Chicken Fried rice
2 cups cooked white rice
2 egg
¼ onion diced
¼ cup mixed veggies
½ cup diced chicken
2 tablespoons oil
¼ cup soy sauce
_____________Dice chicken. Cook chicken in frying pan with seasoning until
thoroughly cooked.
_____________Place eggs in a small bowl and beat thoroughly with a fork.
_______________clean and chop the onion.
_________________Place 2 tablespoon of the oil in a frying pan over high heat. Pour
the eggs into the hot oil and let cook for 2 minutes, or until egg pancake is almost cooked.
Add the carrots, onions, and chicken, stirring to break up the egg mixture into small
pieces. Cook for 2 minutes. Add the rice and cook, stirring frequently, for 3 minutes.
Pour soy sauce and over the rice. Cook, stirring constantly, for 3 minutes, or until rice is
hot.
