Eggs in Bell Pepper rings served on toast
Ingredients






1 tablespoon olive oil
1 bell pepper cut into rings
3-4 eggs (1 per person)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
3-4 pieces of bread (1 per person)

Cut bell peppers into thick rings. 1 ring per person.
Heat the olive oil in a large skillet over medium heat, about 4 minutes.
Add the bell pepper rings. Cook 1 minute on each side.
Crack an egg into each bell pepper ring. Lower heat to medium-low. Cook until whites
are set, 5-10 minutes.
5. Season with salt and pepper, and serve on toast.
6. To make toast, put in the toaster. 
