How did you
spend the week
of July 4? The CO
Engineering, GE Maintenance Department and some
key contractors spent that week
working around the clock on the
upgrade of Geneva’s salsa and
pasta sauce bottling line! They relocated existing equipment, poured
concrete, installed new conveyors,
upgraded the controls system and
prepared for the second phase. Our
current line has served us well, but it
is time for faster speeds and a more
versatile line, so a new filler, capper,
cooler and process system are on
order.
After an early and nearly perfect
planting season through May and
early June, we began experiencing
temperatures in the high ‘90’s and
often over 100 degrees! But, our
biggest problem has been the lack
of rain. A record-breaking drought
throughout the Midwest will present
quite a few challenges for this Pack,
including smaller size fruit, split sets
and lower yields. The RG Agriculture Department is still projecting a
decent crop with quality fruit, high
brix and good color. Gone are the
mid-June bumper crop projections.
Our crop is spread out over ten
growing areas in Indiana, Ohio and
Michigan, but the drought has had
an effect on all areas, even those
under irrigation.
We had soooooo much fun welcoming our customers,
vendors and friends to our 70th Anniversary Open House
on June 27. Forty Red Gold Ambassadors, along with the
Reichart family, hosted 200 guests for an evening of hors
d’oeuvres, beverages, home-made cupcakes, games, films,
tours and nostalgia!
As guests arrived, they received their name tags and a Red
Gold shopping bag to store all the goodies they would receive
during the tour. Ambassadors led them to our reception area
where they received a beverage and a tour of our five new
conference rooms. As they walked back into the lobby, they
stopped to spin our ‘Wheel of Fortune’ wheel for a chance
to win die-cast vehicles, ties, scarves, pitcher sets, Red
Gold apparel and license plates. If the clicker on the wheel
didn’t land on one of these great prizes, guests were given a
coupon…just like the Duck Pond at the County Fair, everyone
walked away with a prize. At least the low-end prize was a
coupon, instead of a plastic Hawaiian lei!
Ambassadors took the guests to our entertainment room,
through typical office spaces, to the RG University Center,
our Café, the Human Resources department and finally
to the gym, affectionately called the multi-purpose room.
At each area, a ‘little bite to eat’ was served, along with a
recipe card for the appetizer. Of course, we over-tomatoed
every bite…after all, we have to make sure all visitors to our
facilities leave with enough lycopene! Everyone seemed to
enjoy Bruschetta in No Time, Lady Bugs on a Log, Cowboy
Caviar, Shrimp with Red Gold Cocktail Sauce, and Yes, I’m
a Fruit Salad! If you would like to try these recipes, they can
be found in the recipe section at www.redgold.com, and a
couple of them are very ‘kid-friendly’. Your kids may want to
make hors d’oeuvres this weekend!
When all 200 people had taken their tours, they gathered in the dimly-lit,
dressed for the evening gymnasium and enjoyed yummy mini-cupcakes,
baked by one of our Red Gold Ambassadors. This was also an opportunity to watch the recent “How It’s Made” episode about canned tomatoes;
filmed entirely at our Orestes facility. Many other Red Gold media films
were shown as well.

the evening, a vintage
montage, created by
Colt Reichart, New
Media Manager, was
shown. For many
present, seeing 70
years in pictures and
knowing they had
been a part of our
success, was a sentimental and proud moment. Brian Reichart, our CEO, introduced both
internal employees and external contractors who were instrumental in
the remodel of our new Corporate Headquarters and talked a bit about
his vision for the facility and how the fruition of the project always took a
back-seat to new lines and new equipment at the processing plants. The
evening was concluded as he spoke about what has made our company
successful and able to
enjoy a 70th birthday;
the three pillars of
success which have
been in place since
our founding, along
with great people...
our employees, growers, customers and
vendors!

Canned tomatoes are big business for Red Gold. Peeling is an important process that helps us produce the freshest, best tasting,
quality canned tomato products. This process, although complex and requiring a number of pieces of equipment, consists of these
basic steps:
Step 1 – “Blanch” the tomatoes to remove the peel. We do this mechanically at temperatures over 200o F.
Step 2 – Spray tomatoes with cold water while rolling them over disc beds. Disc beds have an abrasive surface that pulls at the peel.
Step 3 – Roll tomatoes over a “tag remover” to catch the loose pieces of peel and pull it away from the tomato.
Quarterly Definitions
Tomato Cuticular Tissue (Cuticle) – the waxy layer on the outer surface of the tomato responsible for retaining the
moisture content of the tomato and protecting the outer layer from stress.
Blossom End – the “bottom” of the tomato, opposite to the stem of the tomato, where the blossom used to be.

187 employees received perfect attendance in the 2012 fiscal year. 20%
of these employees received one year of perfect attendance and 4% of
them had perfect attendance for 15-18 years! The Distribution Center
continues to have the most employees with perfect attendance. 24% of
DC employees earned this distinction in 2012!

Covering OSHA recordables, lost time incidents, first aid, near misses
and property damage, the “traveling safety award” goes to the safest
DEPARTMENT in the entire company. This year, the award went to the
Elwood Sanitation Department. This is the fourth time that a group from
Elwood has won this award since its inception in 2003.

Red Gold was a big contributor to
Elwood’s latest project, “Dive into Elwood”!
We donated 100% of the funds to create the Red Gold Patio section of the newly
restored Elwood city pool, renamed as The Mary Beth Dunnichay Aquatic Center.
The Red Gold Patio is fully equipped with tables, umbrellas and a grill. The section
is located on the north end of the pool (behind the Elwood Senior Center) and is
available to rent for parties and gatherings (rental information is available at the
Aquatic Center). Drive by and check it out when you get a chance. Jessica Kerkhoff
and Colt Reichart, Red Gold Corporate - Marketing/New Media, did an amazing job
creating the mural painted on the walls.

Pedestrian Forklift Safety
• When in the plant, always be aware of your surroundings
• When available, use the designated walking path so that forklift
drivers will know where to expect you
• When crossing a path or a blind intersection, always look both ways
and use the intersection mirror when available
• Never assume that the driver can see you; if you haven’t made eye
contact with the driver (and had the driver acknowledge you) you are
at risk
• Forklifts have blind spots, so when walking near a forklift give it plenty
of room to maneuver
• Never step up beside a forklift to talk to the driver. Forklifts do not
operate like a car. When they turn, the rear-end swings in a different
path than the front, and may run over you as the forklift pulls away
• Never step or stand between a moving forklift and a fixed object
• Never stand or walk under elevated forks whether loaded or empty
Things finally started getting weird

Jam Packed Saturday
This year’s 27th Annual Red Gold Chili Cook-Off is going to be fun-filled, with
new activities and attractions! But before you head to the actual Cook-Off on
Saturday, October 13, there are other exciting events happening that same
day; the 5k run/walk and a 1-mile family walk to crush hunger, as well as the
Indianapolis Colt’s Blue Saturday! Bring your family and friends and sign up
to run or walk to help benefit the Second Harvest Food Bank and the Morrisett
Center Food Pantry…plus it’s a healthy way to exercise before tasting all the
chili.
The run/walk course will start at Callaway Park in Elwood (located at North J
and 19th Street) and go through the downtown area next to the Chili Cook-Off,
and return back to the park. The check-in time is from 7:30am to 8:45am.
There will be a water station mid-way for participants to rehydrate on their
journey. The expected finish time is between 9:45am and 10:15am, with
awards being presented at 10:30am. The registration fees range from $15.00
to $22.00 (discounts offered for groups of 5 or more signing up together), and
children 8 and under are free. All participants in the run/walk will receive a long
sleeve dri-fit tee shirt, chili cook-off coupon, goodie bag and post-race refreshments. For more information and to register for the 5K Run enter this URL into

After the race, head over to the Elwood Municipal Building fountain area to
enjoy the 27th Annual Red Gold Chili Cook-Off. The event starts at 9:30am
and will end at 2:30pm. There will be a variety of chili samples available to
test your taste buds, along with a way to win prizes by visiting each booth. Be
sure to shop the craft booths, visit the vintage car show and enjoy the music,
featuring a live DJ.
The Cook-Off contest is also going to be a little different this year. Each team
will be presented with a Marsh shopping cart and allowed to fill it with up to 50
Red Gold items to use in their chili recipes, donated by our company. The
teams with the top three chili recipes will be awarded cash prizes, and best of
all, the bragging rights for being the Red Gold Chili Cook-Off winners!
A brand new event this year is a Chili Cook-Off eating contest. Participants will
be racing to eat a full bowl of chili, 5 saltine crackers and drink a can of Sacramento tomato juice, all within a 2 minute time period. The winner will receive
a $50 cash prize.
Todd Hollowell, FLW Pro, will be in attendance with the Red Gold Bass Boat.
Todd will be signing autographs and talking about his experiences as a pro
fisherman.
Indianapolis Colts Blue Saturday will be also be a part of the Chili Cook-Off;
with free giveaways, Colts in Motion traveling museum, Colts cheerleaders
and a chance to win Colts Autograph memorabilia. Make sure to wear your
blue and show your spirit at this event!

I’ve done a lot of experimenting lately, trying out different brands
of pasta sauce. Here with one man’s opinion: You have, hands
down, the best commercially prepared pasta sauce I’ve ever
eaten. Whoever came up with the recipe had their thinking cap
on, and their taste buds tuned up.

What is Gluten?
Over the past decade, going gluten-free has been touted as a way to boost health
and energy, and lose weight, but is it a healthy way to eat, and who really needs
this diet?
A gluten-free diet may cause deficiencies in iron, vitamin B12, vitamin D, magnesium, fiber, and other nutrients because people are avoiding breads, cereals, and
grains that are fortified. Many gluten-free products are not fortified.
Only people who have celiac disease or gluten sensitivity actually need a glutenfree diet. Celiac disease is an auto-immune disease in which a person can’t tolerate
gluten, a protein in wheat, oats, rye and barley. If a person with celiac disease eats
gluten, the lining of their small intestine becomes inflamed and damaged, which
hampers the absorption of nutrients and can lead to malnutrition and weight loss.
Here are some tips
on eating gluten free;
Carefully read food labels. Gluten shows up in bread and pasta, but may also be
present in unexpected foods, such as cold cuts, salad dressings, beer, and even
licorice. Be careful when choosing from the growing number of gluten-free products.
They’re typically higher in carbohydrates, fat, sodium and lower in fiber. Some foods
are labeled wheat-free, but this does not mean that they are gluten-free.

• Preheat oven to 400o F. On a lightly floured
surface, roll each sheet of pastry to 11 x 11 inches.
Transfer each to a parchment-lined baking sheet.
Cut a ¾ inch wide strip from each side.
• In a small bowl, whisk egg with 1 tablespoon of
water and brush on edges of pastry sheets. Line
edges with strips forming a border, trimming any
overlapping pieces on the corners. Place baking
sheets in refrigerator for about 15 minutes
• Brush border with egg mixture. Use a fork to prick
pastry within the border, about every ½ inch. Bake
until golden brown, 12 to 15 minutes.
• Sprinkle center of each tart with half of the cheese
and arrange half of the RED GOLD® PETITE
DICED TOMATOES on top. Season with salt and
pepper then sprinkle with thyme. Return to oven
and cook until the cheese is melted and pastry is
cooked through, about 8 minutes. Serve warm or
at room temperature.
