In Preble County, we’re proud
of our rich agricultural heritage.
Farming and raising livestock are
integral to our way of life and
important drivers of economic
opportunities for our rural
Southwestern Ohio families. Preble
County residents are involved
in many different aspects of
agribusiness, but what we know best
is pork! In fact, since the first swine
testing station was started here
in 1946 by the late Wilbur Bruner
(then the County Extension Agent
and later a swine specialist with The
Ohio State University Cooperative
Extension Service), we have been
known as The Home of Swine
Improvement in America. The early
efforts of Bruner and participating
local farmers helped bring leaner,
higher-quality, more nutritious pork
to the world.
From Farm to Plate, Many Reasons
to Celebrate
It’s true: in Preble County, we
know pork—from piglet to riblet
and everything in between. But
we also know how to celebrate all
the wonderful things that go along
with it! The Preble County Pork
Festival, as we know it today, was
born in 1970 when the committee
that organized Farm-City Day (the
precursor of the Pork Festival)
met to discuss ways to improve or
redefine the annual event. It was
decided that a grand Pork Festival
celebrating Preble County’s proud
pork-producing industry and history
was the way to go.

regular correspondent for other local
news media, he was one of the four
men who traveled to a pork festival
in Tipton, Indiana back in 1970 to
gather ideas for our own annual
swine celebration. Instrumental in
the creation of the event, Tim went
on to serve as Festival Chairman
in 1972 and 1973, and then from
1975 until the time of his death in
1993. His energy and spirit were
constant sources of inspiration to
those around him. The ongoing
success of the Pork Festival is due in
large part to Tim’s efforts over the
years. Today, we award two annual
scholarships in his memory.
Working alongside Tim for
decades, Paul Ray was also a
significant force in shaping the
Preble County Pork Festival. He was
the Festival Committee’s first

include Tim H. Miller and Paul E.
Ray.
These extraordinary men were part
of our organization from the very
beginning and we are truly fortunate
to have known their kindness
and friendship. Their countless
contributions to the Pork Festival
and Preble County community have
secured their legacy for generations
to come, and our fond memories of
them haven’t faded a bit since they
passed away.

About the festival
- Since 1971, the Preble Co. Pork Festival has been held
on the 3rd Full Weekend in September. As a non-profit
organization, all profits have been returned to Preble County
including over $1,700,000 in fairground improvements
and $72,500.00 in educational scholarships (Tim H. Miller
Memorial College and Preble Co. High Schools).
Festival Facts:
- The Preble County Pork Festival was named Ohio’s 2011
Pork Promoter of the Year!
- Our 2014 exhibitors came from Ohio along with
Indiana, Illinois, Kentucky, Michigan, Minnesota, Missouri,
Pennsylvania, New York, Tennessee, Alabama and Iowa.
- The third full weekend in September was chosen as our
festival weekend based on 100 years of weather statistics; it’s
statistically the driest weekend in Eaton, OH!
- 51,000 pounds of pork was served in the 2014 festival
alone!
- Within three days, over 50,000 pork chops are fresh cut for
our grills and Country Store for you to have the juiciest chops
possible.
- 12,852 meals were served in 2014 between the Pork Chop
Smorgasbord and the All-You-Can Eat Pancake & Smoked
Sausage Breakfast!

Aubrey Stevenson, 17, Eaton, was
selected as Pork Queen during the
2015 Preble County Fair Royalty Contest. Aubrey is the daughter of Scott
and Ami Stevenson. “I’ve learned
so much from showing pigs and
I’ve gained so many opportunities,”
Stevenson wrote during fair. “One
of the most exciting opportunities I
have had was being named 2015 Pork
Queen and representing the pork
industry at the Pork Festival.”

Then, from 1995 until 2010, Paul
continued his service as Festival
Coordinator. And as if that wasn’t
enough, he also held a seat on the
Pork Roast Committee. Paul was
always the first one to roll up his
sleeves and pitch in to help with
any task. His work ethic and tireless
dedication to excellence set the stage
for the long-running success of the
festival and the goodwill it generates
throughout the community.
Paul and Tim will always be
missed. We are forever grateful
for all that they did to support our
organization and the shining example
of selflessness and community
pride they left for us to follow. Our
memories of them will continue to
light the way forward.

COLUMBUS — The Ohio
Pork Council, with the help of
volunteers, will attend the Preble
County Pork Festival in Eaton to
promote properly cooked pork
and engage in conversations
about how food is raised on
today’s farms.
Each year, OPC takes
advantage of the excellent venue
the Pork Festival provides,
passing out 9-12,000 bite size
samples of boneless pork loin
to those in attendance. While
handing out samples, volunteers
explain the important role proper
cooking plays in preparing tender,
juicy, flavorful pork.
The U.S. Department of
Agriculture (USDA) guidelines,
released in 2011, confirm that
145 degrees Fahrenheit, as
measured on a food thermometer,
followed by a three-minute rest
time, is a safe final internal
cooking temperature for pork.
This is 15 degrees less than what
was previously recommended
and will typically yield a finished
product that is pinker in color
than most home cooks are
accustomed to.
“We (OPC) want people to be
comfortable cooking and eating
pork,” said Jennifer Osterholt,
Ohio Pork Council Director of
Marketing and Education. “We
use pork samples and easy to
navigate literature on cooking to
assure attendees that pork cooked
properly to 145 degrees F will be
tender, juicy, flavorful and safe to
eat.”
Research by the National Pork
Board consistently shows that
Americans have a tendency to
overcook common cuts of pork,
resulting in a less than optimal
eating experience.
The revised recommendation
applies to pork whole muscle
cuts, such as loin, chops and
roasts. Ground pork, like all
ground meat, should be cooked
to 160 degrees Fahrenheit,
regardless of cut or cooking
method. Both the USDA and
National Pork Board recommend
using a digital meat thermometer
when cooking pork to ensure an
accurate final temperature.
Inside the educational building
on the grounds, OPC’s model
finishing barn and new videos
will serve as focal points for
conversations about modern
farming and how pigs are raised.
Volunteers will also be handing
out special literature, developed
by OPC, to answer commonly
asked questions regarding food
and modern agriculture.

* Farrow-to-nursery farms
specialize in the breeding of
sows and raising of 40- to
50-pound feeder pigs, which
are then sold to farms that
specialize in feeding pigs
until they reach market
weight.
* Farrow-to-wean farms
oversee breeding herds and
raise pigs until they are
weaned at approximately 10
to 15 pounds, at which time
they are sold to wean-tofinish farms.
* Wean-to-finish farms
purchase weaned pigs from
farrow-to-wean farms and
grow them until they reach
market weights.
* Finishing farms buy 40
to 50-pound feeder pigs from

the Tim H. Miller Memorial College
Scholarship and Preble County High

Dinner, numerous food banks, and

$1,700,000, according to the release.

Saturday, Sept. 19 and Sunday, Sept.

EATON —The Preble County Pork
Festival Board has announced that
the mortgage of the Expo Building at
the Preble County Fairgrounds has
been paid in full.
During their April 9 meeting, the
Pork Festival Board of Directors
passed a resolution terminating
the 2005 lease agreement, granting
the easement of the 45,500 square
foot building back to the Preble
County Commission and Agricultural
Society.
The project was made possible
due to the countless hours and hard
work of the dedicated volunteers at
the festival. Some volunteers have
been working at the festival since its
inception 45 years ago. Others are
second and third generation workers.
“Additionally, we want to thank
our community sponsors and
individuals who have donated funds
and services that make the Pork
Festival a great annual event: Beck’s
Seeds-Creech Farms, Catrons Glass,
Garber Electric, Hunt Butcher Shop
and Newton Family Farms, Reid

Reds’ Browning to be festival grand marshal

EATON — The Preble County Pork Festival Board
recently announced this year’s grand marshal for
the 45th annual Pork Festival parade will be Tom
Browning, retired Cincinnati Reds pitcher.
Browning spent all but two appearances of his
12-year major league career with the Reds and
finished with an overall record of 123-90 and a 3.94
ERA. He is best known for pitching a perfect game
against the Dodgers on Sept. 16, 1988. He was named
to the National League All-Star team in 1991. The
southpaw became the first rookie in 31 years to win
20 games at the big league level when he went 20-9
(3.55) for the Reds in 1985. He won 15 games in
1990 to help lead Cincinnati to its first World Series
Championship since the day of the Big Red Machine.
In 2006, he was inducted into the Reds Hall of Fame.
Tom Browning returned as Dayton Dragon’s
pitching coach in 2015.
The Pork Festival Parade will be held downtown
Eaton on Saturday, Sept. 19, beginning at 10:30 a.m.

EATON — The Preble County Pork Festival has teamed up with the PC Visual Arts Center to decorate ten life-size concrete pigs to be displayed in downtown Eaton. Then
it is off to the races, when they are moved to the fairgrounds during the Pork Festival. A grand and reserve champion, along with honorable mention, will be selected by a
“penny vote” at Rotary Junction. These works of “swine art” will be auctioned off on Saturday, Sept. 19, starting at 5 p.m. Join us for a squealing good time!
