Deep-fried cod in batter
Recipe
Ingredients
Cod fillets
Seasoned flour
Frying batter
Vegetable/corn oil
Salt and pepper
Lemon wedges
Parsley sprigs

Method
1
Pass the fillets through the seasoned flour and shake off any excess.

Heat the oil in a friture to 180°C.

Place the floured fillets in the frying batter. Allow a few seconds for any excess to run off and then place into
hot oil.

Cook until golden brown in colour.

Drain off excess oil from the battered fillet, add salt and pepper to taste and serve with lemon wedges and a
deep-fried parsley sprig.
