the world and what this means for the future of the food and
confectionery industries and how to harness them. David will
use practical business examples from around the world to share his insights. He is highly
energetic and his presentation will be interactive, so there will be plenty of opportunity
to engage and draw from his deep industry knowledge.
David has extensive experience working around the world with global food and drink
companies, including in Australia. David is a much sought-after speaker at international
conferences and seminars on global food industry issues, particularly consumer trends,
and is a strong proponent of building vertical alliances between key chain members
from raw material producers through to retailers and food service firms. He has lived and
worked in Europe, North America, the Caribbean, Africa and South East Asia. David has
extensive experience as an international advisory board member with food companies
and organisations in three continents. He was an Advisory Board Member of Rabobank
for 15 years until 2010, a triple A accredited financial services company with a worldwide
agribusiness and food industry customer portfolio. He is Visiting Professor at the University
of Kent Business School and at the Royal Agricultural College in the United Kingdom and
he works closely with senior management of food and beverage firms on business strategy
development and with governments on food policy formulation.

Bala is a qualified food technologist with a masters degree
in management. He brings with him 14 years of experience
in the bakery and confectionery industry, including eight
years experience in providing technical support and product
development activities to some of the leading players in the
food industry. Prior to his assignment in Malaysia, Bala worked in the United Arab Emirates,
the United Kingdom and India and travelled extensively to most of the countries in the
Middle East, Asia and Europe.
In Bala’s presentation he will share his exceptional technical expertise with regard to
speciality and innovative fats for the chocolate, confectionery and bakery industries. He
will provide information on the functionality of fats and oils and their suitability in a range
of confectionery and food products. Bala will discuss trends and innovations in the market,
including fat nutrition and stability factors as well as trouble shooting issues, such as fat
migration, and the impact on appearance, bloom and resulting solutions.
