Week 1: TASTE and OLFACTION
•
Rockland Community College Bio110 Anatomy and Physiology 2 Lab
OLFACTION
Sense of Smell
• Olfaction detects airborne chemicals in
solution.
• Olfactory receptors are located in the the roof
of the superior nasal conchae in the nasal
cavity.
• Olfactory receptors contain cells with hairs.
OLFACTION
• The hairs are covered with mucus that is
secreted by olfactory glands.
• Mucus dissolves airborne odor molecules.
• Each odor is composed of hundreds of
chemicals.
• Olfactory receptors are “chemoreceptors”
stimulated by combinations of chemicals.
• Olfactory nerve fibers send impulses to the brain
along cranial nerve I (olfactory nerve/tract) to
identify the pattern of stimulation.

Activity –
Taste and
Smell
Pg 3-6
The sense of taste is called “gustation”.
umami - taste for the
specific amino acids
aspartate and
glutamate
TASTE
Pathway of taste impulses
• Cranial n. VII (facial n.)
transmits impulses from
the anterior 2/3 of the
tongue.
• Cranial n. IX
(glossopharyngeal)
transmits impulses
from the posterior 1/3
of the tongue.
