Hi Everyone,
Is it cold enough for you all. I’m not sure if it’s old age creeping in, climate change or something else, but I’m
certainly feeling a lot colder this year!
Firstly, a quick and final reminder to those who haven’t renewed your membership that this will be the last
newsletter you receive if you do not renew before the end of July. Thanks to those who have renewed, and
also for the feedback received from some members who are choosing to move on.
Unfortunately, Kate Bullock has had to resign as our Treasurer. Between looking after her two gorgeous boys,
doing the newsletter, website and WTP Facebook page, as well as going back to work part-time something had
to give. So we NEED a new treasurer. If you are organised and like to keep records of things and would like a
job on the Committee then Treasurer might suit you. The Treasurer needs to record all financial transactions,
do the banking and bank recs and make sure the paperwork is in place. Whilst bookkeeping knowledge would
help, it is not essential, so long as you can find your way around an Excel spread sheet you’d have the skills
needed. In the 2 years I did the Treasurer role for the Club I found it to be quiet an easy task. Under the terms
of our constitution we need to fill this role ASAP for the Club to function, so please, give it some thought and
don’t hesitate to contact me if you would like some more info on the role, or think this is something you might
wish to take on. Your Club needs you!
Please also don’t forget the Club’s current Fundraiser – the Mattel Factory Shop Toy Sale on Wednesday 26th
July. The Mattel range includes Barbie, Little People, Fisher Price, Dora, Lightening McQueen etc etc at very
reduced prices. This is a great opportunity to start your Christmas shopping and support your Club at the same
time. Tickets are $10 each and will be sold on a first come first served basis. So if you, your family or friends,
would like to attend the sale, please refer to the advert in this months newsletter and contact Kate Thomas on
contactparent@wyndhamtwinsplus.org.au for tickets.
We are also holding another New Mums Info Night on Thursday, 26th July at Nicole’s. Again, more details are
included in the newsletter on page 7.
Due to a lack of numbers we have decided to cancel the regular social at Kidz Digz (the last Friday of each
month). We have found that no one really supported this event so thought it best to put it on hold for now.
Nicole and Kate T are working on a few Grant submissions at the moment. Hopefully we will be successful in
one of these applications and will be able to implement a few new things later in the year. Details will follow
in future newsletters.
I’m very excited as Jason & I are actually getting the opportunity to have a childfree weekend during the
school holidays. Our wonderful 3 children are going to spend a few days with their grandparents in Ballarat
while we enjoy being grownups in Sydney for the weekend. I love my children but being a bit of a foodie, I
am really looking forward to a good quality meal out at a restaurant with proper napkins & tablecloths, good
quality glassware etc, no playground and no children running around terrorising the other diners because I’ve
forgotten to bring the right toys / colouring books / puzzles etc as a distraction! Ah, the serenity!
So while I imagine the joy of my weekend to come, I hope you all have a wonderful school holiday break and
manage to keep your children, happy and warm. After all, it they’re happy I’m sure so will you be!
Until next month, stay warm.
Jen

Hello to all,
I hope this newsletter finds you all well. First of all I’d like to say sorry for the lateness of this month’s
newsletter. My family has had a challenging month and I just didn’t quite get around to it.
I’ve personally had a lot of decisions and things to consider in my life recently and have had to make a
number of changes. Unfortunately this has meant that I have had to resign as club treasurer. I didn’t think
it was fair on the club of my family to commit to this role when I know I will not be able to give it my full
focus and attention. I’m hoping that someone will put their hand up to take on this vital role.
With all that is going on in my life, the club, Australia and the world I have spent many sleeplessness
thinking lately about everything. I think we all take for granted sometimes the amazing support we all have
around us. I’m not talking about family and friends but this twins group is a wealth of information and
support. If you haven’t attended an event, group or meeting lately I strongly recommend you do. We all
have twins and know how rewarding and challenging it can be. Sometimes it is such a joy to talk to someone
who really understands what you are talking about.
We have lots of things coming up soon and there will be more details in following newsletters. The next
new mums night will be held on the 26th of July at Nicole’s house, and we would love to see all our new
pregnant members. It’s your chance to get to know us, ask questions, and sit and have a chat. You never
know you may make a new friend you will have for life.
If you haven’t already joined our facebook page please do – just click the link

for club events, as well as the many specials I come across on my travels. All members are more than
welcome to post questions to other members on this page, as well as any specials they come across, tips or
ideas that are relevant to the group.
Please enjoy this months newsletter and I welcome any feedback!

Recipe of the Month
Now personally I love a good recipe, as before kids I would spend a day off in my kitchen making a special
meal for us to enjoy over a glass, or two, of wine. These days it’s all about what’s quick, easy, tasty and
healthy. It can be a tall order some days so I plan to bring you all a variety of recipes each month that I think
fill this tall order. The following recipe is very basic, super easy to prepare, you can double it for bigger
families (or just to pop in the freezer for a night you don’t feel like cooking) and in this cold weather
certainly keeps you warm! I’ve added a couple of extra tips and ideas at the bottom for ways you can slightly
change the recipe to satisfy all members of your fussy or not so fussy family!!
Roasted Pumpkin, Spinach and Feta Slice
Serves 4
Ingredients:








1.2kg butternut pumpkin, peeled, deseeded, cut into 3cm pieces
2 red onions, cut into thin wedges
olive oil cooking spray
100g baby spinach
75g reduced-fat feta cheese, crumbled
8 eggs
1/3 cup low-fat milk
8 thin slices crusty bread, to serve
Method:



Preheat oven to 230°C. Line a large roasting pan with baking paper. Place pumpkin and onion in
roasting pan. Spray with oil. Season with salt and pepper. Toss well to coat. Spread vegetables over
base of pan. Roast for 18 to 20 minutes or until vegetables are golden and tender. Remove from
oven. Place spinach over vegetables and stand for 3 minutes or until wilted.
Grease a 3.5cm deep, 16.5cm x 26cm (base) slab pan or baking dish. Line base and sides with baking
paper, allowing a 2cm overhang at both long ends. Spread pumpkin, onion and spinach over base of
pan. Top with feta.
Whisk eggs, milk and salt and pepper in a jug. Pour over feta. Bake for 35 minutes or until set. Stand
for 10 minutes. Serve with crusty bread.
TIPS

Now who wants a super easy meal in minutes? For those of you that still have a Sunday roast, do a
little bit of extra pumpkin and onion and put it to the side. The next night skip step 1 and just do
step 2 and 3 (the spinach really doesn’t need to be pre wilted).
As always add in leftover vegetables that you have in your fridge to use them up and hide them from
the kids!! Frozen peas and corn work too. Even better add in any leftover lunch meat you have in
your fridge – ham, chicken or bacon and really nice in this slice.
Don’t like pumpkin or just want a change – try sweet potato and beetroot, or tomatoes (sun-dried or
baby) or roasted capscicum and toasted pinenuts.
Have allergies? Skip the onion (fructose allergy) or the milk (lactose intolerance) and just add an
extra egg.
It’s great in lunches the next day for both the adults and the kids!!
Specials, tips and ideas!
School holidays are here and I have seen a lot of things to do for the kids that don’t cost any money, so it got
me thinking what really goes on during school time that is free for the smaller kids…… I found lots!!!
I started off in our local area. The shopping centres – specifically Werribee Plaza and Point Cook Town
Centre – offer a host of activities that are free over the school holidays. But Point Cook also holds events at
least once every second month on a Friday evening that are free. I went to the last Mums and Bubs night and
despite the cold there was lots of entertain for the kids, lots of stalls with information on local activities and
some bargain stalls selling food and clothing. Keep your eyes open for the next one, which is usually
advertised at the shopping centre and on their website. You can also check out their website for a number of
excellent special offers for the various retailers.
Yesterday I decided after under 1’s twins group that I would finally visit the library – after all its in the same
building! The staff there were extremely helpful and let me know about the free services they offer,
including Story Time (for 3-5 year olds), Rhyme Time (for under 3’s) and Baby time (for 3 to 12 months).
They also have a large range of school holiday activities available – check the library’s website for more
details.
While I was on my roll I thought I’d see what else was available to do at no cost. I picked up a copy of the
Point Cook Community Newsletter and found a range of activities from walking groups, to meditation, to
book clubs, chess clubs and computer courses. Each community centre has a newsletter of their own which
lists the local activities you can get involved in – some with modest costs involved. I recommend jumping on
the library’s website (you can access this via Wyndham City Council’s website) and signing up to receive them
via email – that way you always know what’s on and you don’t miss out. They release a new one each school
term.
Please check out what’s on in Wyndham for a range of other ideas of activities that are on this month.
If you have any suggestions or there’s something you would like me to look into please email me!
Kate
