THE FUNDAMENTALS OF WINE – SERIES I
OLD WORLD & NEW WORLD STYLES – Learn the fundamentals of wine, its relationship
to human history, and the history of major grape-growing regions of the world. Includes a study of grape
varieties, wine regions and labeling laws.
SERVICE OF WINES & TASTING WINES – Learn essential service skills, including how to properly
pour wine, decant, present, and choose appropriate glassware. Includes important information on wine
storage: temperatures, preservation, and wine cellar rotation. Also learn how to properly taste wine,
focus on appearance, scents, flavors, and finish, and ultimately, identify and properly evaluate its
characteristics.
BASICS OF WINEMAKING & PA/NY WINES – Welcome to the world of viticulture, the science,
production, and study of grapes. Your expert instructor will explain the series of events that occur
in the vineyard and the wine-making process and discuss the significance of climate and terrain
in determining a grape’s inherent qualities. Pennsylvania and New York region wines will be
discussed in this course. FOOD & WINE PAIRING – Wine flavors are derived from specific components as well as
complementary components, richness, and texture. In this class you’ll discover the six elements
used in the industry to pair food and wine, while bolstering your ability to distinguish between
the different components for successful pairings.
THE FUNDAMENTALS OF WINE – SERIES II
NOTE: Series I must be completed before registering for Series II sessions.
MAJOR WINE REGIONS – This exciting series of classes travels through the individual wine regions of
the world. Each class reveals the history, the styles, the climate and terrain, and the wine-making process
indigenous to that particular country or region. Topics include how the influence of physical geography, soil type,
and climate influence the diverse aromas, flavors, and longevity of the different varietals. You’ll also discover the
common denominator between all wine regions and why certain areas are making the most on the market.

THE BREWING PROCESS – Get to know the history of the beer industry, including its historic significance, while learning how to identify beer flavors
and styles. In this class, you’ll also delve into the brewing process and ingredients used for the various types of beer.
SERVICE OF BEER/BEER TASTING/BEER COCKTAILS – Work together with your fellow classmates to develop best practices for presentations, pouring glass types, and cleaning of glass, while learning about retail beer storage and service issues. You’ll also learn how to properly taste
and describe beer with a specific beer-tasting glossary and cover the trend of beer cocktails.
FOOD & BEER PAIRING/TRENDS – After learning the historic importance of beer and varying brewing strategies, you’ll gain an appreciation for
how beer can be paired with almost any food. The class explores the unique attributes of each style of beer and how it can be paired with different
food components.
THE FUNDAMENTALS OF BEER –
SERIES I I
This handcrafted series delves into the major countries of beer production. Each of the sessions will include how brewers are building
upon traditional ingredients and styles, experimenting, and inventing
new techniques. You’ll enjoy a taste of Old World brewing history
and a side-by-side comparison of New World innovation.
