ABSTRACT A solar tracking device was applied to dry various agricultural products through a flat plate solar collector. The drying process was concurrently carried out through a fixed flat plate solar collector and open air drying respectively. The products were dried from 10.00am to 6.00pm daily and the results of the drying test carried out are presented: Results shows that 56.50g of beef lost 53.98% moisture within 11 hours of exposure to sunlight in the tracking assisted flat plat solar collector while 50% and 49.54% moisture was lost in the fixed flat plate solar collector and open air drying respectively. Also, 57.62%, 49.78% and 56.04% of moistures were lost in drying peeled cassava chips in the tracking assisted and fixed flat plate solar collectors, and open air drying respectively. The study had shown that drying of perishable and agricultural products could be enhanced by the use of a solar tracking device.
