Sodium Gluconate
General Information
Sodium gluconate is the sodium salt of gluconic acid (pentahydroxy-caproic or -hexanoic acid),
obtained from glucose by fermentation. It forms stable chelates with iron, aluminium, calcium, zinc
and other heavy metals, especially in alkaline solution. It possesses good sequestering activity in
cleaning baths and is highly stable, even in concentrated alkaline solutions.

Characteristics
Sodium gluconate is a white to tan, granular to fine, practically odourless crystalline powder. It is
very soluble in water and yet not hygroscopic. It is sparingly soluble in ethanol and insoluble in
ether.
Sodium gluconate is easily biodegradable and thus presents no wastewater problem. Being nontoxic and physiologically compatible, foodstuff articles can be treated with it without any risk.
Aqueous solutions of sodium gluconate are resistant to oxidation and reduction, even at high
temperatures, and have no corrosive action.

Legal Aspects
In Europe sodium gluconate is listed as a generally permitted food additive (E 576) and may be
added to all foodstuffs, following the "quantum satis" principle, as long as no special regulation
restricts the use.
The US Food and Drug Administration (FDA) assigned sodium gluconate the “generally recognised
as safe” (GRAS) status and permitted its use in food without limitation other than current good
manufacturing practice.
Packaging and Storage
Jungbunzlauer sodium gluconate is supplied in 25 kg polyethylene bags or in 1000 kg big bags.
Jungbunzlauer guarantees a shelf life of 3 years if the product is stored in its original packaging
under the following conditions:
