Ever wonder what the difference is between mezcal and tequila? Tequila must be made within the borders of
Jalisco, while mezcal is primarliy made in Oaxaca. 100% of Tequila de Agave must be made using the blue agave
plant, while mezcal can be made from many other varities of agave. The most apparent difference comes from the
way the "piña", or the heart of the plant, is cooked. In tequila production, the heart is cooked in large ovens. The
traditional way to make mezcal is to dig a pit and fill it with hot rocks and fronds from the plant. This will roast
the hearts for days, creating that smoky and earthy flavor mezcal is known for.

Graves
From a region traditionally known for red wines comes
a white blend of sauvignon blanc and semillon in true
French style. The gravel soil the region is named for creates
a fresh minerality and adds flavors of riverstone and
citrus. The acidity in this bottle is best when paired with
green apple and goat cheese; ask your server for a cheese
and chocolate board with these items.

Shatter Grenache
Tavel has created a standard for rosé wine across
Europe. This is not what most Americans know as rose
wine. This Grenache and Cinsault blend creates a dry
and earthy character.
Joseph Drouhin Chardonnay
In a golden yellow color with hints of green, the Pinot Gris
offers a bouquet of ripe fruit and fruit compote, fully in
harmony with notes of apricot and honey. On the palate
the wine is soft, blended and fleshy with a very slight
roundness. The finish is vinous and fresh, well-balanced
and pure. A wine that is quite ready to taste, which will
mature well over the next four to five years.
