Quesadillas
You can put anything in quesadillas! You can have them for breakfast with turkey bacon and eggs and cheese, you can have
them for lunch, dinner or a snack with bananas, honey and Nutella.
*Take a flour tortilla and put desired topping on half, we used black beans, onions. Top with Monterrey jack
cheeses or your favorite or a combination.
*Peanut butter and jelly- spread half tortilla with peanut butter and jelly. Fold in half; spread both sides with
butter and heat till crispy and golden.
*Sliced apples and brown sugar…
Fold in half. Spread outer sides with butter and place in medium hot pan. After 2-3 minutes flip and cook other side 3
minutes.
Slice and serve with guacamole or
Salsa or even ketchup! Salsa means sauce in Spanish!

Diced tomatoes
Diced onions
Finely chopped garlic
Finely chopped coriander
Finely chopped chilies

Mix with mayo or ketchup; use as a dip for French fries.
Combine with softened butter and refrigerate; add thin slices to a grilled steak.
Stir into scrambled eggs or add to omelets and frittatas.
Add to burger meat mixtures or slather on top of burgers (or both!).
Add lime juice and canola oil and marinate meat.
Replace tomato sauce on a homemade pizza.
Make a béchamel sauce, add salsa and toss with pasta.

Add cucumbers, jalapeños, tomatoes and vegetable stock to salsa. Purée into gazpacho.
Mix equal parts with yogurt or sour cream; slather on a baked potato or combine with mashed potatoes.
Add to meatloaf to give it a Mexican flair.
Stir into chicken salad, tuna salad or potato salad.
Use as a base for salad dressing.
Add to mac and cheese.
Make a salad with rice, beans, avocado and cheese.
