BASIC PASTA NOODLES MAKING




2 cups all-purpose flour (240g)
3 large eggs
½ teaspoon salt
1 tablespoon Oil
PROCEDURE
1. Dump the flour on your table area and create small well on center.
2. Put the egg at the center of flour followed with oil and salt. Whisk the egg using
fork.
3. Continue to bring the flour into the center until the dough pull together enough to
handle by hands. Until you create a shaggy dough.
4. When the dough is complete pull together knead it for 10 minutes until is smooth.
5. Wrap your dough and rest for 30 minutes.
6. When the dough is rested cut it into half.
7. Add flour dusting on your working table. Using rolling pin flatten the dough.
8. Cut and fold the dough 3x times and flatten again the dough. Repeat it again one
more time.
9. Roll the dough to make a large rectangle. If the dough is shrinking back rest it
then rolls it again. You make thin enough to see you finger behind. add flour
dusting.
10. Cut the dough what shape you like. When it you cook it just for 2 to 3 minutes
only.

Rolling Pin
Silicon Matt
Chopping board
Note: if no rolling pin you can use bottle wine.
