CHAPTER 1
INTRODUCTION
 An organized, clean and well-equipped kitchen makes cooking easier, and knowing the best
way to use and care for your cooking tools and other supplies makes cooking safer and
efficient.
OBJECTIVES
 General Objective:
 To be able to select, safely use, and efficiently care for facilities and equipment related to
food preparation and dining.
 Specific Objective:







Safety and prevention of accidents in kitchen
Maintain a cleanliness for a healthy environment
To be able to identify common cooking utensils & their uses
organize the kitchen in an efficient manner
locate kitchen utensils and equipment, and return them to their specified place
know where specific items are to be kept in the lab kitchens
develop a list of the most essential equipment and appliances
SCOPE AND DELIMITATIONS




General Purpose: Observe students applying discipline while inside the kitchen
Population of Sample: CNHS HE Strand
Time of Duration: 1 month
Subject Matters:
 Safety in kitchen and accident prevention
 Cleanliness and organize kitchen with proper labelling,
 Working area clean and tidy
 Clearing and washing up when done is necessary,
 All equipment returned to correct place like cabinets, shelves, storage room
 Efficient and effective use of time
 Select proper kitchen equipment and tools
 Proper use of Oven, refrigerators, cookers
 Correct methods of preparation and cooking
 Correct disposal of waste
 Hygiene and safety
 Efficient use of energy and its impact on the environment (heat, radiation, chemicals)
 Topic Discussed:
The Importance of kitchen safety and cooking tools. There are various types of kitchen tools
and equipment offered in the market that says it makes our life easier. We might think that we
should all have those tools in our kitchen and this will mean that we have to spend more. But
the truth is, we only need few things, the basics and the most practical kitchen tools and
equipment. Our study will limit on the existing items already in the kitchen since we do not
have more funds to provide for high-tech equipments.
 Area of locality: CNHS Senior High School Kitchen room
SIGNIFICANCE OF THE STUDY
 With the help of proper training, students will have better understanding of the proper use
and care of cooking tools and equipment. Students will learn the speed of the cooking
process, and make serving the food better procedure, in order to maintain the hygienic
environment, it is important to have a cook system in place while creating also a safe
environment.
 We will know which are the basic tools that is more important in a kitchen and a must-have
utensil to make things in there a lot more easier and comfortable. Getting familiar with
them and their uses before doing the different cooking process will be beneficial to any
cook.
