Welcome to
the Bibendum
Spirits, Beer, Cider
and Sake List
We’ve included spirits and beer in our annual wine
list for several years now, adding sake in 2014, but this
is our first list dedicated to our spirits service.
This list focuses on all the non-wine products in our
range, not just our exclusive agencies, and shows just how
diverse and comprehensive our portfolio is. Wine will
always be of central importance to Bibendum, but we are
very proud that we now offer a huge amount more.
If you think of Bibendum as purely a wine supplier, then I hope
this list will change your mind and show that we can help you
create an amazing, engaging spirits, beer and sake offer too.

Introducing Bibendum
Bibendum Wine Ltd is the UK’s most successful
independent drinks business. We were founded
back in 1982 and are still based in the same
north London art-deco garage where it all began
as a ‘stack it high and sell it higher’ fine wine
warehouse. Many of the business’ founders are
still here and we remain privately owned.
Today, we sell a huge range of drinks to an ever
increasing range of customers from Michelinstarred restaurants to independent pubs; and from
international sporting venues to independent
wine shops. We may have started out as a wine
merchant, but added spirits to our range in 2007,
cider in 2012 and sake and craft beer in 2014.
We’ve changed a lot since those early days. We
started selling to the On Trade in 1985 and the Off
Trade in 1992. The shop closed its doors for the last
time in 1999 and in 2013 we became wholly tradefocused when we sold our private client business.
If you are looking for a drinks supplier with a
difference, a partner that will make the effort to
understand your needs and work hard to grow
your profits, then give us a call on 0845 263 6924.
We’d love to hear from you.

REYKA
Reyka Vodka 70cl
Embodying the spirit of British ingenuity is Chase. Where
others saw potato fields and apple orchards, William Chase saw
opportunity. Sick of seeing his potatoes treated as a commodity,
Chase forayed into making crisps, but then found his true
calling when he started making an award winning vodka and
a unique gin. In 2010 his vodka was voted the “World’s Best
Vodka” at the San Francisco Spirits Competition. Not bad for
potatoes that could have ended up in the supermarket aisle.
The Marmalade Vodka is exactly what it sounds like. Steeped
in Seville orange marmalade and then distilled through
orange peel, it’s all natural and all good. One part Marmalade
Vodka, 3 parts ginger beer a dash of Angostura Bitters and a
squeeze of lime gives you a fantastic Marmalade Mule.
At a time when smoked foods are all the rage comes the Oak
Smoked Vodka. Water is allowed to sit in a cool part of Chase’s
smokehouse for five days to pick up a delicate smoky flavour, and
is then blended with Chase vodka. We’d go for a Smoked Martini
with this: two parts dry vermouth and one part smoked vodka,
served in a chilled martini glass, garnished with grapefruit zest.

BELVEDERE UNFILTERED
Belvedere has made quite a splash since its launch in 1993,
proving that high end vodka can be made in Poland using
traditional ingredients.
The single-estate Dankowksie Diamond rye grain that goes
into Belvedere Unfiltered is good enough to be used in artisan
bakeries (not something that can be said for all the grain used
to make vodka). Grown in Mazovia, the area’s soil means the
rye has a low starch content, which is perfect for retaining the
spicy rye character throughout the distillation process.
The reason the vast majority of vodkas are filtered is to keep
the flavours as simple and neutral as possible, but having
gone to such lengths to keep the rye character, it would
have been sacrilege for Belvedere to strip it all away prior
to bottling. Our favourite serve uses it to replace gin in a
Negroni, adding a subtle layer of smoke and spice.

ABSOLUT
ABSOLUT ELYX
Artisan vodka is not a phrase that you hear particularly often, but
that is exactly what Absolut Elyx is. The single-estate wheat is
grown a mere 25km away from the distillery and the production
team uses an old copper still that dates back to 1921. In those
days there was no other way to work than by hand, and that’s
exactly how Head Distiller Krister Asplund works today. During
production, Krister and his team control everything by hand, using
their eyes, ears and experience to ensure a high quality result.
In Krister’s mind, there is no better way to create a vodka with real
character and presence in the glass. Sometimes, the old ways are the best.
The flavours are so pure, all Absolut Elyx needs is a few chunks
of ice and a star anise garnish. However, if you really want to get
creative, stir equal parts Absolut Elyx, Lillet Blanc and Beefeater 24
and strain into a coupette for a brilliant take on a Vesper Martini.

CRYSTAL HEAD
Dan Aykroyd, of Ghostbusters fame, is the brains behind the
vodka with one of the most unusual bottles you’ll ever lay eyes
upon. Crystal Head Vodka uses the highest quality sweetcorn
and the glacial waters of Newfoundland, Canada. It is quadruple
distilled and filtered seven times, three of them through Herkimer
Diamonds. Luckily, all of this means the taste is superb. When
sipped, Crystal Head leaves a smooth, creamy mouthfeel with very
subtle citrus and aniseed notes it’s also completely additive free.
For a serve that’s guaranteed to get customers talking, try the
Crystal Blood Skull; shake in batches 150ml Crystal Head Vodka,
75ml Cherry Heering Liqueur, 75ml Monin Morello Cherry Syrup,
75ml lemon juice and 225ml cranberry juice. Funnel the liquid back
into an empty Crystal Head Vodka skull. Add a fresh red rose to the
bottle and serve alongside 5 rocks glasses filled with cubed ice.

TITO’S
In 1995, Tito Beveridge (that’s his real name, honest) was an
ex-oil industry geologist and geophysicist who had an idea to
build his own micro-distillery, incorporating the boutique winery
concept into the spirits industry. He acquired the first legal
permit to distil in Texas and put his life savings into it, racking
up 19 credit cards to build his own stills and condensers. Tito still
makes his vodka by hand on the same land where he started it
all in Austin, Texas, and is proud to have a handcrafted brand.
We like to think they take their drinks bold and large in Texas
and this serve is exactly that. Put 50ml of Tito’s together with
10ml fresh lime juice in a tall glass with plenty of ice. Top up
with ginger beer and you’ve got yourself a Tito’s Kickin’ Mule.
STOLICHNAYA
The wheat farms of Tambov, Russia are also the home to
Talvis, the ultra-modern distillery where Stolichnaya is made.
Triple distilled to retain its subtle wheat flavour, this is a
smooth, pure vodka with an elegant taste. The smoothness
comes from being filtered through Russian birch charcoal,
which removes the impurities without sacrificing taste.
Stolichnaya pioneered the whole flavoured vodka category, but we
think the original is the best of the bunch. This year, it’s all about
the simple serves with Stolichnaya: 2 parts Stolichnaya original,
1 part fresh lemon juice, 1 part simple syrup and 2 parts water
makes a Stolichnaya Original Lemonade. Simply build in an ice
filled Mason jar and stir. A simple, straightforward refreshment.

The Cambridge Distillery isn’t your average gin producer. The
heart of the business is making bespoke gins for private clients
(if you want your very own gin, this is the place to visit) using a
handful of seasonal creations based on botanicals that Master
Distiller Will Lowe can forage around his Cambridge home. Each
batch is cold-distilled under vacuum. This process is so arduous
and technical that only fifty litres can be made at a time.
41HOX01SGIN
Will’s Japanese Gin marks another departure from the
ordinary. A juniper based meeting of East and West, the
Japanese Gin blends distillates of sesame, yuzu peel and
shiso with the traditional notes of a classic London Dry.

Now, you could change your G&Ts forever with Japanese Gin.
You could even drink it neat in a very dry martini. However, a
Japanese Blossom, developed by Will himself, brings out the
most interesting flavours in the gin: take 50ml Japanese Gin,
15ml Yuzu-shu sake, 10ml lime juice, 20ml sugar syrup and
shake over ice. Serve in a martini glass with an apple fan.
CHASE GB GIN
Gin is booming in the UK and the vast majority are made from a
neutral grain spirit redistilled with a novel combination of botanicals.
Chase, however, likes to do things a bit differently by starting out
with cider apples.
The apples are mashed, fermented and then distilled to create the
company’s Naked Chase Apple Vodka. The vodka is then infused with
eleven carefully considered wild botanicals and naturally pure water
taken from the aquifer running underneath the farm’s orchard. This
produces a full-bodied, sharp gin with a kick of fruit on the finish.
Chase recommends making a Sweet Martini with the GB gin.
Stir equal parts gin and sweet vermouth, strain into a martini
glass and garnish with a thin slice of apple (a proper, English
native variety, obviously).

MARTIN MILLER’S
A decade or so ago, gin wasn’t the all encompassing spirit of the
times, stirring previously untapped emotions in bartenders across the
country. Instead, it was the dull pastime of an undiscerning, ageing
demographic that was routinely served up in a Paris goblet with
draft tonic, a solo cube of ice and a three-day-old slice of lemon.
It was just such a G&T that prompted bon viveur Martin Miller to do
something about it. With his partners, David Bromige and Andreas
Versteegh, Miller set about making a proper gin that delivered a
flavoursome kick to a glass of tonic and made a palate-sharpening
pre-dinner martini. The result helped kick-start a renewed interest
in high quality gin – an interest that has been booming ever since.
Martin Miller’s uses just 10 botanicals but less is more and the
quality of each is second to none. The earthier botanicals are
distilled separately from the citrus ones to maintain a clarity
and complexity of flavour in the final blend and the use of pure
Icelandic glacial spring water ensures a distinct, soft mouthfeel.
For a much improved G&T, take 50ml of Martin Miller’s, top with
Fever-Tree tonic and garnish with strawberry slices and black pepper.

The legacy of Charles Tanqueray is one of the most stylish and
recognisable bottles around. The former minister of God used
to distil his gin in Bloomsbury Square, back in the 1830s when
London was last a hotbed of gin production and drinking.
Unfortunately, virtually all the original distilling equipment was
destroyed during the Blitz. Fortunately, the Old Tom Still survived
and it’s still used to make Tanqueray today. The entire list of
botanicals used may be a closely guarded secret, but coriander,
grapefruit and, of course, juniper, are the key ingredients.
Tanqueray has always positioned itself as the go-to gin for cocktail
aficionados, and the distinctive bottles take their inspiration from early
cocktail shakers. Its signature serve is pretty straightforward: 50ml of
Tanqueray over loads of ice in a large wine glass. Add tonic and a wedge
of lime. If the thought of that doesn’t make you thirsty, nothing will.

RUM
BACARDI
The Bacardi family history and the history of rum have been
inextricably linked for the past hundred and fifty years, and Facundo
Bacardí Massó, a Catalan wine merchant who emigrated to Cuba
in 1830, is rightly acclaimed as the man who turned rum from a
rustic country spirit into a drink that could conquer the world.
Facundo tamed the local firewater by isolating a particular strain
of yeast that the company still uses today, alongside his pioneering
methods of oak ageing and charcoal filtering. The classic Bacardi
white rum was his creation and the first of its type ever produced.

Since those early days, Bacardi’s colourful history has featured war,
revolution and exile, but the one constant has been the quality of the
rum. It has been the original rum for more classic cocktails than any
other, including the Cuba Libre and the Daiquiri, and it has charmed
many a famous drinker, including the hard drinking rum evangelist
Ernest Hemingway who name-checked the brand in his novels.

HAVANA CLUB SELECCION DE MAESTROS
Havana Club is perhaps Cuba’s most famous export, taking its name
and inspiration from a capital city that lives, drinks and breathes rum.
Its history stretches back to 1878 and since the 1960s has been run
in partnership with the Cuban government to ensure that the old
traditions are maintained. The company uses what are claimed
to be the world’s slowest column stills, which produce lighter,
more elegant rums than those from other Caribbean islands.
Every step of production is overseen by a maestro ronero (or
master rum-maker). Becoming a maestro ronero is not easy;
it takes fifteen years of training to earn the title and tradition
dictates that you leave your best barrels behind for future
generations to enjoy and use creatively in the future.
Havana Club’s Seleccion de Maestros is made by blending
a selection of special barrels all declared superb by maestro
roneros past and present. It represents the pinnacle of Cuban
rum-making: golden, smooth, sweet and full of finesse. Fantastic
when sipped on its own, it also makes an excellent El Presidente:
50ml Havana Club Seleccion de Maestros, 25ml Lillet Blanc and
10ml Pierre Ferrand Dry Orange Curacao shaken with ice and
strained into a martini glass. Garnish with a twist of orange.

Alexandre Gabriel is a brilliant entrepreneur and a passionate advocate
for exceptional rum. The driving force and now owner of Cognac Pierre
Ferrand, Alexandre started trading with Caribbean distilleries when he sold
them used Cognac barrels to age their rum. On his travels, he discovered
tiny quantities of exceptional rum that were usually kept back for private
consumption, or blended with larger batches to add a drop of character.
He decided to start buying them barrel by barrel, shipping the casks back
to Ferrand’s Chateau de Bonbonnet for further ageing in France prior to
bottling. The range now includes vintage rums from many different islands
as well as several blends, including Plantation 3 Stars - an exceptional
white rum sourced from the three best rum islands in the region.
Trinidadian rum provides an elegant base; Bajan rum adds fruit, spice and
richness, and a healthy splash of 12-year-old Jamaican rum adds real depth
and complexity. This flavoursome spirit with a hint of dryness makes the
best Daiquiri on the planet – and it’s still smooth enough to sip neat!

PUSSER’S RUM
Pusser’s, the original navy rum, is exactly what it says on the
label. In the early 18th century, when Britannia ruled the waves,
sailors were rationed half a pint of rum per day which they drank
neat. It may be a surprise for some readers to learn that, although
the quantity was reduced over the years, the rum ration was
only abolished by the Royal Navy in 1970 in what was probably
the first recorded instance of “health and safety gone mad.”
This event is commemorated on 30th July as Black Tot day.
One man wasn’t too happy about this. Charles Tobias, entrepreneur
and sailor, wanted to resurrect the great history associated with this
navy rum. He obtained the rights and blending information from
the Admiralty and set up a distillery on the British Virgin Islands.
Distilled with pot stills in much the same way as single malt Scotch
whisky, Pusser’s Rum is a complex spirit that can add a whole lot of
flavour and depth to cocktails and can also be enjoyed on its own.
If you need some relief, Pusser’s Painkiller is the cocktail for you.
Take 50ml Pusser’s Rum, 100ml pineapple juice, 25ml orange juice,
25ml cream of coconut and pour back and forth into an ice filled
glass. Grate some nutmeg on top and enjoy some tropical medicine.

THE KRAKEN
This fearsome looking Caribbean spiced rum has captured the imagination
of bartenders across the country. Aside from its unique look, which
positively oozes style, The Kraken is made with a proprietary blend of
spices that make it much more than just another spiced rum. Fourteen
spices, including cinnamon, clove and ginger, go into each batch. The
batches are aged for up to two years in old bourbon barrels, which help
give it the colour and smooth flavour character the Kraken is known for.
Like all good rum, it doesn’t need to be buried under flavours when it comes
to cocktails. It’s best to keep it simple: ginger beer, a squeeze of lime and
a lime wedge to garnish, and you’ve got a Perfect Storm on your hands.

Abelha Cachaca starts life in Bahia, Northern Brazil, where a
collective of small-holding farmers grow sugar cane 100% organically
on highland sandy soils. The cane is processed within 24 hours of
being cut to ensure freshness and is then fermented using natural
yeast from the farm. The cachaca is distilled in small batches in a
traditional copper still and rests for 6 six months in steel tanks. It is
then cut with water from a deep natural aquifer that lies under the
farm. The result is a naturally full-flavoured, well-balanced cachaca;
perfect for making caipirinhas, the national cocktail of Brazil.
The Responsible Trading Company (RTC), which produces Abelha
Cachaca, likes to do things the responsible way, and has developed
fair partnerships with small holding farmers. RTC has all the organic
know-how to help these farmers grow sugar cane responsibly
and organically. The sugarcane farm workers are guaranteed a
fair price and a fair wage. Overall, this makes for happier farmers,
better quality sugar cane and a beautiful tasting cachaca.

CHIVAS REGAL
CHIVAS REGAL 18 YEAR OLD
The history begins in 1801: the year Thomas Jefferson became
President of the United States and the Chivas brothers opened their
eponymous grocery store in Aberdeen. The shop quickly became
the most famous in Scotland, winning a contract to supply Queen
Victoria at her Balmoral home in return for a prized Royal Warrant.
In the 1850s, the family began to market a proprietary blend of
whisky, which propelled the brand far beyond Scotland, and by
the time Prohibition was introduced in the US in 1921, Chivas was
already one of the biggest Scotch brands in America. By the 1950s,
it was the drink of choice for Frank Sinatra and the Rat Pack.
Chivas 18 Year Old was created by current Master Blender
Colin Scott, and launched in 1997. It sits happily between the
brand’s benchmark 12 Year Old and outstanding 25-year-old
whiskies. Based on malt from Chivas’ own Strathisla distillery,
but containing over twenty different malts, it is smooth, rich
and indulgent with toffee, dried fruit and chocolatey notes.
THE AVARICE
50ml Chivas Regal
25ml Apple juice
25ml Green tea syrup
22.5ml Fresh lemon juice
1 bar spoon Fresh puree ginger
Dash lemon bitters
5 Mint leaves (half a portion)
Pour all the ingredients into a cocktail shaker and fill with
ice. Shake and double strain into a Chivas Regal rinsed
coupette. Garnish with a lemon twist on the glass edge.

This award winning whisky is made by the oldest distiller in Japan,
Suntory. Created to complement the range of single malts already
made by Suntory, the Hibiki distillery concentrates on blended whisky.
Pure spring water and three types of oak – including casks
previously used for the Japanese plum liqueur, umeshu – are
the secret ingredients. It may be the new kid on the block
when it comes to Japanese whisky, but it is quickly acquiring
a strong following with whisky lovers around the world.
Sure, the purists will insist on sipping this slowly and neat
but we think this makes one hell of an Old Fashioned.

Created by distilling legend, Jess Graber, founder of Stranahan’s
Colorado Whiskey, Tincup is made from a unique blend of corn, malt

compared to other bourbons. Aged in new charred American white
oak barrels, it is bottled in Colorado using pure Rocky Mountain water.

The name Tincup honours Colorado’s first whiskey drinkers: the
pioneering, hardscrabble miners of the mid-19th century who sought
their fortunes during the state’s gold rush and drank their whiskey
from, yes, tin cups. Tincup, the brand, salutes this heritage with a
tin cup bottle closure that can be used for sipping and sharing.
Jess drinks it straight up. So should you.
43

41GLEK03SWHY
Every single malt distillery has its own claim to fame, and many
argue they make the smoothest dram this side of John O’ Groats.
Only Auchentoshan, however, distils its whisky three time to
ensure their malt is as subtle, refined and elegant as possible.
In classic soft-and-spicy lowlander style, Auchentoshan uses a
mixture of bourbon and oloroso sherry casks to mature its spirit.
The flagship 12 Year Old is all toasted almonds, caramelised
toffee and dried orange on the nose with a gingery kick of
spice on the finish. It’s perfect sipped on its own or with the
merest dash of water, but if you really can’t keep your hands
off the vermouth bottle then it makes a brilliant Rob Roy.
27
GLENMORANGIE SIGNET
The Glenmorangie Signet is one of the richest and most unusual
malts around. It is made by combining some of the distillery’s
oldest whiskies, distilled over thirty years ago when malting
still occurred on site, with younger whiskies made using
chocolate malt and bespoke American white oak casks.
More often used in beer brewing than whisky making, chocolate malt
is barley that has been very heavily roasted until it is a rich, dark
brown, and tastes like a coffee bean when you bite into it. Despite
being used for only around a quarter of the Signet blend, it adds
an explosive spicy, sweetness and notes of mocha, bitter chocolate
and roasted nuts to the traditional smooth Glenmorangie style.

ISLE OF JURA
When it comes to distilling whisky, size matters. The small
size and unique shape of the stills at the Macallan distillery are
designed to maximise the contact between copper and spirit.
This concentrates the ‘new make’ more than any other distillery
and gives it the rich, viscous fruity character that The Macallan
is known for. This Speyside distillery selects only 16% of the
final distillation to be worthy of ageing, one of the smallest in
the industry. Named after the year The Macallan was founded,
the 1824 series marks a style of whisky that gains its colour
entirely from the sherry casks that are used for maturation.
Serve the Macallan 1824 on the rocks or with a drop of water to
release the delicate aromas. However for something a bit punchier,
an Apricot Whisky Sour is the order of the day: 50ml Macallan
1824, 10ml apricot liqueur, 25ml lemon juice, 10ml sugar syrup,
2 dashes orange bitters and an egg white should be dry shaken
for 10 seconds. Add ice to the shaker and shake again. Strain
into an old-fashioned glass and garnish with lemon zest.

ARDBEG
If you want a whisky with peaty flavours, there’s no sense in
doing things by halves. Ardbeg contains some of the highest peat
concentrations of any Scotch whisky, but that doesn’t mean it is all
peat and no substance. The distillery uses the super soft water of
the Uigeadail (pronounced Oog-a-dal) loch as well as a mixture of
seasoned bourbon barrels and old sherry butts. The results are complex
and rich, with the natural sweetness of the malt balancing the smoky
peat notes perfectly. It hasn’t always been plain sailing for Ardbeg.
The distillery closed for a time in the early twentieth century but since
the latest reopening has won World Whisky of the Year three times.

HAIG
With its roots in the early seventeenth century, Haig has a
richer history than most Scotch whisky distilleries. That’s saying
something, given the rich history of whisky in Scotland. We have
John Haig to thank for pioneering continuous stills which are used
for producing single grain whisky. At the time it was revolutionary;
suddenly Haig could produce better whisky more often.
Now the distillery has the capacity to produce thirty million litres
of whisky a year. In addition to all this history, the fact that David
Beckham and Simon Fuller are brand ambassadors also adds a
little star quality for your consumers. For a man once derided for
wearing questionable beach-wear, there’s no denying that whatever
Becks touches turns to gold. However, the quality of Haig Club
whisky doesn’t need much of a helping hand, with drinks bible
Difford’s Guide rating it as “excellent” in their 2014 tasting.

Bourbon
Buffalo Trace, so named for the migration plains of bison in the days of
the Wild West, is a classic bourbon, made from a mix of corn, rye and
malted barley aged in highly toasted, new American oak for eight years.
The name Buffalo Trace may only have graced labels since 1999,
but the distillery the brand comes from has a heritage stretching
back to the very early days of the US and the founding of Kentucky
as the fifteenth state in the Union. There’s been a house on the
distillery site beside the Kentucky River since 1792, a whiskey
warehouse since 1811 and a distillery since 1858. The company
even managed to survive the Prohibition era intact, winning a
licence to make whiskey for ‘medicinal purposes.’ This rich history
and its contribution to the Kentucky culture was recognised when
the distillery became a National Historic Landmark in 2013.
BULLEIT BOURBON
The grain that goes into whiskey is all important; change the mix
of grains and you will change the flavour of the finished spirit.
Bulleit has a particularly high rye content for a bourbon (28%)
which means a bold, spicy character and a smooth, clean finish.

The story behind the brand begins way back in the 1830s when
Louisville Innkeeper Augustus Bulleit made his own Bourbon, only to
disappear without trace a few years later when travelling to a market
in New Orleans. Jump forward in time to 1987 and Tom Bulleit decides
to give up a law career and follow in his great-great-grandfather’s
footsteps, inspired by the old family recipe. Distilled and aged in
small batches and made using limestone-filtered water and the
finest American oak barrels, it is a superb addition to any back bar.

JIM BEAM
In 1787, Jacob Böhm arrived in the wild, lush bluegrass
hills of Kentucky armed only with a copper pot still, a good
knowledge of farming and distilling, and one heck of a work
ethic. Jacob changed the family name to Beam and settled in
Kentucky, in part because of its clean, iron-free, calcium-rich
water. Before long, he had developed a whiskey recipe using
indigenous corn, and an American dynasty had begun.
Not content with building a dynasty for Kentucky bourbon, Jim
Beam has led the way when it comes to innovation in the category.
The company recently developed Jim Beam Honey to give a
soft, sweet finish to Jim Beam that’s ideal for giving body and
sweetness to cocktails. If that isn’t enough, Red Stag has been
developed to appeal to a new generation of bourbon drinkers. It’s
the result of a careful infusion of Jim Beam whiskey and natural
black cherry – and it makes a brilliant twist on a Manhattan.

HINE
Hine has worked to keep things in the family since the company
was founded in the eighteenth century. It all began when
Thomas Hine Jr was sent to France by his father - a brandyloving, Dorset-based linen merchant - to learn about the Cognac
business. Thomas liked it so much he decided to stay, marrying
Elisabeth, the daughter of a local Cognac merchant, in 1796.
Thomas built up the business by trading with English merchants
and when his father-in-law died, he inherited the business
ahead of Elisabeth’s brothers. In 1812, he changed the name
of the business to his own and it has remained a Hine family
business ever since, passing down through six generations.
Hine’s exceptional eaux-de-vie is distilled from grapes from Grande
Champagne and Petite Champagne, the two finest regions for
growing grapes destined for Cognac. Each Hine Cognac is distilled
on the fine lees, which impart extra texture and complexity. Both
H by Hine and Rare VSOP are aged for much longer than the
legal minimum, and that patience is rewarded in the bottle.
COURVOISIER VSOP
Founded by Emmanuel Courvoisier and Louis Gallois at the
beginning of the nineteenth century, this famous Cognac house
began as a wine and spirits merchant in Paris. The two gained a
reputation for shifting high quality spirits and were even visited by
Napoleon Bonaparte. In 1828 the company became known simply for
its brandy, so it closed the wines and spirits business and relocated
to Jarnac in the Charentes to focus on Cognac production.
Production starts with Ugni Blanc grapes grown in the Borderies,
Fins Bois and Champagne areas of France. Double distillation
and ageing in 200-year-old French oak barrels give Courvoisier
its distinct delicate floral character. An excellent after-dinner
drink, it also makes a brilliant aperitif Champagne cocktail: a shot
of Courvoisier VSOP, a Demerara sugar cube crushed, a dash
or two of bitters, all topped up with France’s finest bubbles.

41JAN01VSOP
Founded in 1765 by Irishman Richard Hennessy, Jas Hennessy &
Co. is one of the oldest of all Cognac houses. By 1870, it was already
famous for its VS and VSOP, but the then owner, Maurice Hennessy
had developed a taste for even older brandies and his friends were
constantly asking him for old bottles. What started as a limited edition
for a close group of drinking friends became a global phenomenon
as the fame of Maurice’s Extra Old, or XO, Cognac spread.
The formula has remained virtually unchanged since those
days. Eaux-de-vie between twelve and thirty years old are
aged in new barrels and blended into a rounded, rich spicy
Cognac. The Hennessy Tasting Committee has the final say
on which eaux-de-vie make it to the final blend; a qualitycontrol process that hasn’t changed since Maurice’s day.
PIERRE FERRAND
The modern history of Pierre Ferrand begins with a Parisian
business school assignment. Student Alexandre Gabriel was
given the task of visiting small French wine and spirits producers
to offer his new skills to help grow their businesses. When
Alexandre visited Pierre Ferrand he found an old, traditional
Cognac house with a library of outstanding brandies made in the
old, authentic way, but with no presence in the market place.
The Ambre is a brilliant place to start – mellow enough
to sip, but versatile enough to be used in cocktails.

Making cider in Somerset is nothing new. Cider brandy though is
more of a rarity, despite the fact that records suggest it has been
made in England since 1678.
Julian Temperley, the man behind the Somerset Cider Brandy
Company, had been making cider for years when he decided to
launch it to the public. In 1989 he won the UK’s first ever licence
to turn cider into brandy and has since earned Somerset Cider
Brandy an EU PGI (Protected Geographical Indication) putting
it alongside products like Parma Ham and Champagne.
Julian also produces Somerset Morello Cherries: Eau de Vie with
hints of almonds and the dryness which makes the morello so
attractive. These are great in cocktails or served with ice cream.

HUSH IT’S A SECRET

William Solorzano
Hush, London
1615 PISCO
It all started in 1615. That’s the year that first documents grapes being
used to make Pisco in Peru, and Bodega San Nicolas, producer of 1615
Pisco, can trace its vineyards right back to the seventeenth century.
The best Quebranta grapes have a high sugar content so, in the
case of 1615 Pisco at least, nothing is added during distillation.
Once distilled, it’s neither watered down nor clarified to ensure
every last drop of character and flavour gets into the bottle.
The good people at 1615 recommend a classic Pisco Sour as the best
way to enjoy it and as it is the national cocktail of Peru, who are we to
disagree? Take 50ml 1615 Pisco, 30ml lemon juice, 20ml sugar syrup
and an egg white and shake with ice. Strain into an old fashioned
glass then add 3 dashes of Angostura bitters and a plate of ceviche.
LUIGI FRANCOLI GRAPPA
Grappa production began as a way for thrifty winemakers to get
even more value from their grapes, by distilling the stalks and skins
into a fiery spirit that would add a bit of va-va-voom to a midmorning espresso. Over the years producers have started to take
it much more seriously, refining production and ageing methods
to turn grappa into one of the most exciting spirits around.
The Francoli family has been at the vanguard of this quality
revolution, pioneering smoother styles of grappa through oak ageing
and adding consumer interest by focusing on single-variety spirits.
The pure flavours of grappa make it a great addition to most cocktails
if you want to add depth and body. However, to really let it shine take
two parts Francoli Moscato de Piemonte grappa, one part lemon
juice and one part sugar syrup and enjoy your Moscato Sour.

OLMECA ALTOS
Created through collaboration between Master Distiller
Jesus Hernandez and the renowned bartenders Dre Masso
and the late, great Henry Besant, Olmeca Altos celebrates
the traditional, artisanal methods of tequila production.
The 500-year-old Tahona method of tequila production requires the
use of a two tonne millstone of Tezontle volcanic rock to crush the
cooked hearts, or pinas, of the blue agave plant. This creates a pulp, and
draws out the sweet juice that can be fermented and distilled. Modern
distilleries use a mechanical process to mimic the Tahona, but ask any
devotee of Olmeca Altos and they will tell you that the old way is the
only way to gently extract every drop of flavour from the pina. It’s a
long-winded, difficult and expensive process, but a proportion of Tahona
Juice makes it into the blend of every single Olmeca Altos tequila.
Keep the flavours simple with a 50ml of Olmeca Altos Reposado, a good
squeeze of lime and a dash of agave syrup. Shake and strain over ice.

JOSE CUERVO
Jose Cuervo Reserva de Familia Tequila 70cl
Jose Antonio de Cuervo y Valdes was the original tequila
producer. Having obtained land from the king of Spain
in 1758, he started a business that supplied the Spanish
royal family and which still bears his name today.
His descendants still run the distillery, which is the oldest
active distillery in Latin America, dating back to 1812, before
Mexican independence. Over the years, the Cuervo family was
the first to bottle tequila rather than sell it from barrels and
the first to export it beyond Mexico’s borders. It is no surprise
that they now sell more than any other tequila producer.
Jose Cuervo’s Tradicional Reposado is just that: a traditional
‘rested’ tequila. It gains its colour and smooth finish through
six months of barrel ageing. The best selling premium tequila
in Mexico, it shines in a classic Margarita: take 50ml Jose
Cuervo Tradicional, 20ml triple sec and 20ml lime juice
and shake, strain into a martini glass with a salt rim.

Kamm & Sons is the brainchild of former bartender and cocktail maestro,
Alex Kammerling, who spent five years perfecting the closely-guarded
secret formula. Launched in 2011, the only other people who know the
recipe are also called Kammerling: Alex’s father and his brother. The
family connection continues as the inspiration for the drink’s bittersweet
citrusy flavour, which comes from a herbal sweet that Alex’s late, greatgrandfather used to make in his confectioner’s factory in post-war Vienna.
Distilled in London and styled as the British Aperitif, Kamm & Sons is
a golden, bittersweet spirit made using 45 natural botanicals including
ginseng, fresh grapefruit peel and manuka honey. At 33% abv, it is
lighter than most spirits and incredibly versatile in mixed drinks. Alex
recommends adding bitter lemon, whilst here at Bibendum HQ we like
a not-too-long drink made with Fever-Tree tonic and orange bitters.
Described by Alex himself as the point in the middle of a hypothetical
venn diagram where Hendrick’s, Pimm’s and Campari would meet,
Kamm & Sons is a genuinely new, unique drink in a market dominated
by historic brands.

BAILEYS CHOCOLAT LUXE
The brief to Anthony Wilson and his intrepid team of drinks
engineers was very simple: make a drink that gives exactly the
same flavour and sensory experience as eating a piece of high
quality chocolate. The creative process was painstaking as
Anthony travelled across three continents and tried two hundred
varieties of chocolate, finally settling on a secret blend of Irish
whiskey, Belgian chocolate, cream and Madagascan vanilla. The
result is perfectly pitched for chocoholics with a rich attack,
velvety texture and subtle bitter cocoa finish. All that’s required
is a few ice cubes and perhaps a raspberry or two to garnish.

CHAMBORD
Inspired by a liqueur produced in the Loire valley during the late
seventeenth century, Chambord is one of the most recognisable
bottles on any back bar. Rare black raspberries, Madagascan
vanilla, honey and XO Cognac are just some of the ingredients
that go into the secret recipe, with the fruit’s natural tartness
adding a welcome freshness to the sweet, indulgent flavours.
The brand’s signature serve is the remarkably simple
Chambord Royale – just pour 15ml of Chambord into a
flute and top up with chilled Champagne or Prosecco.
Sometimes the simple ones are the best.
LA VIE EN ROSE
10ml Fiorente Elderflower Liqueur
40ml Tanqueray Gin
20 ml Cranberry juice
20ml Fresh lemon juice
3 slices Fresh cucumber
Pour ingredients into a cocktail shaker and fill with ice. Shake and
strain into a vintage martini glass. Top with rosé Champagne
and garnish with 2 rose petals.

Sofitel St. James, London
FIORENTE ELDERFLOWER LIQUEUR
Made using wild Italian elderflowers, Fiorente is vibrant in
colour and delightfully floral with a fresh taste. This beautiful
liqueur is produced by the experts at Francoli Distillery,
whose family has been handcrafting spirits since 1875.
Designed to make the perfectly balanced aperitivo, it has a lower sugar
content than other elderflower liqueurs in the market. The addition
of lemon peel and mint in the infusion gives it a clean, zesty finish.
Fiorente comes into its own when mixed with Prosecco. Fill a
wine glass with ice, add 25ml Fiorente Elderflower Liqueur, 50ml
Prosecco and 50ml soda water. Squeeze in the juice of two lime
wedges and stir in 5 fresh mint leaves. Garnish with a mint sprig.
That’s how you make a deliciously refreshing Fiorente Spritz.

The Laraha oranges which give curacao its distinct orange aroma were
discovered by happy accident. The first orange trees were planted
on the island of Curacao by Spanish settlers eager to bring sweet
oranges from their homeland to new shores. However, once the trees
bore fruit the oranges were bitter and unpalatable. Left to grow wild,
it wasn’t until hundreds of years later that a use for these oranges was
found: the sun-dried peel was found to produce an elegant perfume.
Fast forward a few decades and Alexandre Gabriel, master
distiller and proprietor of Cognac Pierre Ferrand, discovered
an old recipe for curacao. He decided to resurrect it using his
award winning Cognac as the base. A blend of Pierre Ferrand
Cognac, un-aged brandy, sugar and of course the famous
oranges makes this the most exciting curacao in the business.
It is complex enough to enjoy on the rocks with a twist of orange
zest. But don’t underestimate its mixing potential – when mixed with
Alexandre’s own Plantation Rum it makes a sensational Mai Tai.
JAGERMEISTER
The Jagermeister stag is pretty recognisable on back bars around
the world, but few people know that it is taken from the legend of St
Hubertus. Hubertus was an uncivilised and unscrupulous hunter,
driven only by the desire to kill. Until one day when, in the depths of
the forest, he was approached by a great white stag with a gleaming
crucifix between its antlers. Hubertus recognised with reverence that it
was a sign from God. Today, St Hubertus is the patron saint of hunters.
The founder of Jagermeister, Curt Mast, was himself a keen hunter
and he looked to Hubert’s deer to sum up his love of nature and the
many natural botanicals that went into the bitter, herbaceous liqueur he
believed was the perfect toast for hunters returning from a day’s sport.
The secret recipe includes some 56 different herbs, spices, roots and fruits
and it is aged for a year in local Pfalz oak barrels before being bottled.
An ice cold shot is the ideal serve for Jagermeister, allowing
a pure, clean hit of bittersweet flavour. For a long serve,
try ‘Root 56’; Jagermeister and ginger beer with a squeeze
of fresh lime, garnished with a slice of cucumber.

OPAL NERA
Fratelli Francoli has made its name by making classic Italian liqueurs
from natural ingredients. Opal Nera 38% is made according to a
family recipe and is based on a seafaring legend about a black
opal, a long lost lover and an exotic, jet black liqueur. Opal is made
from a blend of natural botanicals, including elderflowers (which
are known as ‘fiori di sambuco’ in Italian), elderberries, Sicilian
lemons, orange flowers, and liquorice, all individually infused.
Opal Sambuca 38% is a rich liqueur made using high
quality sugar which gives it a sweet and velvety finish. The
natural botanicals most prominent on the palate are star
anise, green anise, Sicilian lemons and elderflowers.

THE BITTER TRUTH
The Bitter Truth range of bitters and liqueurs was established by
passionate former bartenders, Stephan Berg and Alexander Hauck,
with the intention of supplying bar aficionados with cocktail
bitters and liqueurs that have not been seen for over a century.
Both men gained experience making bitters by working as bartenders
themselves and making small batches of cocktail bitters for the
bars they represented. For years Stephan has been collecting
ancient cocktail books and authentic bitters recipes from the late
19th and early 20th centuries. These formed the inspiration for
their first bitter flavours. Alexander, who is also a graphic designer,
then created the distinctive look and feel of the packaging.
The bitters are specifically designed for recreating classic drinks
true to the old original recipes, or for experimentation with modern
cocktail creations. The range includes some timeless classics, such
as Orange Bitters and Jerry Thomas’ Own Decanter Bitters, but
also more innovative flavours such as the Lemon Bitters. Add just a
couple of drops to give an intense burst of citrus to a dry martini.

Founded in 1872 by Raymond and Paul Lillet in Podensac
just outside Sauternes, Lillet produces excellent, and
increasingly fashionable, aperitifs based on Bordeaux wines.
Both the white and rosé are based on the Semillon grape.
The actual recipes are closely guarded secrets, but they are a
subtle blend of 85% selected wines and 15% liqueurs, the latter
being made by macerating each botanical – including Haitian
bitter oranges and Peruvian quinine – in alcohol. The final blend
is then aged in oak barrels for several months prior to bottling.
The Bordelais serve Lillet on ice as an aperitif, but the British
secret service prefers a Vesper Martini, as described by Ian
Fleming’s James Bond in the original Casino Royale novel:
“Three measures of Gordon’s, one of vodka, half a measure
of Kina Lillet. Shake it very well until it’s ice-cold, then add
a large thin slice of lemon peel. Got it?” “Yes Mr Bond”.

This small family-run company had to completely rebuild the brewery
after it was severely damaged by the Nobi earthquake in 1891. Its main
brand, Daruma Masamune, takes its name from Japanese Daruma
dolls. These dolls are modelled after the founder of the Zen sect of
Buddhism and are traditional symbols of perseverance and good luck.
You can see an image of the dolls on the labels as pictured above
The family specialises in making Koshu (aged sake) and uses brewing
methods that date back over 800 years to the Kamakura era. Koshu
was the preferred drink of the privileged elite during this period.

FEVER-TREE
When it comes to brand stories, the truth is often finessed in
order to highlight the journey the founders went on. In the case
of Fever-Tree, no such exaggeration is required. Founders Charles
Rolls and Tim Warrillow went to the ends of the earth to find the
best ingredients for their tonic water. In 2004 this led them to
a plantation in the Democratic Republic of Congo. Here, deep
in the heart of central Africa, they found the purest source of
quinine on the planet. After further chance encounters involving
several trips around the world, they developed the tonic water
that catapulted their product into many of the globe’s top bars.
Each product in the range is created with the finest natural
ingredients sourced from the best growers, wherever in the
world they might be. No journey is too far or too daunting.
From ginger grown on the Ivory Coast to lemon thyme from
Provence, these intrepid soft drink explorers will stop at nothing
in their pursuit of perfection. As Fever-Tree says, if three-quarters
of your drink is the mixer, make sure you use the best.

BREWDOG
BrewDog is a modern brewing phenomenon. In seven years, the
company has gone from a two man band selling microbrews
out of the back of a van, to a global brand with bars stretching
from Stockholm to Sao Paolo. Along the way, there has been
beer packaged in taxidermied road kill; world record strength
brews; a funeral for boring, generic beer; and a rise in shareholder
numbers from 2 to over 14,000 thanks to BrewDog’s innovative
crowd-sourced investment platform, Equity for Punks.
That sort of growth and expansion would have been the death knell
for many brands as corporate common sense tends to replace the
anarchic spirit the business was based on. Not so for BrewDog.
Driven by a passion for attention-grabbing, flavour-packed beer,
and backed by the sassiest marketing in the category, BrewDog
has managed to become that rarest of beasts: a business that is
both critically acclaimed and commercially very successful.
All beers, ciders and RTDs come in

Housed in a small corner of the main brewery, and just a
stone’s throw from Cardiff’s Millennium Stadium, Brains Craft
Brewery is a hotbed of energy and creativity. The brewing team,
headed by Bill Dobson, are given free rein to produce whatever
takes their fancy, and love teaming up with guest brewers.
Collaborators have included beer writers Adrian Tierney-Hones,
Pete Brown, Sophie Atherton, Des de Moor and Glenn Payne.
We are listing three of the Brains Craft Brewery range in bottles:
Barry Island IPA, an homage to the great American IPAs; the
sweet and spicy Bragging Rights which honours the ancient
Welsh beer style ‘bragawd’; and Atlantic White, a mash up of
a Belgian style ‘wit’ beer with US hops. To our minds, Brains’
craft beers are the best Welsh export since Tom Jones.
Head Brewer Shane O’Beirne loves to tinker with established
recipes and styles and does so with the kind of panache and
verve that makes you want to try all his creations. His infectious
enthusiasm has led to the creation of an ever changing range
of beers, taking inspiration from every corner of the world.
So far, only two of his beers have made it into bottles and both
are exclusive to Bibendum. The Monocle is an awesome twist
on the established hopped-to-the-max craft IPA style, only it
uses classic English hops rather than the Johnny-come-lately
American varieties. The Silvertip is Shane’s ‘New Zealand Pale
Ale’, brewed in the West Country using Nelson Sauvin hops –
so named because of their Sauvignon Blanc-esque aromas.

1936 BIERE
1936 Biere is a cracking, clean-as-a-whistle lager
that is set to take the UK by storm. Sourced
from the Swiss Alps, this beer is made from
Swiss hops & barley grown at high altitude,
water that takes twenty-five years to filter
its way through the Alps - and that’s it.
Justifiably proud of the raw ingredients that go
into the beer, the brewers then keep it simple
with no artificial preservatives or additives
added at any point. The end result is a rich,
thirst-quenching lager that is quickly acquiring
a cult following among beer drinkers.

PORTOBELLO
LONDON PILSNER
All the way from West London, the Portobello
Brewing Company is the largest capacity
brewery in the area since the Whitbread
closed Notting Hill Brewery way back in 1922.
The Portobello range has found its way into
bars across the Capital since its foundation.
A brewery that’s unafraid to experiment with
different hops and malts, it’s struck gold with
the Portobello Pilsner – to date the only one
of the brewery’s range to be sold in bottle.
Unashamedly based on a classic Germanic
style, it uses the best quality imported
Pilsner malt and Portobello’s own blend
of German and Czech hops. Long, cold
fermentation and maturation, with specially
selected yeast, achieves the fully rounded
continental flavour. Chill and enjoy.
10 SAINTS
We love anyone who shakes up established ideas and the team
behind 10 Saints has done exactly that. Barrels that start life
ageing bourbon in America and rum in Barbados eventually end
up giving 10 Saints a rich flavour that is unique amongst lagers.
Barrel ageing is normally a process reserved for spirits and wine
as it’s incredibly difficult to balance the flavours. Luckily, 10
Saints is made by a madcap genius. Ian Herok, Master Brewer
and professor of brewing at Heriot-Watt University, is the man
responsible for making sure the oak doesn’t overpower the beer.
Named after the ten saint parishes on the tropical paradise of
Barbados, this is a beer that speaks volumes about the heritage of
the island. The result is a lager that tastes naturally rich ans isn’t
overly sweet, thanks mainly to that 90 day oak ageing process which
sets it apart from just about every other lager on the market.

Budweiser is a pretty familiar name in the world of beer, but jump
back in time to 1265 and the word simply referred to someone who
hailed from the newly created Czech town of Budweis. The local king,
Otakar II of Bohemia, granted all local burghers the right to brew beer
in return for paying their taxes. There was nothing unusual in this,
most Europeans of the time preferred drinking beer to risking their
lives drinking unsafe water, but what was unusual was the quality
of the Budweis beer. Something special was clearly happening.
Fast forward seven and a half centuries and something special is
still going on. Budvar is still brewed in the town and the recipe
hasn’t changed an awful lot since Otakar was on the throne: Saaz
hops from Zatec, ice age water from the brewery’s own well and
barley malt from Moravia are still used today. The only relative
newcomer to the process is the specific yeast strain used, having
only been selected 120 years ago. Each batch is brewed slowly
over 100 days, 90 of them spent fermenting, to ensure the end
product continues to match the company’s exacting standards.
Craft beer and new start-up microbreweries may be all
the rage but there is a lot to be said for a beer that has been
delighting drinkers for nearly seven and a half centuries.

JAKE’S ORCHARD CIDER
Richard Balfour-Lynn doesn’t do second best. His first project was
making wine on his beautiful estate, Hush Heath, on Kent’s High
Weald – and the Balfour Brut Rosé is now widely recognised as
one of England’s very best. His second project was making cider.
The vineyards on the estate sit side-by-side with old apple orchards,
and after a few years of producing apple juice, Richard asked his
winemaking team of Owen Elias and Victoria Ash to experiment
with cider-making.
Two aspects of the project set it aside from most other craft ciders:
the fruit and the people. The apples growing at Hush Heath are
traditional eating apples rather than cider apples: Bramley, Egremont
Russet and Cox - and they give a clean, fresh, crisp flavour to the
cider. Owen and Victoria are also winemakers by trade rather
than cider makers and they took a vinous approach to production,
fermenting the apples at cool temperatures in stainless steel tanks.
The sparkling ciders even undergo a second fermentation in the
bottle, according to the traditional method used for Champagne
production. The end result is a cider for wine lovers: delicate,
refreshing and long with a crisp bite of apple on the mid-palate.
They make a delicious and refreshing lower alcohol alternative to
wine: brilliant with food or simply savoured on their own aperitif-style.
