Ice Cream, ! Base #1 !
Serves: 8 (Calories: 212, Fat 13.25 g – 5.4 POINTS)
2 large eggs
Whisk eggs until light and fluffy, 1 to 2
3/4 c sugar
minutes.
2 c heavy/whipping cream
1 c milk
Whisk in sugar a little at a time until
completely blended, about 1 minute
more.
Pour in the cream and milk and whisk to
blend
YIELD: 1 quart, serving size 1/2 cup, 8
servings

Ice Cream, Ben’s Chocolate
Serves: 8 (Calories: 233.3, Fat 15.3 g, Fiber 2.5 g – 5.4 POINTS)
4 oz unsweetened chocolate
Basically as with base, but melt
1 c milk
chocolate first and then combine
2 large eggs
ingredients with care to avoid the
1 c sugar
chocolate seizing.
1 c heavy/whipping cream
1 tsp vanilla extract
1 pinch salt

Oreo – add 1 cup chopped oreos
Reese’s Peanut Butter cup – add 1 cup

Extract (2 tsp), ~6oz chopped thin mints
Coffee – Base + 2 extra tablespoons

start, last added close to end of freeze)

Sorbet, Raspberry
Serves: 8 (Calories: 174.8, Fat: 0.5 g, Fiber 5 g – 2.5 POINTS†)
1 c sugar
Combine sugar and water over low heat
1/2 c water
until sugar dissolves and syrup is clear.
1 q fresh raspberries (approx 1 lb)
Remove from heat and cool to room
Juice of 1/2 lime (or lemon)

Champagne – Increase sugar by 1/4 cup,
add 1 c Champagne before freezing
Cordial – Add 1/2 c raspberry liqueur

2 c water
Combine water and sugar over heat until
1 c sugar
sugar dissolves. Whisk in cocoa and
1 c unsweetened cocoa powder
simmer for 3 minutes, stirring
constantly.
Strain and cool. Freeze.
Yield: 3 cups
Variations:
Mint – Add 1/2 tsp min extract
Espresso – Add 1 tsp espresso

Ice Cream, Strawberry
Serves: 8 (BASE + Calories: 46.5, Fat: 0.1
1 p fresh strawberries, hulled and sliced
1/3 cup sugar
Juice of 1/2 lemon
Base

Combine strawberries, sugar and lemon
juice in a mixing bowl. Cover and
refrigerate at least 1 hour.
Prepare the base. Mash the strawberries
to a puree and stir into base.
Freeze.

Lemon Sorbet
Serves: 6 (Calories: 203 – 4 POINTS†)
1 1/2 c sugar
2 c water
1 large egg white
3/4 c fresh lemon juice (appox. 4
lemons)
Variations:
Vodka – Add 1/2 c lemon-vodka just
before freezing.
Raspberry-Lemon – Add 1 c fresh
raspberries to the syrup just before
beating it into egg whites
Combine sugar and water in a small
saucepan, bring to boil after sugar
dissolves. Let boil for 1 min. Remove
from heat.
Whisk egg white with whisk until foamy,
10 sec. Beat in hot syrup. Beat until
meringue cools slightly. Add lemon juice.
Cover and refrigerate until cold or
overnight. Will have foam on top, but will
incorporate when mixture freezes.
Freeze.
Yield: 3 cups

Ice Cream, Chocolate {Light flavor}
Serves: 8 (Calories: 194.1, Fat: 10.5 g, Fiber: 1.5 g – 4.5 POINTS†)
1 oz unsweetened chocolate
Melt chocolate over a double boiler.
1/4 cup unsweetened cocoa powder
Whisk the cocoa until smooth. Whisk in
1 1/2 c milk
milk until completely blended.
