Their focus is to supply quality wines from small, independent producers that are made with passion and integrity whilst being true to environmental issues. James Close Please note that vintages may vary After 16 generations this prestigious Champagne house is still run by the Philipponnat family. Based in Mareuil sur Ay in the heart of Champagne, their production is tiny compared to well-known Grande Marques brands. Particularly known for its Pinot Noir production, Champagne Philipponnnat owns 17 hectares of Grands Crus and Premiers Crus vineyards. They are also known for using a large amount of “Vins de Reserve” vinified in oak barrel which give their wines their trademark structure and depth. Champagne Philipponnat is represented by many Michelin starred restaurants around the world. 100ml Bottle Magnum 1 Champagne Philipponnat, Brut, Royale Réserve, Mareuil sur Ay, 2008 12.00 70.00 150.00 Largely dominated by Pinot Noir (60%) with a little bit of Chardonnay and a smattering of Pinot Meunier, two third of the grapes come from Grand Crus and Premiers Crus Vineyards. Disgorged in October 2011, this Champagne has a wonderful structure and intensity whilst remaining fresh, zesty and elegant. Long mineral finish. 15 Champagne Philipponnat, Grand Blanc, Blanc de Blancs, Vintage 2005 95.00 Made exclusively from Premiers Crus and Grand Crus Vineyards, this 100% Chardonnay matured for at least 5 years is displaying big, complex, creamy characters with hints of hazelnut, peach and brioche. 2 Champagne Philipponnat, Brut, Réserve Rosé, Mareuil sur Ay, 2007 75.00 Dry but fruity. Lovely red berries and strawberry characters with hints of candied citrus fruit characters. Dominated by Pinot Noir, 24% of reserve wines were used to make this wine. 12 Clos des Goisses Champagne Philipponnat, Brut, 2000 (disgorged in October 2009) From a single 5.5h South facing steep vineyard solely owned by the Philipponnat family, this is a blend dominated by Pinot Noir. Small yields, careful oak ageing and long maturation make this exceptional Champagne very food friendly We recently visited the Philipponnat House and we were very fortunate to be present when the harvest had just started. We were simply in awe of how much work is involved in producing high quality Champagne. So much care is involved in the vineyard and in the winery. Being a family owned and run quality producer, we felt Philipponnat had a natural fit with what we are trying to achieve at the Raby Hunt. Philipponnat is a unique Champagne which has very limited availability in the UK, we hope you will enjoy it as much as we do. French summer holidays in a glass! 7.60 31.00 16 Recioto della Valpolicella, “Fiorato” Tommasi, Veneto, 2012 37.5cl The best way to describe this unusual wine is to call it a “sweet Amarone”. Made with the same grape varieties as the iconic wine from Verona, this sweet red wine is packed with delicious black cherry jam flavours. 45.00 17 Sauternes, Château Filhot, Bordeaux, France 2009 37.5cl The Château Filhot was founded in 1709 by Romain de Filhot and is now owned managed by one of his descendants: count Henri de Vaucelles. The Château Filhot is a classic Sauternes with a specific fresh Sauvignon Blanc flavours character. 54.00 Bottle White South Africa 18 Force Majeure Chenin Blanc, Johan Meyer, Swartland, 2014 (Organic) Swartland is fast becoming one of the most dynamic and cutting edge wine regions in South Africa. Meyer, who believes in minimal intervention in wine making, produces this amazingly vibrant and zesty Chenin with delicious stone fruit characters, the palate is balanced by a delicious texture on the finish. 39.00 Seven Springs Seven Springs is a premium South African wine producer and is named after the seven natural springs in the nearby spa town of Caledon. The vineyard is sited on the R320 Hemel en Aarde (Heaven and Earth) road 20kms from the seaside town of Hermanus. The UK owners, husband and wife Tim and Vaughan Pearson, bought the 30 acres of prime vineyard land in 2006, planting in 2007/8 and are proud of their range of single varietal wines. A temperate climate means cool wet winters and hot dry summers. The Atlantic Ocean is just 8kms away, and is responsible for keeping summer temperatures 5-6°C lower than Stellenbosch, allowing a long ripening period, giving rise to complex wines of high quality. 103 Oaked Chardonnay, Seven Springs, Hermanus, 2011 Hermanus is one of the up and coming wine regions of South Africa. Due to its proximity to the Ocean, this region is able to get a cool climate and grow aromatic grape varieties. Very lightly oaked, this delicious Chardonnay remains very fresh and elegant. 40.00 Australia 20 Chardonnay Seven Day Road, Mudgee, New South Wales, 2013 Upfront tropical fruit balanced by fresh acidity defines this un-oaked Chardonnay from a cooler part of Western Australia. 34.00 21 Crittenden Chardonnay, Mornington Peninsula, 2012 Garry Crittenden was one of the first producers to identify the potential of Mornington and his children are now running this highly regarded estate. With minimum malolactic and oak reliance, this wine has retained its vibrancy with abundant stone fruit and citrus characters. Long finish with hints of smoke and flint. 45.00 22 Semillon Sauvignon Franklin Tate, Western Australia, 2013 Fresh and zingy with delicious limy and pink grapefruit bursting on the palate, aromatic finish 35.00 Bottle White New Zealand Little Beauty Little Beauty is a small boutique winery and its vineyards are situated next to the Waihopai River and face the famous and picturesque Richmond Range. They are sheltered but have taken advantage of their northwest orientation which ensures excellent ripening conditions. Jason is the viticulturist and Eveline is the wine maker, who used to be the senior wine maker at Cloudy Bay. The wines literally are little beauties. Under the careful management of Eveline, the wine making process delivers true Marlborough wines, however, they are exquisitely elegant and feminine, the flavours are expressive but refined and they will either be enjoyed on their own, or they will be capable of matching very sophisticated food. 23 Little Beauty Sauvignon Blanc, Waihopai Valley, Marlborough, 2013 The usual Marlborough characteristics of tropical fruits (guava, passion fruit) are present, but the wine remains delicate, feminine and aromatic. The long mineral finish brings a lot of elegance to the wine's structure. 44.00 24 Little Beauty Riesling, Waihopai Valley, Marlborough, 2011 Crisp and zippy with delicious lime sherbet characters. Aromatic and elegant, long mineral finish 44.00 25 Little Beauty Pinot Gris, Waihopai Valley, Marlborough, 2012 Almost Alsatian in style, this delicious Pinot Gris shows great balance between freshness and opulence from the ripe apricot and peach characters, the long finish displays fine spicy notes 45.00 26 Black Edition Little Beauty Sauvignon Blanc, Waihopai Valley, Marlborough, 2012 Unusual Sauvignon with a lot of complexity and richness due to its careful ageing in French oak. Round but well balanced with good acidity 45.00 29 Estate Sauvignon Blanc, De Martino, Maipo Valley, 2014 Zippy and fresh with juicy lemon on the palate, made by the first carbon neutral producer in South America. 32.00 Argentina 30 Villa Vieja Chenin Torrontes, La Agricola, Mendoza, 2014 Packed with floral, aromatic and apricot notes, the rich peachy notes wine are balanced by good acidity. 30.00 31 Santa Celina Pinot Gris, Jacques and Francois Lurton, Mendoza, 2015 Lovely ripe peach and spicy characters, fleshy palate but well balanced by good acidity and a mineral finish. 32.00 New York, USA 116 Chardonnay, Scuttlehole, Channing Daughters, Long Island, 2013 Wonderfully juicy and textural Chardonnay, unoaked with no malo lactic fermentation, bursting with orchard fruit characters and a zesty, mineral finish. 48.00 Spain 32 Albariño Abadia de San Campio, Rias Baixas, 2014 The wine is produced in Galicia, the North West of Spain and due to its proximity to the Atlantic Ocean; this region produces wine with a lot of freshness and crisp acidity. Packed with citrus and tropical fruit characters, the wine is long. 41.00 33 Rioja Blanco, Sauvignon Blanc, Bodegas Altanza, 2014 Refreshing and full of tropical characters with lovely grassy notes, zesty but full 34.00 34 La Mar, Caiño Branco, Bodegas Terras Gauda, Rias Baixas, 2012 This is the favourite white wine of King Juan Carlos that is served at official banquets. Made with the rare, indigenous Caino Branco, this wine is absolutely fabulous. Produced in very small yields, this is highly concentrated and full on the palate yet very well balanced by good acidity. Showing yellow fruit and citrus characters on the palate and savoury, salty notes on the finish, this is the perfect match for any serious seafood dish. Very little is produced but we are delighted and proud to have secured an allocation of this wine. 61.00 118 Amphora Xarelo, Loxarel, Penedes, 2014 (Organic) Clay vessels were the first vessels to be used to store and transport wine over 8000 years ago. Thanks to Georgian producers, they have come back into fashion and many cutting edge producers around the world are using them again. As well as being porous and allowing for natural breathing, clay is also antiseptic meaning less use of antioxidant like SO2. Xarelo is one of the local Catalonian grape varieties and this wine is clean, with crisp citrus characters and a lovely mineral finish. 39.00 White Bottle Italy 35 Gavi del Comune di Gavi « Monseritot » Tenuta Carretta, Piemonte, 2014 This is a classically styled Gavi from a top producer whose passion and expertise is displayed in their wines. The delicate lemon colour leads to a complex nose of citrus, apples, pears, wild flowers, and aromatic herbs. 43.00 36 Vermentino, Poggio al Tufo, Tommasi, Tuscany, 2014 Originally from Liguria, Vermentino is a typical Mediterranean grape variety. Full of juicy and ripe lemon characters, zippy and aromatic. Will match grilled seafood perfectly. 37.00 38 Trebbiano d’Abruzzo, Gianni Masciarelli, Marche, 2014 Made from the local and unique Trebbiano d’Abbruzo, this is a typical, delicious white Italian. Bursting with aromatic and yellow fruit characters, the palate is refined with green apple flavours and hints of almonds on the finish 34.00 Germany 39 Riesling, Trocken Mittleheimer Edelman, Bernhard Merhlein, Rheingau, 2014 A dry but fleshy and ripe Riesling showing delicious ripe lime flavours and a lovely elderflower finish 39.00 Austria 40 Grüner Veltliner Rainer Wess, Wachau, 2014 Very delicate and aromatic, a palate full of spicy notes and orchard fruit characters. Long mineral finish 37.00 Greece 104 Savatiano, Domaine Papagiannakos, Attika, 2014 Traditionally used in the production of Retsina, this is an elegant, very high quality, dry version from a top producer in the area. Juicy and soft with lovely peachy and pear characters with an almond and savoury finish. 38.00 Switzerland 105 Fendant, Les Deux Cimes, Jamie McCulloch, Valais, 2014 Fendant is the Swiss name for Chasselas, and old fashioned French grape variety that has almost disappeared and that Swiss vineyards now grow very successfully. Jamie McCulloch, originally from Edinburgh, set up his tiny winery a few years ago and now sell on allocation only due to high demand. A great alternative to Sauvignon Blanc, ripe Fendant is fresh, zesty but fleshy with juicy yellow plum characters and an herbal and savoury finish. A great match to James’ delicate dishes. 54.00 White Bottle South of France 41 Gaillac, Domaine Clément Termes, Gascony, 2014 A blend of indigenous Loin de L’oeil and Mauzac, whilst being fresh, a bit of weight on the palate with delicious ripe pears characters. 29.00 42 Les Terrases Blanc, Château Pesquié, Ventoux, Rhône, 2014 Dominated by Viognier and completed by Roussanne and Clairette, this feminine wine from Southern Rhone is packed with delicious white peach, apricot and yellow plum characters, lovely aromatic finish. 35.00 43 Picpoul de Pinet, Domaine des Lauriers, Cuvée Prestige, Côteaux du Languedoc, 2014 A clean and refreshing wine from the South of France offering excellent value for money. Loads of citrus and peachy flavours with a lovely aromatic and herby finish. 32.00 119 Maceration du Soula N13, Domaine Le Soula, Vin des Fenouilledes, Rousillon, NV (Orange and Organic Wine) A blend of Vermentino (dominant), Maccabeu, and Malvoisie, the grapes come from the high altitude vineyards (550m) of the Fenouilledes, giving them plenty freshness. With very little yield, theses white grape varieties are literally made like red wine by getting the skins to macerate for 2 weeks and give the juice an “copper” colour, hence the term orange wine. Balanced by crisp acidity, this wine has a lot of texture with delicious confit citrus fruits characters and a lovely herbaceous and mineral finish. 55.00 Loire 44 Pouilly Fumé, Jonathan Pabiot, 2014 (Organic) Jonathan is undoubtedly one of the rising stars of the appellation. Now certified Organic, his vineyards produces fantastic Sauvignon Blanc. His low intervention approach to wine making produces wines of great complexity, balance and length. 47.00 45 Muscadet de Sèvre et Maine sur Lie, Château Haute Cariziere, 2014 Reminiscent of quality Trebbiano with lovely floral and almond notes. The acidity is obviously present but is well balance 30.00 46 Sauvignon Blanc de Touraine, Fleur de Printemps, Domaine de la Rochette 2014 Award winning Sauvignon from the heart of the Loire. Crisp gooseberries, limes and a very slightly creamy finish. 36.00 47 Vouvray Sec Domaine Champalou, 2013 The original home of Chenin Blanc, this Vouvray is dry but luscious with delicious notes of honey, white peaches and long mineral and savoury finish. 39.00 48 Sancerre Domaine Vincent Gaudry, 2014 (Biodynamic) An opulent, rich Sancerre from this boutique and iconic Sancerre producer. Whilst showing the expected gooseberry and citrus characters, the wine has incredible depth and width. 52.00 Bottle White Alsace What is Biodynamic Viticulture? Biodynamic viticulture, like Organic viticulture, does not use the herbicides or pesticides employed in conventional grape growing. By respecting the soil as a living element, it nurtures the vines, imbruing them with mineral and organic trace elements. Biodynamic viticulture goes a step further than Organic viticulture: it also takes into consideration the pattern of lunar and cosmic rhythms. The soil is seen not simply as a support for vine growing, but as an organism in its own right. This approach to agriculture was common practice throughout Europe during the Iron Age. It disappeared with the emergence of modern agriculture. It was Rudolph Steiner, an Austrian philanthropist, who reintroduced this practice. The number of wine producers embracing Biodynamy is constantly growing, especially in France and Italy. 49 Pinot Blanc Auxerrois Tradition, Domaine Albert Mann, 2013, Biodynamic Related to Chardonnay, Pinot Blanc is one of the most underrated grape variety. Very approachable with a soft acidity. Fresh, yellow fruit characters dominate the palate, hints of green apple, lovely floral finish. 40.00 50 Gewürztraminer Tradition, Domaine Albert Mann, 2013, Biodynamic Family owned estate that won French producer of the year award. This wine displays some richness whilst being well balanced by fresh acidity. Lychee and apricot characters are followed by a long mineral and spicy finish. 50.00 Burgundy 51 Chablis, Domaine Fèvre, 2014 From a small producer based in the Fourchaume terroir this is a text book Chablis. Crisp, full and mineral. 50.00 52 Saint Véran (unoaked Chardonnay) Domaine de la Croix Senaillet, Macônnais (Organic) 2014 Very fresh and zippy but at the same time opulent and mouth filling. Delicious Acacia honey and baked apple characters 41.00 53 Bourgogne Blanc, Domaine d’Ardhuy, 2014(Biodynamic) The aromas are reminiscent of the lean Puligny-Montrachet fruit: lemon zest, and butter-cream. The palate is warm and round with vibrant acidity. Green apple and butter-cream comes to mind on the mid-palate as it finishes with a lovely hint of honey and toast. 41.00 54 Pouilly Fuissé, Dominique Cornin, 2014 The area of Pouilly is situated at the southern tip of Burgundy where the warm climate ensures high levels of ripeness and complexity 52.00 White Bottle Burgundy 55 Chablis 1er Cru Les Fourneaux, Domaine de la Meuliere, 2013 As it is starting to age, this 1er Cru is showing some lovely honey and almond characters along with a distinctive savoury, fennel finish. 55.00 56 Meursault, Domaine Michelot, 2013 2009 is considered as the vintage of the decade in Burgundy and this Meursault is already showing all its potential. Really ripe and opulent and yet, very well balanced by good acidity, delicate citrus and mineral flavours 64.00 106 Chablis Grand Cru Les Preuses, Domaine Fèvre, 2012 Big Chablis expressing the richness of the 2009 vintage. Already showing signs of maturity, complex with creamy characters and zippy lemon and green flavours. Long, dusty, mineral finish with hints of fennel and flint. 65.00 57 Chassagne Montrachet 1er Cru Les Champgains, Domaine Vincent Pillot 2013 Chassagne is synonymous with power in the Côte de Beaune, but the careful ageing in oak barrels is bringing balance to this wonderful Chardonnay from one of the most iconic villages in Burgundy 67.00 Rosé Bottle 58 Cinsault Rosé, Le Paradou, South of France, 2014 Dry but very fruity and elegant rosé produced in the Ventoux area of Southern Rhône. Lovely ripe raspberry characters, refreshing. 29.00 59 Tavel Rosé, Prieuré de Montezargues, Southern Rhône, 2014 Louis XIV was among the first to sing the praises of Tavel’s delicious and memorable rosés. The rosé of Prieure de Montezargues has lovely aromas of ripe, red berries with notes of the ubiquitous spicy garrigue. 39.00 Red Bottle Australia 110 Tommy Ruff, Shiraz Mourvèdre, Tom Shobbrook, Barossa Valley, 2014 (Biodynamic) Tommy Ruff Shiraz-Mourvèdre has a core of generous fresh fruit and some hints of savoury meatiness that opens up beautifully in the glass. Vivid, pure and vibrant with dark fruits, earth, spice, mocha and chocolate. Not your typical, big, Barossa Shiraz but yet very satisfying. 49.00 60 Seven Day Road Shiraz, Mudgee, New South Wales, 2013 Mudgee is seen by many as one of the most promising wine areas in Australia. This Shiraz delivers everything expected and more. Big but well made and elegant with ripe damson and bramble jam flavours, herbs, cinnamon and a long finish. 39.00 61 Lowe Merlot, Mudgee, New South Wales, 2006 Organic Made with very little intervention or filtering, this delicious Merlot is ripe, round, opulent with well-structured tannins. 48.00 South Africa 62 Meinert “Printers Ink” Pinotage, Devon Valley, 2012 This is a fantastic Pinotage without the typical tarry, smokey aromas that you find in cheaper styles. Full bodied but juicy. 39.00 64 The Gypsy, Ken Forrester, Stellenbosch, 2011 A big, generous and structured wine made from a blend of Grenache and Syrah. The areas limestone and clay soils give very similar growing conditions to those found in Burgundy, therefore it is no surprise that great quality wines can be found here. Pinot Noir cultivation in this region is documented as far back as 1285, when Cistercians monks brought with them practices they had witnessed in Burgundy. The 27 hectare site, all of which lies between altitudes of 230-310 metres, were until this year tended by the late Bernhard Huber, a producer who has been hailed as one of the superstars of German Pinot Noir. The term iconic is far too often used but in his case it is true to say that he was regarded as the best Pinot Noir producer in Germany. We met Monsieur Lardy, the proud proprietor of Domaine Lardy who produces a sensational Fleurie “Vieilles Vignes” made with the indigenous Gamay grape variety. Far from being similar to the commercial and simple Beaujolais Nouveau, this Gamay based wine has a lot of structure, similar to its Pinot Noir neighbours. The wine is simply a pure expression of Grenache, Carignan, Syrah and Mourvèdre. This type of wine will match meat with high fat content like Lamb, especially grilled with herbs. 45.00 Château La Nerthe The terroir of Chateauneuf du Pape is famous for its “galets” or pudding stones which store the daily heat and resitute it at night which allow the grapes to ripen more intensely and make this terroir so exceptional. Château la Nerthe, residing in the high-brow Châteauneuf-duPape appellation, owes a lot of its success to the favourable microclimate that affects the estate. 200 days of sunshine a year result in grapes maturing more quickly than in our estates and the famous northerly Mistral stops fungus spreading on vines, yet simultaneously proves problematic to spindly, youthful vines. The team at Château la Nerthe are well used to combatting the wind however, and succeed in cultivating 13 distinct grape varieties.
