This Checklist is designed as a guideline and only a guideline to your Restaurant
Maintenance activities. This list is NOT the only tool to be followed. This list is NOT the
cleaning procedure for the store. Please follow your training manual and employee
handbook for cleaning procedures and use this list as a complementary tool.
Restaurant Kitchen items to clean throughout every cooking shift
 Brush grill between cooking red meat, poultry and fish
 Wipe down the prep areas
 Switch cutting boards
 Change sanitizing water and cleaning rags
 Empty trash bins
Restaurant Kitchen items to clean after each cooking shift (breakfast, lunch, dinner)
 Clean the fryer
 Brush the grill
 Empty sanitizing buckets
 Wash and sanitize all surfaces (cutting boards, reach-in, line, prep tables)
 Clean meat slicer
 Cover all bins in reach-in cooler with plastic wrap
 Sweep and mop the kitchen floor
Weekly Restaurant Kitchen Cleaning List - these duties can be rotated throughout the week
 Empty reach-in coolers and wash and sanitize them
 Delime sinks and faucets
 Clean coffee machine
 Clean the ovens. Be sure to follow the manufacturers instruction on this
particular job.
 Sharpen knives
 Use drain cleaners on floor drain
 Clean hood filters with degreaser
Monthly Restaurant Kitchen Cleaning List
 Wash behind the hot line (oven, stove, fryers) to cut down on grease build up, which
is a major fire hazard
 Clean freezers
 Wash walls and ceilings
 Wipe down the dry storage area
 Change any pest traps
 Restock your first aid kit
 Remove food from fridge or walk in cooler.Store the frozen items in coolers
 Vacuum with a brush attachment to remove dust that has accumulated underneath
the refrigerator, on its rear coils and top vents, and along the wall.
 With a wet, soapy cloth, wash the exterior. If your refrigerator is made of stainless
steel, use special stainless cleaner, and rub with the grain for the best shine.
 If your drain pan is removable clean the drain pan periodically
Yearly Restaurant Kitchen Cleaning/Safety List
 Check fire suppression system
 Check fire extinguishes
 Clean hoods twice a year. (Contact your professional Hood Cleaning Company)
 Clean pilot lights on gas kitchen equipment (Be sure to follow the manufacturer’s
instruction)
 Under your refrigerator/freezer is a set of coils and a cooling fan that you need to
clean at least once a year. The coils may look like a grate or like a wide radiator.
Unplug the refrigerator/freezer and use a Refrigerator Condenser Brush, and your
vacuum cleaner to clean any lint, pet hair, and so on from the coils.
