our techs went to our locker this morning and the syringes of the flux are a yellow color and when we apply heat they are giving off a bad smell 10:40 AM

There are major differences between the V2 and V3 materials The V3 is universal for leaded and lead-free while the V2 is Sn/Pb flux.
The V3 has an optical UV-tracer - non-activated residue glows in the UV/blacklight which dramatically aids in cleaning inspections, with V2 you don't know how well it was cleaned.
The V3 is an SMT industrial flux, is capable to produce leaded and lead-free SMT solder paste, while the V2 was designed for hand-soldering.
The V3 has better tackiness, suitable for leaded and lead-free BGAs compared to the V2 which is barely used for the BGA

Most importantly, the V3 is REACH-compliant - less harmful for nature and human health, introduced in 2022 it uses modern chemicals while the V2 was introduced in 2004 and rather a legacy retiring formulation, not a flagship material.
