Food Defense Initiative
• NJDOH inspectors conducted food vulnerability assessments at
9/11/11 and 12/11 games:
- 60+ foodservice operations visited
- most recommendations had been implemented
• DNC’s food defense directive “to demonstrate a higher level of
safety with our food supply/flow”
- FIRST training required for all employees
- stricter receiving/storage protocols
- chain of custody for food
