ACKNOWLEDGEMENT
First of all, I want to say Alhamdulillah to god because gave me an excellent result for
last semester and I am very thankful for that and give me a chance to breath on this
world. Secondly I would like to say thank you to my lecturer Chef Putra Hamehaby
Masbak because help me and give this opportunity to learn a new thing in weekly which
is all about western cookery that I need to learn to give me an experience and knowledge
for my course. I very appreciate the spirit from chef Putra because it is already semester
5 and we still study like we do on semester 3 which is we still just studying at our home
but our lecturer still trying give his best to teach us with sincerely and patient although
we can go to college because of the dangerous disease that attacked our country .
Lastly, I also want to say thank you to my classmates because give a co-operation
with each other and also gave suggestion about the task. Last but not least let’s pray to
god to stop this disease getting worse and getting spreading so that we can go to college
and study like usually.

1. History of the cuisine.
The Romans, ancient Greeks and Persians ate mixed greens with dressing, a type
of mixed salad. Salads, including layered and dressed salads, have been popular in
Europe since the Greek and Roman imperial expansions. In his 1699 book, Acetaria:
A Discourse on Sallets, John Evelyn attempted with little success to encourage his
fellow Britons to eat fresh salad greens. Mary, Queen of Scots, ate boiled celery root
over greens covered with creamy mustard dressing, truffles, chervil, and slices of
hard-boiled eggs. (Citation needed)
Oil used on salads can be found in the 17th-century colony of New Netherland
(later called New York, New Jersey and Delaware). A list of common items arriving
on ships and their designated prices when appraising cargo included "a can of salad
oil at 1.10 florins" and "an anker of wine vinegar at 16 florins".In a 1665 letter to the
Director of New Netherland from the Island of Curaçao there is a request to send
greens: "I request most amicably that your honors be pleased to send me seed of
every sort, such as cabbage, carrots, lettuce, parsley, etc.
2. Techniques, skills, method (standard recipe)
Ingredients:
Dressing






¼ cup cashew or peanut butter
2 tablespoons white miso paste
2 tablespoons lime juice
1 teaspoon sesame oil
1 teaspoon grated ginger
2 to 5 tablespoons water, or as needed
For the slaw:









6 to 7 cups shredded red and/or green cabbage
Mix of peppers: I used 3 Anaheim and 3 banana peppers; or use 1 red bell
and 1 poblano.
2 scallions, chopped
½ cup chopped cilantro, including stems
½ cup fresh basil, Thai basil, and/or mint
2 Thai chiles or 1 serrano pepper, diced
Sea salt
¼ cup toasted peanuts, pepitas, and/or sesame seeds
1 ripe peach, thinly sliced

Instructions



Make the dressing: In a small bowl, whisk together the cashew butter, miso
paste, lime juice, sesame oil, and ginger. Whisk in enough water to create a
drizzable consistency. Set aside.
In a dry cast-iron skillet over medium heat, char the peppers whole, rotating
until the edges have a little char, about 2 minutes per side. Remove. When
cool to the touch, slice in half lengthwise, remove the stem, ribbing, and seeds
and slice horizontally into thin strips.
In a large bowl, combine the cabbage, peppers, scallions, cilantro, basil,
chiles, and ¾ of the dressing. Toss until combined. Add the remaining
dressing, if desired, and season to taste with a few pinches of sea salt. Serve
topped with the toasted nuts, seeds, and sliced peaches.

4. Ideas for improvise class.
The way how to improve the class is, lecturer need to do a video by itself and make
the recipe, so that students can see it clearly and understand step by step what they
should to do. In the video lecturer need give the explanation on how to make the
recipe perfectly with an interesting content so that student will give their attention on
class.
5. Information on what happen in the class.
There is nothing happen while class is started and the class started smoothly and
student can understand what our lecturer teach from the video that have been given
on the google classroom.

6. Procedures before, during and after class.
Firstly student will sign attendance on whatsapp and google classroom to make sure
we join the class.
Lecturer gave a link video from youtube in the google classroom so students will
open it, watched and understand the method and skill of how to make the recipe by
ourself.
At the end of the class, lecturer will put some exercise or assignment to do according
the topic that we study and submit it as soon as possible or according to due date
that have been set by our lecturer.
7. Problems and error.
There was no errors and problems that was faced this week. Video tutorial and weekly
task has been submitted and can be understandable. There was also no problem in
finding information regarding the given topic.

Conclusion.
Concluding this week report, everything was perfectly normal as the given task was
submitted before the terminate time. Even the video of this week’s topic was easily
understandable. No difficulties were found in learning or trying to find the information
of the topic given.
salad consumers tended to have more favorable intakes of vitamins C and E, folic
acid, and carotenoids, after adjustment for other differences. The significant and
consistently higher serum values of these vitamins among salad consumers suggest
that they are being well absorbed from salad.
