole wheat flour 1 cup low sodium chicken broth 2 Tbsp tomato paste 2 cups chopped carrots ¼ tsp black pepper 3-4 large potatoes Vegetable broth Prepared by: Cloverettes & Friends Peel the potatoes and cut into chunks. Boil until soft and set aside. Brown the ground beef in a large skillet. Drain off any fat and transfer the meat to a plate. Wipe any leftover fat out of the skillet with a paper towel. Heat the oil in the skillet, then add the onions and garlic. Saute` until softened. Add the ground beef back into the skillet. Sprinkle the flour over the meat mixture. Slowly stir in the chicken broth. Add the tomato paste, carrots and pepper. Cook until thick and bubbling and the carrots have softened. Pour the meat mixture into a casserole dish. Mash the potatoes with the vegetable broth. Spread the mashed potatoes over the meat mixture. Bake at 350 degrees until the potatoes turn a deeper yellow – about 45 minutes. Serves 8. Yellow Brick Casserole 1 onion chopped fine 1 green bell pepper, stemmed, seeded, cut into small pieces 1 Tbsp of vegetable oil 3 cloves of garlic, minced 2 Tbsp of chili powder 1 pound of 90% lean ground beef 2 cups of water 1-15 ounce can of tomato sauce 8 ounces or 2 cups of elbow macaroni 1-15 ounce can “yellow brick road” corn 1 can of chopped green chili 8 ounces or 2 cups shredded Mexican cheese blend Salt & pepper 2 Tbsp of minced fresh cilantro Preheat skillet to medium heat. Add 1 Tbsp vegetable oil. Then chop onions & green bell peppers. Add to the skillet over medium heat, stir occasionally, for 5 minutes, until softened. Stir in the garlic and chili powder. Stir in the 1 pound of ground beef. Break up the beef with a wooden spoon. Cook until no longer pink. Stir in 2 cups water, 15 ounces tomato sauce and 8 ounces or 2 cups elbow macaroni. Cover and cook at a vigorous simmer, stirring often until pasta is tender, about 9-12 minutes. Remove from heat. Stir in corn, chili and 1 cup of cheese. Season with salt and pepper to taste. Sprinkle remaining 1 cup of cheese over the top, cover and let sit until melted. Sprinkle with cilantro garnish – serve and enjoy! Serves 4. Each club planned a nutritious menu, set up a table display and prepared one dish to be judged. They were judged on the menu, the recipe, the food prepared, the table setting and their demonstration techniques. The event was generously hosted by the APG Youth Center. The Homeschool Heart in Hand 4-H club held its annual candlelight ceremony for the induction of newly-elected officers for 2013 . Mrs. Andy Rigdon of Rigdon Farms, Jarrettsville, was guest speaker for the ceremony. Mrs. Rigdon spoke of her personal experiences as a 4-Her growing up in Harford County. She encouraged the members to share what they have learned through their 4-H work with others, to be leaders in their club and community, and to help others whenever they have the opportunity.
