My Food List
Keep a detailed record of all foods and beverages consumed over a three-day period (two weekdays and one
weekend day). You should record this information during each meal or shortly after the meal, in your own
words. Please do not copy and paste your foods list directly from Cengage. You should record the type of
food and the quantity as accurately as possible. For dishes from a restaurant or store, please specify name of
the restaurants/school cafeteria or brand of the food items. For dishes containing a combination of several
different food items such as a salad or sandwich, record an amount for each component. Also, record
anything that you added to the food before you ate it, such as condiments (mayonnaise, ketchup, gravy, salad
dressing, etc.). Please refer to the example Food List posted on Canvas.

Please describe at least two primary roles that each of the following nutrients play in our body.
You may reference your textbook and lecture PowerPoints only, but make sure you use your own words.
Be specific and write in complete sentences.
Protein – Proteins can act as an enzyme to facilitate important reactions such as digestion,
building muscle and bone, and even transforming amino acids into glucose. Protein also
acts as a transporter of molecules. Hemoglobin is a protein that carries oxygen through the
blood stream to the lungs.
Vitamin B12 – Vitamin B12 can be found on the sheath around nerve fibers. Its function is
to protect the nerve and promote growth. Vitamin B12 also helps regenerate methionine
and the creation of DNA and RNA.
Vitamin A – Vitamin A plays a major role in maintaining clear vision. It keeps the cornea
clear from imperfections and fogginess. Vitamin A also is important for reproduction and
growth. The vitamin helps dismantle unnecessary minerals in bone to clear way for
growth.
Vitamin C – Vitamin C acts as an antioxidant in the body because its ability to lose
electrons easily. It helps irradicate free radicals by donating its electrons. Vitamin C also
assists in the production of collagen by converting proline into hydroxyproline.
Vitamin E – Vitamin E acts as a antioxidant. The main function of vitamin E is to stop free
radicals from producing more free radicals. Vitamin E also lowers the risk of heart disease
by reducing inflammation and oxidation of low-density lipoproteins.
Calcium – Calcium is mainly used for fortifying bones and keeping them strong, but
calcium also helps the transport of blood throughout the body.
Potassium – Potassium is used for keeping the level of fluid in cells at a healthy level.
Potassium also assists in the contraction of muscles and keeping blood pressure low.

Date__6/12/23_________________
Iron – Iron is an enzyme cofactor in oxidation-reduction reactions. Iron assists in the
production of amino acids, collagen, hormones and neurotransmitters by carrying
electrons that are vital for the reactions to take place. Iron also helps oxygen flow by
assisting hemoglobin accept, carry and release oxygen.

 Macronutrient Ranges
This report compares your dietary intake for the energy yielding nutrients with the Acceptable Macronutrient Distribution
Ranges (AMDR). The table compares the recommended range of calories with your actual caloric intake for each
macronutrient. Note that it does not compare the percentages, as the recommended percentages are based on the total
recommended caloric intake. If you ate too many or too few calories, your percentages could be "right," but you may
actually have consumed too much or too little of each macronutrient.
