Congratulations to the Harford County 4-H Horse Bowl
participants and their coaches Rachel Buckler and Christina
Stillwell-Deaner. Corina Clayton, Alexa Deaner, Twilight Hilsbos
and Angel Wiggins represented the junior team. Mary Fraiji, Tori
Hilsbos, Caleb Olsen, Emma Olsen and MaryOlsen represented the
intermediate team. The Junior Team placed 8th and the
Intermediate Team placed 5th.
Congratulations 4-H Livestock Skillathon participants. Ian
Forbes placed in the top 20 at #15 for the junior individual
contest. This statewide event was held on March 2 in
Hagerstown and there was a total of 147 participants for all
age groups. Thanks to Karen Holloway for co-chairing this
event.

JUNE – 25-27 MARYLAND TEEN FOCUS LEARNING & LEADERSHIP CONFERENCE
ONE WORLD – ONE 4-H – ONE DREAM…To Make the Best Better!
Maryland State 4-H Teen Leadership Conference will be held at the beautiful University of Maryland College
Park Campus June 25-27, 2013. This is the premier, statewide annual 4-H event for teens. The mission of Teen
Focus is to provide educational experiences on a campus setting that help participants to develop life and
leadership skills. This is a great opportunity for youth to make decisions about their future educational and
professional endeavors.
In 2013 we will be teaming up with Future Farmers of America (FFA) to offer a fabulous event. This
collaboration provided both organizations the ability to increase their capacity to offer premier youth
development programs. One example is the keynote speaker, Ricky Kalmon a famous motivational speaker.
Many of you may recognize him from the Disney show Snapp. In addition, he has made numerous special guest
appearances on Fox, FX, E, and Comedy Central. Kalmon’s uniqueness comes from the way he combines
music, audience participation, and comedy to create an unforgettable show which is unmatched by anyone. It’s a
show that will keep you on the edge of your seat and take you on a Vacation of the Mind! We know it will be an
awesome memorable experience for all in attendance.
FFA and 4-H have an amazing line up of workshops for the conference. Combining the groups has allowed us to
bring in outside presenters from a variety of organizations. Our extraordinary line up of classes for Teen Focus
range from CSI-Barnyard, Zumba, Campus Tours, Health Rocks! Youth Mini-Grants, Livestock, Healthy
Lifestyles, Community Leadership, to Entrepreneurship. It is definitely a line up everyone will love. 4-H’ers
and FFA youth will attend classes together. This year, instead of signing up for classes in advance, youth will
receive an on-line link where they can register on-line. By combining the two groups, we now expect more than
400 teens from all across the state of Maryland in attendance.

The counselors, CIT’s and Mrs. C with her crew of dedicated staff are busy preparing for camp, but we
need YOU. Please schedule some time now toCCCAM
spend at camp – a few hours during the day, in the evening
or even overnight. The time you share will be very special and rewarding, not only to you but also to the
youth who attend camp. Chaperones must be UME trained. All overnight chaperones must be
fingerprinted. UME training offered on June 4, 7:00 p.m. at the Extension Office (call the Extension Office
to register). ALL overnight chaperones must be fingerprinted.
Parent/Camper Orientation will be on June 14 at the 4-H Camp beginning at 7:00 p.m.
We need to know you are coming! Call the Extension Office and
leave your name and phone number before attending any 4-H
workshop, event or training.

In order to participate in a petting zoo – all animals that have a rabies vaccine available for that species must have
their animal inoculated and the certificate present at the event.
The Extension Office must be notified before you participate in any 4-H petting zoo. The event that you would
like to participate in, MUST show proof of adequate insurance to the Extension Office before you can participate.

MAY 6 – DOG AGILITY & OBEDIENCE TRAINING
First year dogs (dogs who have never been in an agility class) will be trained as a group from 6:30-7:00pm.
Second year dogs and up (dogs who have had previous experience) will start at 7:00pm.
Obedience classes will start at 7:00pm for all dogs. Dogs in agility will be able to work on obedience as well.
Please sign up through email with the following information: Child’s Name, Child’s Age, Dog’s name, Dog’s
age, Parents name(s), a phone number that they can send texts to in case of cancellation. Indicate if you are
signing up for Agility and if it is your dog’s first year and/or if you are signing up for Obedience and if it is
your first time taking an obedience class.
Farm Rules and Class Rules will be provided along with information to handle weather situations.
Bring a COPY of your rabies certificate to class. We will keep all certificates on file for the fair. Please pay

ELIZABETH “BECKY” BURGESS has been selected to attend the 2013 National 4-H Congress! In
November Becky will join about 1200 other award winning 4-H’ers from across the country in Atlanta, GA for
the experience of a lifetime. This Leadership Conference will showcase nationally recognized speakers,
learning sessions taught by youth and adults, community service opportunities, tours and opportunities to meet
and work with 4-H’ers in our Maryland Delegations and across the country. Becky successfully submitted a
Portfolio and interview process to be chosen for this honor.
SARAH FIELDER has been selected to attend the 2013 Virginia 4-H Congress in June at Virginia Tech, in
Blacksburg, Virginia. Sarah has also successfully completed the resume process. This process hopefully will
serve her in future years when she approaches a career and needs to submit a Job Resume and complete college
applications.
HARFORD COUNTY 2013 ENGINEERING CAMP PARTICIPANTS
Nick Hughes, Paul Johnson, Noah Sekowski, Jonathan Minter, Ned Maxwell, George Hughes, Ryan Mandl,
Andrew Wood, Michael Wood, Matthew Davis and Paul Sawyers all attended Engineering Camp at the
Harford County 4-H Camp facilities. These participants had the opportunity to work on the following
projects: electricity/energy, large tractor operation, lawn tractor, small engines, surveying, GPS and welding in
basic and advanced levels. They finished the weekend off with a team engineering skills contest. This
learning experience has helped prepare them for future county, regional and state contests.

Calling all 4-H Clubs!!! You are welcome to come and enjoy the beautiful
atmosphere of your Harford County 4-H Camp.
The pool will be open, so come and enjoy the day and play with other 4-H
families. Grills, volleyball pits and a pavilion are provided, so bring along
your family and friends and some food and games.
Relax from your normal routine and enjoy a day with nature and your family.
Eat – play – hike – at your leisure.

MEAL APPEAL RECIPES
Devilish Maryland Crab Eggs
 1 pound Maryland lump crab meat
 12 hard boiled farm fresh eggs
 6 Tbsp finely chopped celery
 1 cup mayonnaise
 2 tsp dry mustard
 ½ tsp garlic powder
 1 tsp Worcestershire sauce
 1 tsp Old Bay seasoning
 Old Bay seasoning for garnish
Cut eggs in half lengthwise. Remove yolks and mash yolks in a
bowl. Set egg whites aside. Add chopped celery, mayonnaise and
seasonings to mashed yolks. Mix well. Fold crab meat into
mixture. Fill egg whites with crab mixture. Sprinkle with Old Bay
seasoning.
Makes 24 servings.

Ben & Jerry’s Coconut Ice Cream
 2 cups light cream
 1 cup sweetened condensed
milk, cold
 1 15 oz. can of coconut cream
Classic Belgian Waffles
 2 cups cake flour
 2 tsp baking powder
 ½ tsp salt
 4 large eggs, separated
 2 Tbsp sugar
 ½ tsp vanilla extract
 4 Tbsp unsalted butter, melted
 2 cups milk
 non-stick cooking spray
Ice Cream: Whisk together all three ingredients and freeze
according to manufacturer’s instructions on freezing.
Waffles: Preheat waffle iron. Sift together flour, baking powder
and salt and set aside. In a second bowl – beat together egg yolks
and sugar until dissolved completely and eggs are pale yellow.
Add vanilla extract, melted butter and milk to the eggs and whisk
to combine. Combine egg-milk mixture with flour mixture and
whisk until just blended. *do not over mix. In third bowl – beat
the egg whites with an electric mixer until soft peaks form, about
1 minute. Using a rubber spatula, gently fold the egg whites into
the batter. *do not over mix. Coat waffle iron with non-stick
cooking spray and pour measured batter onto waffle grid, enough
to cover grid. Close and cook about 1 ½ minutes – beep sounds
to signal when finished. Serve immediately. Serves 6-8.

Peanut Butter Pie
 8 mini graham cracker crust
 3 ounces of cream cheese
 ¼ cup peanut butter
 1 cup powdered sugar
 8 ounces whipped topping
Mix cream cheese, peanut butter and powdered sugar. Add
whipped topping. Place in pie shells. Chill overnight.

Chicken Caesar Salad
 chicken breast
 salt & pepper
 garlic powder
 parsley
 romaine lettuce
 1 small cucumber
 ½ cup baby carrots
 ¼ cup Caesar salad dressing
Clean the chicken breast. Pat dry. Season chicken with salt,
pepper, garlic powder and parsley. Cook on George Foreman grill
for 5-8 minutes. Set aside. Cut romaine lettuce stalk into one inch
sections. Place in a large bowl. Cut cucumber into thin slices and
place in large bowl with the lettuce. Slice carrots using a grater
directly into the large bowl. Begin to toss the salad adding
Caesar dressing a little at a time. Cut chicken breasts into slices
then place on top of the salad.
Four servings.

Soutwestern Chili
 2 Tbsp olive oil
 1 large diced red onion
 1 red pepper, chopped
 1 yellow pepper, chopped
 4 cloves of garlic, chopped
 1 pound of ground beef
 1 pound of Italian sausage
 2 Tbsp chili powder
 1 Tbsp ground oregano
 4 ounces tomato paste
 42 ounces diced tomatoes
 15 ounces black beans





15 ounces kidney beans
15 ounces pinto beans
Grated cheese
Sour cream
Green onions
Saute first 4 ingredients for 4 minutes. Add garlic. Stir in beef and
sausage. Cook and crumble until brown. Drain. Add all other
ingredients and simmer for 2 hours. Serve chili with grated cheese,
sour cream and/or green onion, if desired.
Serves 10 people

Shepherds Pie
 1 ½ pounds lean ground beef
 1 Tbsp canola oil
 1 medium onion, finely chopped
 1 clove garlic, minced
 1 Tbsp whole wheat flour
 1 cup low sodium chicken broth
 2 Tbsp tomato paste
 2 cups chopped carrots
 ¼ tsp black pepper
 3-4 large potatoes
 Vegetable broth

Peel the potatoes and cut into chunks. Boil until soft and set
aside. Brown the ground beef in a large skillet. Drain off any fat
and transfer the meat to a plate. Wipe any leftover fat out of the
skillet with a paper towel. Heat the oil in the skillet, then add the
onions and garlic. Saute` until softened. Add the ground beef
back into the skillet. Sprinkle the flour over the meat mixture.
Slowly stir in the chicken broth. Add the tomato paste, carrots
and pepper. Cook until thick and bubbling and the carrots have
softened. Pour the meat mixture into a casserole dish. Mash the
potatoes with the vegetable broth. Spread the mashed potatoes
over the meat mixture. Bake at 350 degrees until the potatoes
turn a deeper yellow – about 45 minutes. Serves 8.

Yellow Brick Casserole
 1 onion chopped fine
 1 green bell pepper, stemmed,
seeded, cut into small pieces
 1 Tbsp of vegetable oil
 3 cloves of garlic, minced
 2 Tbsp of chili powder
 1 pound of 90% lean ground beef
 2 cups of water
 1-15 ounce can of tomato sauce
 8 ounces or 2 cups of elbow
macaroni
 1-15 ounce can “yellow brick
road” corn
 1 can of chopped green chili
 8 ounces or 2 cups shredded
Mexican cheese blend
 Salt & pepper
 2 Tbsp of minced fresh cilantro
Preheat skillet to medium heat. Add 1 Tbsp vegetable oil. Then
chop onions & green bell peppers. Add to the skillet over medium
heat, stir occasionally, for 5 minutes, until softened. Stir in the
garlic and chili powder. Stir in the 1 pound of ground beef. Break
up the beef with a wooden spoon. Cook until no longer pink. Stir
in 2 cups water, 15 ounces tomato sauce and 8 ounces or 2 cups
elbow macaroni. Cover and cook at a vigorous simmer, stirring
often until pasta is tender, about 9-12 minutes. Remove from heat.
Stir in corn, chili and 1 cup of cheese. Season with salt and pepper
to taste. Sprinkle remaining 1 cup of cheese over the top, cover
and let sit until melted. Sprinkle with cilantro garnish – serve and
enjoy!
Serves 4.

APG Army Meal Appeal Heroes with Heart prepared a delicious and colorful fresh fruit salad.

Eight 4-H Clubs learned about nutrition, food safety and handling, the cost of food and teamwork. Each
club planned a nutritious menu, set up a table display and prepared one dish to be judged. They were
judged on the menu, the recipe, the food prepared, the table setting and their demonstration techniques.
The event was generously hosted by the APG Youth Center. The hosts and facilities were awesome!

The Homeschool Heart in Hand 4-H Club met recently at Bethel Presbyterian Church in Madonna, MD. Club
members were presented with 2013 4-H Calendars sponsored by Walter G. Coale, Inc., Churchville, MD. Walter G.
Coale has been providing calendars to all Harford County 4-Hers and volunteers for 65 years. Shown with their new

presentation at their March meeting.
The Homeschool Heart in Hand 4-H club held its annual
candlelight ceremony for the induction of newly-elected
officers for 2013 . Mrs. Andy Rigdon of Rigdon Farms,
Jarrettsville, was guest speaker for the ceremony. Mrs.
Rigdon spoke of her personal experiences as a 4-Her
growing up in Harford County. She encouraged the
members to share what they have learned through their
4-H work with others, to be leaders in their club and
community, and to help others whenever they have the
opportunity. Participating in the ceremony were : Front:

responsibility of all 4-H and Clover Clubs to
see that the entries are not damaged or missing
through proper supervision of the buildings.
Clubs on duty supervise the total 4-H Indoor
Exhibit Building. This means:
Watch the front & back of each
building where there are exits
Answer questions from the public
Be generally alert
A lot of time and much effort has been
invested in each exhibit, so every effort needs
to be made to ensure the entries remain intact
and undamaged. It is important to use the sign
in sheet so we know that the building is being
properly supervised.
