Festival of India Khana Pakana Competition – August 19th, 2012 at 11.00 AM Location: IACA Grounds – 1281 Cooper Lake Rd, Smyrna GA 30082 IACA website: IACA Face Book page: http://www.iacaatl.org/ http://www.facebook.com/groups/iacaatl/ FORMAT The Khana Pakana competition will be held at 11am on August 19th, 2012 at IACA. The competition consists of 3 rounds: appetizer, entrée and desert All Khana Pakana will be done on electric burners All Chefs who have mailed in their entry forms along with payment are eligible to take part Entry form is at the end of this document Round 1: Each chef will be provided with a basket of mystery ingredients as well as a well-stocked general pantry. Once the timer begins, the chefs will have 20 minutes to prepare an appetizer using all of the mystery ingredients. Each chef must have a completed plate, at the end of the round, only what is on the plate will be judged Judges will be given 5 minutes to select the best items (chefs) that make it to round 2. Only selected chefs will participate in round 2 (number depends on total entries). Round 2: Chefs will be given another basket of ingredients and 30 minutes to complete an entrée using all of the mystery ingredients. After the entrée judging, the final 3 will be selected Judges will be given 10 minutes to select the best items (chefs) that make it to round 3. Festival of India Khana Pakana Competition – August 19th, 2012 at 11.00 AM Round 3: The final 3 chefs will then be given their final basket of mystery ingredients and 20 minutes to prepare a dessert using all their mystery ingredients. After judging, the winner of the competition will be announced. Two runners up will also be selected. COOKING RULES Each dish must contain all of the mystery ingredients (all ingredients must be used; but not necessarily all of it.. as an e.g. if you are given besan and onions; you don’t have to use all the given besan, but you have to use it at least a little bit in your preparation) Chefs can use any of the extra ingredients provided in the pantry, but are not allowed to bring any of their own ingredients Chefs must use only equipment provided by IACA, like vessel, ladle; however they may bring their personal knives, an apron, towel, etc Each chef must complete three plates in the allotted time The plates completed at the sound of the buzzer will be judged External help from non contestants will disqualify a chef from continuing to participate in the contest Each participant is responsible for their own safety. IACA is not responsible for any injuries and/or damages caused either by the contestant themselves or other participants or any other circumstances. IACA will assume zero liability and responsibility to all claims of whatsoever nature Festival of India Khana Pakana Competition – August 19th, 2012 at 11.00 AM JUDGING The judges will judge each plate using the following criteria: Taste and Flavor – 45% Visual Appearance - 25% Creativity - 15% Ingredients – 15% The elimination of a chef is completely up to the judging panel and individual scores given by the judges will be anonymous. Reasons or scoring will not be published. Winners will be recognized on stage with prizes at Festival of India on August 25th, 2012. Timing will be communicated to all winners.
