Back Click to Print TACO LETTUCE WRAPS yield: 4 SERVINGS prep time: 10 MINUTES cook time: 10 MINUTES total time: 20 MINUTES A wonderfully healthy, low carb alternative to traditional tacos, packed with tons of flavor and protein! INGREDIENTS: • 1 tablespoon olive oil • 1 pound ground turkey • 1 cup salsa • 1 (4-ounce) can diced green chiles • 1 tablespoon taco seasoning • 1 (15-ounce) can corn kernels, drained • 1 (15-ounce) can black beans, drained and rinsed • 2 tablespoons chopped fresh cilantro leaves • Kosher salt and freshly ground black pepper, to taste • 1 head butter lettuce • 1/4 cup shredded cheddar cheese, optional • 1/4 cup reduced-fat sour cream, optional DIRECTIONS: 1. Heat olive oil in a large skillet over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat. 2. Stir in salsa, green chiles and taco seasoning until heated through, about 2-3 minutes. Stir in corn, beans and cilantro until well combined; season with salt and pepper, to taste. 3. To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style, garnished with cheese and sour cream, if desired. Adapted from Dashing Dish.
