Wines By The Glass
Red
Cabernet Sauvignon, Decoy, Napa Valley 2010 16. Rich and appealing with fragrant, lifted aromas of mulberry, raspberry and currant with hints of rhubarb and mocha. The soft-toned fruit flavors
dominate the plush and inviting palate with engaging spice complexity. This supple and approachable wine has a lingering finish framed by
structured tannins.
Barolo (Nebbiolo), Parusso, Piedmont, Langhe 2008 18. Aromas of fresh flowers, Rose petal, Red berries, mint, licorice and cinnamon spice jump from the glass. Full bodied with chewy tannins and a
dried fruit character. Gracious and elegant.
Bordeaux, Clarence Dillon “Clarendelle”, Bordeaux, France 2007 16. From the makers of Bordeaux’s oldest first growth, Haut-Brion. It starts off very fresh on the palate, with delicious blackcurrant and blackberry
flavours. The taste profile is beautifully soft and subtle, with smooth tannin. The wine's fullness and balance make it very enjoyable as of now.
Pinot Noir, HandCraft, CA 2010 12. Supple and elegant, displaying vanilla, cherry and strawberry flavors. Just a touch of Sangiovese makes this Pinot unique and adds spice and
berry notes to the finish.
Syrah, Delas Frères, Crozes Hermitage “Des Grande Chemins” 2008 15. Redcurrant and cherry on the nose, with notes of black pepper and tobacco adding complexity. Spicy and a bit hard-edged, offering tangy red fruit
flavors and a touch of peppery spice.
Rioja (Tempranillo), Baron De Ley, Reserva, Rioja, Spain 2007 13. Dense from the start, with ripe berry, plum and a pinch of lemon peel on the bouquet. This is a healthy, vibrant, modern wine with lots of life and
balance; it’s drinkable now and will give toasty black fruit flavors and chocolaty warmth.
White
Chardonnay, Cuvaison, Napa Valley, Carneros 2010 15. Lime zest, nutmeg and quince on the nose give way to bright nectarine, honeysuckle and tangerine fruit on the palate of this plush and silky
chardonnay. The coolest vintage in 20 years, it captures the minerality, tang and verve of the vintage yet rounds out the fruit with spice, acacia
blossom and lush apricot tones.
Sauvignon Blanc/Assyrtiko, en oeno… , Macedonia, Greece 2011 13.
Explosive fruit and the balanced acidity of the Greek grape Assyrtiko mingle with the aromatic multifariousness of Sauvignon Blanc, revealing a
redolent wine with a clean and lasting finish, with an unprecedented intensity and complexity on the nose with tropical and citrus fruit scents, and a
defined structure and body.
Riesling, Selbach, Spätlese, Mosel, Saar, Germany 2011 13. Fresh Fruit Aromas of white-fleshed stone fruit and lemon zest with a hint of gooseberry, typical of the regions cool climate.
The palate is crisp and vibrant, with a lingering finish. Exceptional with any of Chef Oliva’s seafood. Pinot Grigio, Ca’ Donini, Delle Venezie, Italy 2011 11. Bright notes of honey, apple and wildflowers. Fresh, clean and lively with a pleasing, lingering aftertaste of ripe pears.
Bordeaux Blanc (Sémillon,SavBlanc,Muscadelle), Ch. Monestier La Tour, Bergerac, France 2011 12. Coming from old vines, this wine shows complex, floral, fruity flavours, subtly supported by a fleshy structure acquired by barrel ageing.
Stephane Derenoncourt consults here with up-and-coming winemaker Michelle D’Aprix handling the winemaking.
Sparkling
Champagne,Nicolas Feuillatte Brut Réserve Particulière, NV 14. Aromas of dried fruits, green apple, showing yeast, bread, biscuit and a hint of honey. Dry with nice acidity, and a delicate mousse.
Rosé Champagne, Nicolas Feuillatte NV 16. A distinctive rosé Champagne that smells like potpourri or Christmas punch with its cinnamon and clove accents. There's depth and intensity to the
berry and whole-grain bread notes, matched to a raw silk texture and vibrant structure. Excellent length.
Prosecco, Lamberti NV 12. Orange zest, grapefruit with a light, clean finish.

4002 Riesling, Selbach-‐Oster, Spätlese, Mosel, Germany 2010 35. 4003 Chablis, Simonnet-‐Febvre, Chablis, France 2008 38. Reds
4101 Barolo, Fratelli Revello, Peidmont Italy 2008 55. 4102 Cabernet Franc, Land & Reed, North Coast CA 2008 40. Bright, clear and brilliant deep red color with youthful violet on the edge, the aromatics of this wine are a little darker than previous vintages with
black cherry, plum, sage and herbs de Provence overlaid with a touch of cedar and tobacco scents. The richness of this wine is very evident upon
washing over the pallet exposing deep black cherry, ripe plum and a slight grip of balancing tannins, Witb plenty of structure.
4103 Cabernet Sauvignon, Hestan Vineyards, Napa CA 2005 135. 4104 Cabernet Sauvignon, Faust, Napa Valley CA 2009 48. Initially grippy, the wine softens after a little bit of swirling, taking on a more plush and supple feel. Medium firm tannins give the wine great
structure, without being overpowering. At the back palate, a hint of black pepper gives the wine a bit of liveliness. Dark black fruit of blackberry,
black cherry and baked, yeasty pie crust. Brown spice, dark chocolate, cigar box and a hint of dusty earth. Long and lush with lingering black fruit,
spice and earthy notes. At the tail end, a lovely hit of freshly cracked pepper adds an exotic zing.

White Bordeaux
6101 Clos Floridene, Graves 2009 70.
6102 Blanc de Lynch Bages 2008 150.
Born in 1990, "Blanc de Lynch-Bages" is the fruit of joining the three white varietals of the Bordeaux appellation, planted on some eight parcels of
the historical Lynch-Bages terroir. A rounded, yet refreshing complexity. The nose is dominated by very enticing floral notes with a touch of citrus,
and on the palate grapefruit and white peach shine through. Under the expert eyes of Daniel Llose and Nicolas Labenne, the quality has reached an
impressive level.

gneiss in places. A full bodied Gruener Veltliner with great depth and natural acidity. It does provide this spicy element that is beautifully encrusted
by wild flower flavours. All these Gruener Veltliner have a natural affinity to seafood and shellfish but also to pork, veal, domestic and game birds.

1012 Far Niente “Estate”, Oakville 2009 275. 1013 Fisticuffs, Napa Valley 2010 65. This is a knockout Cab! Fisticuffs’ vision is to produce the highest quality wine while keeping its pricing well managed - in essence, to over deliver.
To fulfill this objective, winemaker Jeff Smith (of Hourglass) Rob Lawson crafted Fisticuffs using his years of experience making many of Napa
Valley’s “cult” Cabernets at Napa Wine Company such as Ghostblock, Mirror, Pahlmeyer and Kapcsandy. In the creation of this blend, Rob has
applied the rigorous standards associated with the best Cabernets of Napa Valley, while sourcing fruit and blending components from some of Napa
Valley’s top vineyards.

1038 Turnbull, Napa Valley 2009 95. Moraga Estate Vineyards: A winery in Bel Air, Los Angeles?! This small estate on some of California’s most expensive real estate is a relatively unknown but critically
lauded gem. These Bordeaux styled wines are handcrafted and small production, a labor of love. A must try for any wine lover with a desire to discover something new. “Moraga Vineyards is a wine growing estate in the Santa Monica Mountains at an elevation of 600 to 900 feet, five miles from the Pacific
Ocean in the Los Angeles community of Bel Air. Owners and native Californians, Tom and Ruth Jones have lived on the 16-acre Moraga
Canyon property since 1959, purchasing a small horse ranch originally built by Victor Fleming, director of Gone with the Wind and The
Wizard of Oz.”
“The Moraga Canyon site has a microclimate that is distinct from the surrounding area. Records from the last 45 years indicate the annual
rainfall in the canyon averages 24 inches, compared to 15 inches in downtown Los Angeles. The soil also differentiates Moraga from other
California appellations. Submerged under the Pacific Ocean for millions of years, the Los Angeles Basin was thrust upwards to create the
current topography. As a result, Moraga has deep gravel beds in the canyon bottom and hillsides composed of ancient calcareous sandstone
seabed in which many marine fossils and shells are found.”

Flavors and aromas of lavender and notes of kirsh liquor, garrigue and pepper spice. Nothing flashy or opulent, just purity and finesse. 16 hectares of
vines divided into 27 plots. Vines vary in age from 40-100 years old. Deep red. Red fruits and flowers on the intensely perfumed nose. Fresh and
lively on the palate, offering sweet raspberry and cherry flavors and a musky herbal quality that builds with air. Finishes sappy and long, with
persistent red fruit and floral notes.

Bodegas Mauro Cosecha (Tempranillo, Syrah, Grenache) 2009 90. Mariano Garcia is one of the required references in the world of wine in Spain. Technical Manager of Bodegas Vega Sicilia for 30 years,
decided to become independent in 1998 to devote himself fully to his personal projects. The first, Bodegas Mauro, has long been established
as one of the great wineries in Castilla - Leon, investing in production contained" high quality.Mauro perfectly represents the strength and the
red race of Castilians. His good behavior as wine for aging, coupled with its strength and elegance. On the nose of fresh red fruit notes
of ripe black fruit and floral notes and some spicessuch as nutmeg. Dairy and toffee to finish rounding the nose intense, well structured
and balanced. On the palate good acidity, long, full-bodied but friendly, integrated tannins.

Large Format
When Size Matters… Wines come in a myriad of styles from big, full bodied and fortified, to light and petit. Bordeaux wine and bottles for
other wines are produced in a wide array of wine bottle sizes and shapes too. Larger bottle sizes are well suited to longer aging of Bordeaux
wine or other wines. It is a known fact that wine from larger formats age more slowly and possibly even develop more complexity and
nuances than wines from smaller bottles. This is due to the smaller amount of air that resides between the cork and the wine. Interestingly, you
will note that many of the unique names for wine bottle sizes were named after Biblical characters which the exact reason is unknown. For
example:
-Jeroboam: “First King of The Kingdom”
-Methuselah: “Oldest Man”
-Salmanzar: “Assyrian King”
-Balthazar: “One of The Wise Men”
-Nebuchadnezzar: “King of Babylon”
-Solomon: “King Solomon, the wisest of all men, built the Temple in Jerusalem”
-Melchizede: “Name of several priesthoods in different religions including the Church of Jesus Christ of Latter-day Saints”
This is a list of the most frequently used wine bottle sizes. Other sizes like 1000 ml 500 ml and 250 ml are some of the unique sizes available.
It is important to know, some wine bottle sizes, usually larger formats are only used for Champagne.
-Split: 187ml (1/4 bottle)
-Half Bottle: 375ml
-Standard: 750ml
-Magnum: 1.5L (2 bottles)
-Jeroboam or Double Magnum: 3L (4 bottles)
-Rehoboam: 4.5L (6 bottles)
-Methuselah or Imperial: 6L (8 bottles)
-Salmanzar: 9L (12 bottles)
-Balthazar: 12L (16 bottles)
-Nebuchanezzar: 15L (20 bottles)
-Melchoir: 18L (24 bottles)
-Solomon: 20L (26 bottles)
-Sovereign 25L (33 bottles)
-Primat or Goliath 27L (36 bottles)
-Melchizedek 30L (40 bottles)

The Current World Record for the Largest is held by Wang Chen Wines in Liaoning, Northern China is 1850 Liters and is 15 feet high, four
times the previous record of 490 liters.
The World’s smallest bottle of wine was made by Steve Klein of Klein’s Design, Encino, California, USA. He produced a hand-blown
miniature wine bottles standing 3.2 cm (1.2 in) tall and with a volume of 0.75ml (0.026 fl oz).
