OLFACTION • The hairs are covered with mucus that is secreted by olfactory glands. • Mucus dissolves airborne odor molecules. • Each odor is composed of hundreds of chemicals. • Olfactory receptors are “chemoreceptors” stimulated by combinations of chemicals. • Olfactory nerve fibers send impulses to the brain along cranial nerve I (olfactory nerve/tract) to identify the pattern of stimulation. OLFACTION Sagittal Section of the Nose Olfactory nerve (tract) cranial n. I Cribriform plate of ethmoid bone Nasal conchae Eustachian tube Olfactory bulb Olfactory sensory neurons Dogs have about 40x the area for olfaction than humans ETHMOID BONE Cribriform plate Openings for the olfactory nerve (smell) Perpendicular plate Forms superior part of nasal septum Add to required structures. Nasal conchae Increase surface area of mucous membrane Groupwork: A&P Lab Activity – Taste and Smell Pg 3-6 The sense of taste is called “gustation”. umami - taste for the specific amino acids aspartate and glutamate TASTE Pathway of taste impulses • Cranial n. VII (facial n.) transmits impulses from the anterior 2/3 of the tongue. • Cranial n. IX (glossopharyngeal) transmits impulses from the posterior 1/3 of the tongue.
