JOB DESCRIPTION
Captain-F&B
 Assists the Outlet/Restaurant Manager/Supervisor with the day to day operation of the Outlet in
accordance with establish policies and procedures, acting on the behalf in their absence.
 Interacts with the guest in each of the outlets to solicit comments
 Communicates with the Outlet/Restaurant Manager/Supervisor any difficulties, guest comments and
other relevant information.
 Prepares daily assignments of personnel based on the volume of business.
 Arranges and implements the outlet promotions/theme nights.
 Assist the outlet /Restaurant Manager to establish comprehensive training programs for the outlet.
 Conducts “one on one” training for all outlet colleagues as required and as well as preparing Monthly
Departmental Training Plan. And monitoring training records of all outlet colleagues to ensure that all
have received adequate training to perform their duties as per the hotel’s standards.
 Attends all hotel and Departmental trainings as required
 Attends Departmental briefings if the Outlet/Restaurant Manager/Supervisor is not available.
 Adheres to all HR policies and procedures.
 Prepares requisitions as requested, ensure that the par stocks are maintained and initiates necessary
requisitions and approves transfer forms between outlets and document it properly.
 To assist outlet/Restaurant Manager with the implementation of control measures to cut down SOE
breakage to reduce cost.
 Acquire in depth knowledge of the Food & Beverage menu of the assigned Outlet in order to assist and
provide advice to Guests
 Practice good customer relations and attend to customer complaints and queries satisfactorily.
 Ensure the Outlet is set-up for service and supervise for a smooth operation.
 Direct and supervise the service team to ensure that all duties are performed as per standards.
 Actively use up selling techniques by exceeding Guest expectations and to increase revenue
 Operate in a safe and environmentally friendly way to protect guests’ and employees’ health and safety,
as well as protect and conserve the environment.
 Comply with the hotel environmental, health and safety policies and procedures.
 Continually strives to improve self; knowledge and skills.
Bartender/Waiter
 Mix, garnish and invent drinks with ingredients, such as liquor, soda, water, sugar, and bitters to prepare
cocktail and other drinks.
 Serves alcoholic drinks (responsibly) and non-alcoholic drinks to patrons of bar, following standards
recipes.
 Prepares and serves cappuccino, espresso, macchiato and other types of coffee as ordered.
 Serve snacks or food items to people seated at the bar.
 Prepares daily and monthly inventory for monitoring and maintaining the number of stocks in hand,
variants, stock transfer, and all the items to out or sell as well as ordering or making requisition for liquors
and supplies.
 Checks the availability, expiration, manufacturing date and origin of wines for presentation.

Arrange bar stocks and glasses to make attractive display.
Maintains the cleanliness of glass wares and bar utensils and keep the bar area in order.
Maintains assigned station, including the arrangement of table pieces, side stands, and chairs.
Assists and attends the costumer and provide their needs and orders for their satisfaction.
Collects payments for drinks and balance cash receipts.
Up-sells to increase average guest to check and or beverage to food ratio as well as promotions.
Operate computerized point of sales systems.
Waiter-Room Service
 Prepares, delivers, set up and clear orders of the in house guests.
 Order -take and cashier in change of shift.
 Ensures to keep updated with the Hotel promotions and special events.
 Maintains cleanliness and functionality of the equipments in the Department such as coffee maker,
refrigerators, hot boxes, etc.
 Ensures to maintain the availability of the supplies for the next shift.
 Make requisitions for the food, beverage and general items.
 Labels products and expiration dates and follow the FIFO procedure.
 Check, replace and maintains items in the mini-bars.
 Carry out any other reasonable duties and responsibilities as assigned by the Outlet Manager or Hotel
Management.
Sales Consultant
 Promotes and sells products or services to clients and customers.
 Guides potential customer to discover his requirements and then offers the best solution to make sure
those needs are fulfilled.
 Regularly monitors the preferences of the customers.
 Records meeting or exceeding sales quotas.
 Ensures to keep updated with the latest market trends and remains posted on the product knowledge.
 Arrange new stocks to make it more attractive for display.
 Receive and count stock items, and record data manually or using computer.
 Pack and unpack items to be stocked on shelves in stockrooms in orderly and accessible manner.
 Examine and inspect stock items for wear or defects, reporting any damage to supervisors.
 Prepares and maintains daily sales records and reports as well as of inventories, price lists, shortages and
shipments.
