7 RESEARCH MASTERS STUDENTSHIPS AVAILABLE
IN FOOD AND HEALTH
UCD Institute of Food and Health, University College Dublin
The UCD Institute of Food and Health brings together UCD staff with active research programmes
in the area of Food and Health into one centre of excellence. The Institute has firmly established
itself as a leading player on the national and international food and health research landscape and
ranks 1st globally in terms of citations per paper and 5th on impact in the subject of Food Science
and Technology. There are a number of exciting research opportunities now available, with a brief
outline of the projects below.
Research Project Summary
1. Food for Health Ireland (FHI; www.fhi.ie) is a centre for functional food development
funded by Enterprise Ireland (in conjunction with members of the Irish Food Industry).
Research on the isolation, identification, characterization, formulation and validation of
milk bioactives will form the basis of the Centre's multi-disciplinary research. (4 positions
available)
2. Dairy Processing Technology Centre (DPTC) is an industry–academic collaborative research
centre that will perform research focused on cost-efficient processing and creating,
validating and commercialising a pipeline of science and technology-based manufacturing
platforms for dairy ingredients. (2 positions available)
3. The project entitled ReValue protein which is a collaborative effort between UCD, Teagasc,
UCC and IT Tralee; in this case the student will be located in UCD. This research is part of a
national effort to explore Irish meat processing streams with the aim of recovering high
value, protein based ingredients for food and non-food uses. The principal aim of the UCD
element of the research is to evaluate the effect of novel processing technologies,
technologies such as Ultrasound and Pulsed Electric fields, on the microbial quality and
efficiency of extraction of active enzyme preparations from porcine pancreas. (1 position
available)
Profile
Candidates should be enthusiastic, self-motivated individuals, who will interact well within a larger
research team. The successful candidate will be paid a stipend (approx. Euro 22,000 p.a., of which
fees of approx. 6,550 p.a. (EU citizen) and 13,100 p.a. (non-EU citizen) need to be paid).
The post-holder will have responsibility for a number of specific areas, including those outlined
below:
1. Complete a focused Masters Programme within research activities of the Food Science and
Nutrition department based at UCD.
2. Have an appreciation of good laboratory practice to protect intellectual property.
3. Prepare and present data for discussion within the team on a regular basis.
4. Assist in the preparation of scientific reports and peer review scientific publications.
Requirements
 A minimum of a 2.1 honours degree in Food Science, Food Technology, Human Nutrition,
Microbiology or other appropriate disciplines.
 Experience and/or keen interest in food and nutrition research.
