Puff Pastry Pasties Vegetable Slice Ingredients Ingredients ½ potato ½ carrot ½ onion slice of choko sprig of parsley 1 sheet frozen puff pastry some beaten egg tomato sauce for serving Preparation 1. Preheat oven to 200°C 2. Peel and cut up potato, carrot, choko, parsley and onion into tiny pieces 3. Place some baking paper on oven tray 4. Cut 5 or 6 circles of pastry using a cutter or lid 5. Place chopped vegetables on one half of each pastry circle 6. Brush edge of pastry circle with beaten egg, then fold pastry over and join edges by squashing neatly with a fork 7. Bake 20 minutes 8. Serve with tomato sauce ½ corn cob ¼ red capsicum ½ onion 1 piece choko ½ carrot or sweet potato 1 sprig parsley garlic chives ½ cup grated tasty cheese ½ cup self raising flour 2 small eggs (or 1 large egg) 1 tablespoon oil Preparation 1. Cook corn on cob 2 minutes in boiling water (or in microwave). Cool. 2. Preheat oven to 180°C. 3. Line pan with baking paper. 4. Chop capsicum, onion, choko and carrot or sweet potato into small pieces. 5. Chop parsley and garlic chives and add to vegetables in bowl. 6. Slice corn kernels from cob by standing cob upright on chopping board and slicing down length of cob. Add kernels to bowl. 7. Add cheese and flour to mixture. 8. In small bowl whisk eggs with oil. 9. Add egg mixture to vegetables and stir to combine ingredients. Put mixture into pan. 10. Bake 30 minutes or until golden brown and firm to touch.
