The purpose of the role:
The purpose of the role is to manage the day-to-day activity and associated areas of a unit
kitchen, responsible for ensuring a consistent, high quality service delivery within a devolved
budget
Main responsibilities:

To manage and organise the operations of a unit, providing comprehensive
food production service. Continually reviewing procedures to identify
opportunities for product and service improvements in areas of
responsibility.

All aspects of staff management, identification of resources required to
ensure high quality and consistent service provision.

3.
Responsible for all food production and menu planning and associated
functions including, stock management, monthly budget figures, wage
costs and wastage, to enable the area of responsibility to meet its targets.

To be fully conversant with and competent to use all systems and
equipment relevant to area of work.

To manage adherence to health and safety and food safety regulations,
University, hospitality and relevant external, policies, procedures,
standards and codes of practice.

Scope of the role:
Reporting to the Executive Chef, this role takes responsibility for all food production
within a unit ensuring all food safety, and health and safety regulations are adhered to
Additional information:
Substantial percent of duties require physical effort, lifting heavy pans and equipment,
cleaning of heavy kitchen equipment, spending most of time on feet, exposure to high
heat temperatures and hazardous substances. Maintaining quality and service levels
whilst working to tight deadlines; anticipating and exceeding customer expectations;
motivating staff; heavy lifting, working weekends and early and late shifts
