Purpose
People credited with this unit standard are able to inspect poultry carcasses
coming into a poultry evisceration room, and eviscerate poultry carcasses
and harvest offal.

Definitions
Carcass refers to whole-bird, torso, half frame without drum and wings, skeleton
without meat/skin/feather.
Offal is harvested refers to liver, heart, and gizzards separated from eviscerate.

Competence is to be demonstrated on at least three occasions of inspecting and
eviscerating poultry carcasses.

Element 1
Inspect poultry carcasses coming into a poultry evisceration room.
Performance criteria
1.1
Inspection is carried out in accordance with the company safety policies and
procedures.
1.2
Inspection is carried out in accordance with the company quality assurance
policies and procedures.
1.3
Below quality poultry are handled in accordance with the company operating
procedures.

incompletely processed, damaged, diseased.
Inspection is carried out in accordance with the company production throughput
requirements.
Element 2
Eviscerate poultry carcasses and harvest offal.
Performance criteria
2.1
Poultry carcasses are eviscerated in accordance with the company safety
policies and procedures.
2.2
Poultry carcasses are eviscerated in accordance with the company operating
procedures.
2.3
Poultry carcasses are eviscerated in accordance with the company quality
assurance policies and procedures.
2.4
Offal is harvested in accordance with the product specifications and the
company quality assurance policies and procedures.
2.5
Poultry carcasses are eviscerated and offal harvested in accordance with
company production throughput requirements.

Please note
Providers must be accredited by the Qualifications Authority, or an inter-institutional body
with delegated authority for quality assurance, before they can report credits from
assessment against unit standards or deliver courses of study leading to that assessment.
Industry Training Organisations must be accredited by the Qualifications Authority before
they can register credits from assessment against unit standards.
Accredited providers and Industry Training Organisations assessing against unit standards
must engage with the moderation system that applies to those standards.
