The Ryrie’s Story...
History
Ryrie’s – a “wee” gem... not “yer” typical train station “boozer!”
Ryrie’s is a little changed Edwardian public house which occupies a very
prominent position at the junction of Dalry Road, Haymarket Terrace and
Morrison Street and makes an important contribution to the townscape. It has
good Baronial details and a Scottish Renaissance style wooden pub front. The
interior has some attractive leaded and stained glass with lettering and a finely
detailed carved gantry behind the bar.
Kirkwood’s map of 1817 shows the earlier building on this site as the Haymarket
weigh house. At some point before 1852 (possibly in 1842 at the same time as
Haymarket Station was opened) the corner building had become an inn. It is
shown on the 1st edition Ordnance Survey map as `The Railway Inn´ and occupied
the whole of the site later occupied by Ryrie’s at the East and the Haymarket
Inn at the West. The Haymarket Inn was built slightly west of the corner in 1862.
The building now occupied by Ryrie’s would appear to have been rebuilt and
baronialised in 1868 (the cast-iron hoppers bear this date) and some alterations
were made to the Haymarket Inn at this date as well. By 1906 the two parts were
linked as private and public bars of one property under the name the Haymarket
Inn and the ground floor and interior rebuilt. The client for the 1906 work was
Messrs Ryrie & Company, whisky merchants, presumably capitalising on the large
trade provided by users of the station.”
Ryrie’s has witnessed times past from trams coming and going and
coming again!
The erection of the Hearts memorial in memory of the former players of local
Edinburgh team Heart of Midlothian FC, who lost their lives serving their country
during World Wars I and II.
And many more tales from the depths of the forgotten...
Ryrie’s is a Historic Scotland listed building.

Local Ales and Craft Beers
THE CALEDONIAN BREWERY is a Scottish brewery founded in 1869 in the
Shandon area of Edinburgh (just down the road)! With awards for Champion Beer of
Scotland, Supreme Champion Beer of Britain and many more, the Caledonian ales
are commonly seen in most real ale bars in Edinburgh and throughout Scotland.
The brewery was the main sponsor for Edinburgh’s 2013 International Fringe.

ale at 4.1% Abv!
STEWART BREWING is an independent craft brewery based on the outskirts
of Edinburgh in Loanhead and was established in 2004. It produces handcrafted
premium beer in small batches, which are available in approximately 200 real ale
pubs in Edinburgh, the Lothians, Fife and the Borders.

BREWDOG is one of Scotland’s largest independently owned breweries
producing about 120,00 bottles per month for export all over the world. It was
founded in 2007.

at 5.6% ABV
INNIS & GUNN is a specialised independent brewing company based in
Edinburgh. Established in 2003, its beer has gone on to be the most popular
Scottish bottled beer sold in Canada, and second most popular in Sweden. We
love it here too!

and oak at a powerful 6.6% ABV
Bottled Lagers
PERONI (NASTRO AZZURRO) 330ML 5.1% ABV
Peroni is a premium pale lager launched in 1963 by the Peroni Brewery. The name means “Blue Ribbon” in Italian,
in honour of the Blue Riband won by Italian ocean liner SS Rex in 1933.
BUDWEISER 330ML 4.8% ABV
Budweiser, a pale lager Introduced in 1876 by Adolphus Busch has grown to become one of the highest selling
beers in the United States, and is available in over 80 markets worldwide.
HEINEKEN 330ML 5.0% ABV
Heineken pale lager is produced by Heineken International, a Dutch brewing company founded in 1864 by
Gerard Adriaan Heineken in Amsterdam. As of 2007, Heineken owns over 125 breweries in more than 70
countries and employs approximately 66,000 people.
SOL 330ML 4.5% ABV
Sol is a Mexican golden lager beer with a smooth, mellow flavour and exquisite aroma, best enjoyed with a wedge
of lime inserted in the neck.
DESPERADOS 330ML 5.9% ABV
Part of the Heineken family. A premium beer with a unique tequila flavour. A light, refreshing full strength beer.
Craft And World Beers
FLYING DOG IPA 355ML 5.5% ABV
The alpha of the pack. Grassy, citrus and slightly perfumed hop aromas combine with a subtly sweet malt body.
ANCHOR STEAM BEER 355ML 4.8% ABV
Amber in colour with a rich caramel, malt flavour rounded off with delicate citrus notes.
DUVEL 330ML 8.5% ABV
A Strong Belgian beer with a fruity dry aroma, owed to the finest hops.
BLUE MOON 355ML 5.4% ABV
An American white craft beer brewed in a Belgian style; big aroma and flavours of sweet orange marmalade and
a hint of spice.
INNIS & GUNN TOASTED OAK IPA 330ML 5.2% ABV
Its fervent hoppy character hails from the unique addition of large quantities of hops
at three separate points during brewing. The result is a beer that’s rounded yet
refreshing with delicate floral notes and zesty freshness.
LEFFE BLONDE 330ML 6.6% ABV
Hints of vanilla and clove infuse the beer with a super smooth flavour.
BREWDOG THIS IS LAGER 330ML 4.7% ABV
A bohemian Pilsner with a robust, full-bodied malt character on the front of
the tongue, spicy citrus notes as it goes throught the palate and an assertive,
bitter finish.
BREWDOG PUNK IPA 330ML 5.6% ABV
This Trans-Atlantic fusion IPA is light gold in colour with tropical fruits and
light caramel on the nose.
Wine
White
CHENIN BLANC, HUTTON RIDGE, SOUTH AFRICA
Medium-bodied, off-dry wine with soft pear and white fruit aromas and flavours, finishing
with light spice.
SAUVIGNON BLANC, LAS CONDES, CHILE
Intensely floral with elderflower notes and a grassy quality. The palate is fruity with crisp
acidity and a touch of citrus on the finish. A dry white with a medium body.
PINOT GRIGIO, LA CASADA, ITALY
A fresh and crisp Pinot Grigio with an appley melon twist on the palate.
CHARDONNAY, VALDEMORO, CHILE
Young, rounded ripe Chardonnay with tropical fruits and banana notes balanced with
toasted oak and good acidity on the finish.
Red
SHIRAZ, KATHERINE HILLS, AUSTRALIA
Aromas of dark berries such as blackberry and raspberry with a succulent, plush palate
with the added dimension of spice and chocolate.
MERLOT, VALDEMORO, CHILE
The wine displays dark violet hues and offers aromas of ripe black fruit, cherry and
mulberry. The palate is young and smooth with a medium body and a long finish.
CABERNET SAUVIGNON, SEÑORA ROSA, CHILE
A medium-bodied Cabernet Sauvignon with fresh, fruity flavours and a smooth finish.
CARMENERE, VALDEMORO, CHILE
Aromas of black berries, cherries, coffee, with delicate vanilla notes. The varietal character
is sprightly, with a medium body and a smooth finish.
Rosé
PINOTAGE ROSÉ, TALL HORSE, SOUTH AFRICA
Crushed wild strawberry and raspberry aromas and flavours. Succulent,
juicy and packed with summer berry flavours.
ZINFANDEL ROSÉ, ZINNIA, USA
An easy-drinking wine with aromas of fresh red berry fruits and
flavours of ripe watermelon and sweet red apples.
Sparkling
PROSECCO SPUMANTE, LUCA BOTTER, ITALY
Pale yellow in colour with a delicately fruity, slightly aromatic nose,
well-balanced fruit flavours and a light body.
PROSECCHINO DRY SPUMANTE, ITALY (20CL)
Classic, award-wining Prosecco. Semi-sparkling with intense aromas
of green apple and wisteria blossom and a velvety mouthfeel.

Gin
BLACKWOOD’S GIN
Made with hand-harvested Shetland botanicals. The plants are brought down to the mainland of
Scotland to be gently small-batch distilled. Blackwood’s is truly the essence of Shetland, and the

EDINBURGH GIN
Produced in small batches and made from the finest junipers, Edinburgh Gin delivers superior
distilling expertise with a refreshingly Scottish twist.
CAORUNN GIN
Scottish Gin with tones of rowan berry, heather, bog myrtle, dandelion and coul blush apple.
HENDRICK’S GIN
Produced by William Grant & Sons in Girvan and launched in 1999. In addition to the traditional
juniper infusion, Hendrick’s uses Bulgarian rose and cucumber to add flavour.
Vodka
BLACKWOOD’S VODKA
This is the first Vodka in the world to be ice filtered, as well as triple-distilled over Nordic Birch
charcoal for exceptional purity and smoothness.
PINCER VODKA
100% selected grain and the finest Scottish mountain water with the natural botanical extracts of Milk
Thistle and wild elderflower. From Glasgow, the spirit has been diluted to 38% ABV as this is deemed
the perfect strength for Vodka by Dmitri Mendeleev, the creator of the periodic table no less.
VALT VODKA
Valt is a lovely Scottish vodka, made using a quintuple micro-distillation technique, which is unique to
Valt. It is distilled from malted barley, and it is sweet and very creamy.
Whisky
PIG’S NOSE
As smooth as a pig’s nose. This exceptional, award-winning blended Scotch has been created by
Richard Paterson, Scotland’s only third generation master Blender. Produced in specially selected first
fill oak casks, the seriously satisfying smoothness is achieved through combining oak-aged Speyside,
Islay and Lowland malts with superior Invergordon gentle grain whiskies.
BLACK BOTTLE
A blended Scotch Whisky bottled by Burn Stewart Distillers. The brand was introduced in 1879 and
was first produced by Aberdeen tea blenders Charles, David and Gordon Graham. It’s mellow yet
oaky with notes of honey and nutmeg. Black Bottle was revitalised in 1990 with a new blend using Islay
Single Malt Whiskies.
JOHNNIE WALKER BLACK LABEL
Johnnie Walker has the luxury of having exclusive access to Scotland’s very best Whiskies, ranging
from the powerful West Coast malts all the way to the more subtle East Coast flavours. Black Label
draws upon all of these aromas to create a unique blend with a smooth, deep and complex character.
MONKEY SHOULDER
A mix of three different Single malts - Glenfiddich, Balvenie and Kininvie - this is great with mixers or
just on its own. Smooth, sweet and very easy to drink.

OVD

The most popular Scottish lager, brewed in Duke Street in the East End of Glasgow, founded in 1740
on the banks of the Molendinar Burn by Hugh and Robert Tennent.
THREE HOP LAGER - 4.5%
A rich, solid gold beer, with spicy herbal aromas and flavours; crisp and refreshing with a lingering

GREY GOOSE
Premium vodka distilled from French wheat and made with spring water from Gensac that is filtered
through Champagne limestone.
