celiac disease
Celiac disease
If a person has celiac disease s/he must not eat wheat, rye
or barley, or any product consisting those grains, because
the gluten these grains consist causes inflammation in the
person’s small intestine and damages its microvilli.
These grains must be replaced by rice, corn, millet,
buckwheat and oat, or special products from which gluten
has been removed
About 2 % of Finnish people have celiac disease (100,
000 people)
Gluten sensitivity means that there are people who get
symptoms when they eat gluten even if they don’t have
the actual celiac disease.
Pizza
1. Let the yeast melt in lukewarm water. Add salt, oil and flour.
Pizza dough
Knead the dough until it is smooth and elastic, and form a ball.

Cover the dough and let it sit in a warm place for a while .

2. Use a rolling pin to form a big round disk and place it on

Tomato sauce for pizza

1. Peel and chop the onion and the garlic. Fry them in hot

ingredients:
1 can of tuna
Place the toppings on the flattened pizza dough.

Season, and add the grated cheese.
4-5 sliced tomatoes
Heat the oven until it is 250 degrees (centigrade),

Bolognese topping
ingredients:
200 g minced meat
1. Peel and chop the onion.

2. Fry the minced meat. Add the onion, cloves of garlic

3. Spread tomato sauce, the ready-made minced meat

and mushrooms on pizza dough. Sprinkle grated cheese

and oregano on top. Bake 250 degrees 12-14 minutes.

Waffles
4 dl
milk

1. Take a bowl and pour the milk in it. Whip salt, eggs, melted butter and gluten-free flour with baking powder
together with the milk. Let it swell for ½ - 1 hour.
2. Heat the waffle pan and apply some oil on the surface. Place about 1 dl of dough in the pan, and let it fry
until it is golden.
3. Go on frying the rest of the dough, but do not add more oil.
4. Serve the waffles as soon as possible after they are ready, with whipped cream, ice cream, jam or berries.
Tosca-apples
4 (sour) apples
- Heat the oven until it is 200 degrees. Oil the pan.
½ lemon (juice)
- Peel the apples and remove the cores. Cut the apples

Squeeze some lemon juice on top, and place the pan

- Spoon the topping on the apples, and bake in the oven until the apples
are a bit soft, and the topping gets some colour

- Whip the milk, egg, sugar, and potato flour together.

Add the vanilla pod, and take it off when the sauce is ready.

- Heat the mixture stirring it until the sauce thickens.

Strawberry pie
Ingredients:

1. Heat the oven until 200 degrees. Grease the pan (round pie
