Cucumber & Tomato Side Salad with Citrus Dill Dressing

Serving Size:1 TBS dressing + 1/2 cup salad

Ingredients:
• 2 cup cucumber, cubed into bite sized
pieces
• 1 cup cherry tomatoes, sliced in half
• 1/4 cup red onion, diced
• 1/2 cup olive oil
• 1/4 apple cider vinegar
• 2 garlic cloves, minced
• 1 TBS fresh dill (if dried, 1 tsp)
• 2 tsp salt
• Black pepper to taste
• Juice of 1 lemon + 1 TBS zest
• Juice of 1 orange + 1 TBS zest
Directions:
Mix vegetables together in large mixing bowl.
In smaller bowl, whisk together the remaining ingredients
until well mixed. Pour over vegetables and coat.
Refrigerate until serving (this salad gets better as it
marinates) and then serve at room temperature.
