American Meat Science Association News
The American Meat Science Association (AMSA) fosters community and professional
development among individuals who create and apply science to efficiently provide safe
and high quality meat—defined as red meat (beef, pork, and lamb), poultry, fish/seafood,
and meat from other managed species.
AMSA Announces 2016 PORK 101 Course
The 2016 Texas A&M University PORK 101 course will be held 1–3 June in College Station, TX. PORK 101 is hosted by AMSA in cooperation with the National
Pork Board and is sponsored by Elanco Animal Health and Merck Animal Health.
Attendees will experience firsthand in the selection, evaluation, and fabrication of
their pork carcasses as well as the importance of hog handling, grading, food safety,
and much more. The course concludes with the attendees preparing and sampling
products from pork carcasses including pumped loins, bacon, hams, and sausage.
These attendees will have the opportunity to learn about the value differences in
swine, pork carcasses, pork primals, and processed pork products from meat science
faculty and AMSA members at each university.
PORK 101 is co-sponsored by the American Association of Meat Processors
(AAMP), American Society of Animal Science (ASAS), North American Meat Institute
Foundation (NAMIF), and the Southwest
Meat Association (SMA). Registration for
AMSA and other partnering organizations is
$800. Non-member registration is $950.

Meat Science Conference of the Summer
On 19 June 2016 meat scientists from across the country will
gather in San Angelo, TX—the "Wool and Mohair Capital of the
World"—in the virtual epicenter of Texas agriculture. They will be
hosted by Angelo State University (ASU) at AMSA's 69th Reciprocal Meat Conference (RMC): "Cultivating Knowledge and Diversity
True to the Spirit of the AMSA RMC" 19–22 June 2016. “Welcome
to a modern day cattle drive in San Angelo, TX. We are rounding
up the brightest and best meat scientists for the 2016 RMC to bring
you a great technical program with a diverse range of topics,” says
Dan Schaefer, RMC Chairman and Vice
President of By Products at Cargill.
For the first time in RMC history,
the opening keynote presentation will
feature the U.S. House Committee on
Agriculture Chairman Mike Conaway
(Texas) and Livestock and Foreign Agriculture Subcommittee Chairman David Rouzer (North Carolina). They will
give attendees an insider’s view of the
Congressman Conaway top priorities facing U.S. legislators in
the areas of sustainability, foreign trade,
research funding, and food safety as the congressmen address key
issues facing the meat industry and the scientific community.
Congressman Mike Conaway represents 29 counties in the 11th
Congressional District of Texas, including the cities of Midland,
Odessa, and San Angelo. In the House, Congressman Conaway
is the Chairman of the House Committee on Agriculture and also
serves on the House Armed Services Committee and the Permanent
Select Committee on Intelligence. He is a deputy Republican Whip,
a position he has held since the 112th Congress.
Congressman David Rouzer currently serves in the United
States Congress representing North Carolina's 7th Congressional
District and serves as Chairman of the Subcommittee on Livestock
and Foreign Agriculture. His most recent work was primarily focused on helping small businesses with marketing and sales through
his consulting firm, The Rouzer Company.
