People credited with this unit standard are able to: describe the effects of the operation of an impregnation machine on seafood product; demonstrate knowledge of the preparation process for impregnating seafood product; demonstrate knowledge of setting up an impregnating machine; demonstrate knowledge of shutting down and cleaning an impregnating machine; and maintain an impregnating machine. These requirements include but are not limited to – company specifications and procedures, manufacturer’s specifications, product quality specifications, and legislative requirements; Impregnating machine refers to any mechanical device used to inject additives into fish flesh. Machines may include but are not limited to Fomaco machines and Hermes machines. Elements and performance criteria Element 1 Describe the effects of the operation of an impregnating machine on a seafood product. Performance criteria 1.1 The impact of operating an impregnating machine on seafood product is described in terms of product quality, yield and product flow, and in accordance with company requirements. 1.2 The monitoring of product quality, yield and product flow during operation of an impregnating machine is described in accordance with company requirements. Element 2 Demonstrate knowledge of the preparation process for impregnating seafood product. Performance criteria 2.1 The preparation of the solution for impregnating fish is described in accordance with company requirements. 2.2 The solutions for impregnating fish are prepared and tested in accordance with company requirements. Range includes but is not limited to – ingredients, concentration monitoring, and records. 2.3 The filtration process for impregnating fish is described in accordance with company requirements. 2.4 The consequences of inadequate filtration are described in terms of equipment function and product quality. Performance criteria 3.1 The procedures for setting up the impregnating machine are described in accordance with company requirements. 3.2 The impregnating machine settings that allow product and process specifications, product flow, and target yield to be met are described in accordance with company requirements. 3.3 The impregnating machine is set up in accordance with company requirements. 3.4 Safe work practices are used in accordance with company requirements. 3.5 The impregnating machine is checked to ensure it is clean prior to use in accordance with company requirements. Element 4 Demonstrate knowledge of shutting down and cleaning an impregnating machine. Performance criteria 4.1 The procedures for shutting down and cleaning the impregnating machine are described in accordance with company requirements. 4.2 The safety features of an impregnating machine are described and safe work practices are used during operation in accordance with company requirements. 4.3 The impregnating machine is cleaned during and post production in accordance with company requirements, and the importance of cleaning during production is described. 4.4 The impregnating machine is reassembled after cleaning in accordance with company requirements. Element 5 Maintain an impregnating machine. Performance criteria 5.1 Maintenance of impregnating machine is carried out during operation in accordance with company requirements. 5.2 Maintenance of impregnating machine is carried out at the end of operation in accordance with company requirements. Please note Providers must be accredited by NZQA, or an inter-institutional body with delegated authority for quality assurance, before they can report credits from assessment against unit standards or deliver courses of study leading to that assessment. Industry Training Organisations must be accredited by NZQA before they can register credits from assessment against unit standards. Accredited providers and Industry Training Organisations assessing against unit standards must engage with the moderation system that applies to those standards.
