Basil Herb Breadstick Cross Feast Day: Elevation of Holy Cross Commemorated September 14th Fasting Guidelines: Strict Fast 1 1/3 cup warm water 2 packets active dry yeast (4 1/2 tsp) 4 cups bread our 4 Tbsp vegetable oil 1 tsp salt 2 tsp garlic powder* 2 Tbsp fresh minced basil or 3 tsp dried basil* 1 tsp oregeno* 1 tsp parsley* 1 tsp vegetable oil 2 Tbsp margarine or butter substitute *herbs used and quantities used can vary depending on personal taste* Mix water and yeast in a bowl and let sit for 5 minutes until the yeast is activated. Put dough hook attachment on mixer and turn on low, gradually adding in our, oil, salt, and herbs. Once incorporated turn up to medium and let knead for 5 minutes. Turn out dough onto clean, oiled surface and knead by hand 5-10 minutes, until dough is smooth and bounces back nicely. Put in lightly oiled bowl and cover with cloth, let rise in a warm space for approximately 1 hour until dough has doubled in size. Divide dough into 4 smaller sections, 2 larger and two smaller. Roll into long logs. Starting in the center of the cross, weave center piece together and then plait into the shape of the cross. Pinch ends and tuck ends under, transfer carefully to parchment lined baking sheet and cover with a towel. Let rise 30-40 minutes. Preheat oven to 400°F. Rub plaited cross with oil before baking, and sprinkle with salt if desired. fl fl Bake breadstick cross 16-18 minutes until lightly golden. Spread margarine or butter substitute on top of cross when it comes out of the oven, if desired.
